I’m “KISS-ING” it today. Meaning Keep It Simple Stupid Silly.

Why? Because I can. LOL. No really. I can. Blogging doesn’t have to be a chore. It can be a way to share by doing just this. Keeping it simple SILLY. I constantly have to remind myself of this too!

Write for YOU and a little for others

Write a LITTLE and don’t worry a LOT

Write what’s REAL, not what’s…. NOT? Winking smile

Here goes.

God’s word this morning. Kinda blew my mind. This quote.

“When you begin to understand and live out the eternal truth that you are loved, planned, wanted and chosen by God, His perfect plan and highest purpose will naturally unfold before you each day. Remember, in His eyes, you are special and His plan for your life is simply for you to get good at being you.”

Thanks to great companies for making quality gluten free food! Love Grown Granola, Udi’s Bakery, Erewhone (attune foods) cereal, and uh… HEALTHY BITES. Tee hee. Lots of other great companies out there, but these are just a few of my favorites.

And last, a recipe. A grain free recipe in honor of Celiac Awareness Day! Yes, it’s the fig coconut muffins. I finally got around to posting it. Sheeesh!

Description

Fig and Coconut Muffins (Grain Free)


Ingredients

Units Scale
  • 1/2 cup almond meal
  • 1/4 cup coconut flour
  • 1/4 cup protein powder
  • 2 extra ripe fresh figs (i used frozen ones and thawed them out)
  • 1/2 cup almond milk (or other milk)
  • 1 egg
  • 2 egg whites
  • coconut extract (optional)
  • 1/4 cup unsweetened shredded coconut
  • 2 tbsp greek yogurt or applesauce (optional if you want them extra moist)
  • cinnamon
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • vanilla extra or vanilla stevia (1/2 tsp or so)

Instructions

  1. Smash your figs up or blend them up then place in a small bowl. Set aside. In another bowl, combine your dry ingredients, then slowly mix in your egg, milk, and optional yogurt.
  2. Beat or mix well. Finally add in your mashed fig and coconut shreds. Mix again thorough. Batter will be a little lumpy but thats okay. It’s mostly the coconut shreds and fig pieces.
  3. Spoon into oiled muffin pan
  4. Bake at 350F for 15-17 minutes, depending on your oven.
  5. Let cool then enjoy!

    This recipe looks bomb! thanks so much for sharing. and it looks easy enough for my cooking skillz.. ha. I often get intimidated by recipe’s, lol. I love KISS!! For me last night, it was making lean burgers on the shove for me the boy..simple and good, and a very satisfying dinner! Hope you are having a great weekend!

    I am always KISS-ing! Not only is KISS my initials (I know, my parents are awesome) it’s actually my business name because I wanted to remind myself that working with clients doesn’t have to be so complicated. Many people think that freelance writers are a pain because you can’t watch over them, but I’m showing clients every day that when you KISS, you get the best results! 🙂

    I am loving coconut at the moment, so that muffin recipe sounds incredible! I’ll have to try it with dates!

    Let me see… I kept my workout simple today. Yoga! Yay!! It was kind of a requirement though because it was 108 degrees here today, yikes!!

    i’m keeping my thoughts simple today. not over thinking anything and just enjoying my productive day at work and then rehearsal dinner for my little brother tonight (he’s getting married tomorrow!). i will enjoy drinks and a nice big steak dinner at the restaurant later tonight 🙂

    I love coconut flour- and figs! Do you buy yours frozen or freeze them yourself??
    I have yet to ever buy/use almond meal/flour but just keep seeing it everywhere. I’ve certainly “accidentally” made it before though- from a former failed attempt at almond butter. 🙂

      my friend gave me a massive amount of figs from her tree and i frozen them. they were perfect for this recipe. And you can easily make almond meal with just almonds. I do it all the time. Or you can use regular flour, no prob. Heck, i’d use ground oats too!

    i kept it simple the other day! after coming home from the farmer’s market with a basket of figs i racked my brain thinking of a recipe. then i decided to “keep it simple” and shared them with j in a bowl covered with pb. 🙂 delicious.
    i will, however, need some more to make this recipe!

    My whole like is about KISS!!! Everything we do is all about not sweating the small stuff. Today, I’m not letting crap get on my nerves…or at least I’m trying. Those muffins…YUM!
