Last Thursday I professed my love for all things CARROTS! I think you know my reason why, yes? Healing powers for the ‘ol Stomach.
This week I’d like to profess my other love… GINGER!
Ginger is definitely a superfood in my book. We often think of ginger in correlation to easing nausea, but it has so many more wonderful powers.
Let’s take a look:

- Ginger contains special enzymes responsible for catalyzing the proteins in your food, thus aiding in digestion and the prevention of cramps. The ancient Greeks used to eat ginger after a large meal in order to ease the digestion process.
- Due to its promotion of mucus secretion, ginger protects against the development of ulcers, unwanted holes in the lining of your stomach.
- Ginger is often used to settle an upset stomach or treat severe stomach ailments such as dyspepsia or colic.
So now you might know why I love my ginger. Heal that stomach lining, yes! But this powerful food is also quite refreshing. I’ve been using it in my juices, my stir fry’s, and much much more. Heck, I’ve even combined it with some honey and swirled it it my coconut yogurt/kefir.
The ultimate healer… Carrot, Beet, Apple, Ginger juice. I call this the nectar of the Gods.

My hubby fell in love with ginger water after a major stomach illness. I just grate it and throw it in there and he’s set to go!

If you love ginger you would LOVE these ginger garlic carrots I make! They’re super easy:
4 carrots sliced
3 Tbsp. coconut oil or grass fed butter
1/2 tsp. fresh ginger grated
1 tsp. garlic crushed
1 Tbsp. fresh lemon juice
Saute the carrots in 2 tablespoons of the butter or coconut oil over medium-high heat for 5-7 minutes or until the carrots start to brown.
Add the lemon juice, ginger, and garlic to the pan and sauté just until the carrots are coated with the ginger and garlic. Sprinkle with a little sea salt, stir again, remove the carrots from the pan and enjoy!!

Ginger is love 🙂 My favorite way to eat it is in crystallized form, but it’s like a drug that way – really hard to stop eating them and the sugar is such a buzz! Not safe! xo Erin

I love carrot ginger apple beet juice!! My neighbor got a fancy new masticating juicer that is way better than my old Breville and I’ve been walking down the street every few days to use it – my concoctions always have ginger, apple and lemon.
I also use ginger to flavor my kombucha. So, yeah, I’m a ginger fan too. 🙂
i luv nutmeg and ginger in my carrot juice…i cheat at home and just grate my own to taste but when i go to the juice bar…no matter what i say, it’s too much. one of these days they’ll get it right.

I love ginger!! but I always forget about it when I’m cooking (which is rare…). If there was a ginger flavoured cereal I’d be eating ginger everyday! 😉 hehe

I almost bought a jar of lacto-fermented ginger carrots today. This combo is one of my favorites – the ginger kick with the slightly sweet carrots is just perfect. Soup, salad dressing, smoothies. OH! How awesome would Ginger Carrot Ice Cream be?!?! Next project….

heck yes, i use ginger! love that stuff! i like to mix it with soy sauce, garlic, and a little stevia to top my tofu. so good! spicy, salty, and sweet! Just like us! 🙂

I love ginger! One of our regular meals I make are turkey burgers with fresh ginger and spinach. My 4 year old asked me, “Is there ginger in here? Because I’m only going to eat it if there is.” A variation is also using salmon…so delicious!

Ginger is SOO good for you! I love it, too. However, there’s a fine line between the perfect amount and omg! way too much! if you ask me. It’s easy to over do it 🙂

i LOVE LOVE LOVE ginger. so i have bought it to use in my juicer, but i feel like it doesnt juice well! any tips – i mean i just cut off a small piece and put it in my juicer, but i think it just spits it out into the garbage end. my favorite juice is beet (YUM!), apple, carrot, celery, and ginger (although the ginger doesnt come through). any advice?
i think the best way is to juice the root first.

I’ve always been so crazy about ginger. I use the powdered stuff and have developed a pretty high spice tolerance so I can put it in almost anything and everything. I’ve never had much of a sweet tooth so usually everything I make is bitter or spicy and other people think it’s disgusting 🙂

i wish i liked ginger…i try so hard!! im just not a huge fan….i will say though juicing with it helps…you get a little flavor but its not too much. ill eat it (or drink it) that way. i try with sushi but i cant get on board!
have you tried it with cinnamon and honey blended in vanilla yogurt? you might like that!
i am never without ginger in the house – never!!! and every juice i make has it in there, and always on stir fry with sesame oil, lime and tamari. But lets talk about this cocunut kefir – i didn’t know this flavor existed and now must buy it – my mom is hooked on kefir now, i’ve created a monster

I love ginger too! It’s quite comforting to me. My mom makes me ginger tea when I’m sick – hot water, ginger and honey.

I love ginger, and use it a lot, in various dishes. The smell and flavor are at the top of my list of favorites, all that in addition to it’s amazing health benefits!

since getting a vita-mix, i love making soup..so quick and easy. my fav. new soup is carrot-ginger-coconut.( 4carrots, a chunk of ginger, 1/2 cup skim milk, 1/2c water and 2 and abit tbsp coconut milk powder)(yields 2 large portions) but after having it four days in a row for lunch my hubs (who is not a fussy eater!) asked for something different.
sometimes i throw in a cooked chicken breast for a few nanoseconds to add some protein. yummy!

I do use ginger, but not consistently. I typically end up using it in stir-fry dishes. But you did remind me I need to buy some more. Used up the last bit of the tiny nub I’ve been keeping in the freezer.
