3 Portable Gluten Free Breakfasts with Protein. These recipes are great for travel! On the go, in air, or on the road! Easy to make and simply delicious.
So maybe we need an option C. The one where we focus on NOURISHMENT, despite the lack of activity or movement. Option C means we eat REAL foods that will FILL us and keep our inner bodies healthy while our outer bodies are flying at 10,000 ft or zooming through the roads. Travel can be physically hard on the body, but that doesn’t mean we need make it HARD to feed it right. Am I right?
Being that I just spent 30 hours traveling, and REFUELING a hungry Ironman athlete, I thought I’d share our 3 favorite protein packed and gluten free breakfast/snack foods that are great for travel. Well, they are great for ANYTIME but let’s just stick to one topic today, mmm k?
Silver Dollar Protein Pancakes! I love making these with Flapjacked mix and then freezing them until I’m ready to use them.
Here’s a little trick to making them silver dollar –> use a mason jar lid!
PrintSilver Dollar Protein Pancakes
- Total Time: 20 min
- Yield: 3
Description
silver dollar pancakes with protein pancake mix. Protein Packed and Gluten free and great for travel! On the go, in the air, or on the road! Oh and simply delicious. www.cottercrunch.com
Ingredients
- Mix 1 cup Protein Pancake Mix (Or 1 cup gluten free 1:1 flour flour with 2 tbsp protein powder mixed)
- 1 cup coconut or almond milk
- dash of cinnamon
- 1 egg or 2 egg whites
- oil or butter for pan
Instructions
- Mix your pancake batter flour, cinnamon, and milk together until smooth. Let it sit for 5 minutes then fold in the egg or whipped egg whites. Using egg whites make them a little fluffier.
- Heat skillet on medium high and add in a about 1 tbsp oil or butter. Place a few mason jars on the skillet and pour mix into the center. Once it starts to bubble, remove the lid and flip pancakes over. Make sure your lids are greased with a little oil as well. Not much, but a little is needed.
- Makes around 7- 10 mini pancakes.
Notes
You can also make bigger pancakes and then just place a mason jar lid in the center (once cooked) to cut and make into smaller silver dollar pancakes. But you will have extra random pieces after.
- Prep Time: 10 min
- Cook Time: 10 min
I store these in a ziplock bag and then bring coconut or peanut butter with us. The perfect fat/protein snack or breakfast!
Another great option for travel are these Paleo Ginger Pear Muffins. I posted the recipe back in December and loved them! The pear naturally sweetens the batter, the ginger can help ease nausea if you get travels tummy, and the grain free granola and almond meal provide extra protein and good fats for breakfast.
Okay, so what if you don’t feel like cooking or baking before you travel? Well then, I’d highly recommend Mikey’s Paleo English Muffins. And I’m not being paid to say that, haha, promise! They muffins are grain free and made with eggs, coconut flour, and almond meal. They are actually soft too! They have 3 flavors; onion, original, and raisin. I toasted a few before I left then stored them in a ziplock bag. They are great to top with nut butter, hummus, yogurt, egg, or avocado! Again, another great gluten free and protein packed snack/muffin. I bought them on Amazon but you can order from their site as well.
Okay, now I getting the itch to travel again and it’s only been a week since we got home.
What’s your go to travel food? Do you have any favorite recipes for gluten free breakfasts with protein?
If so, please share!
Cheers to Meatless Monday!
this is PERFECT for me right now. I travel to Scottsdale on Monday on a 6 am flight. I am kinda freaking out over what to pack so a) I am not starving and b) I don’t eat breakfast AND lunch before landing at 9 am PT (aka noon in my brain!). Gotta be strategic. thinking overnight oats and some fruit, maybe some not-as-good-as-Lindsay’s homemade healthy bites too 😉 I may buy these muffins though!!!
I’m send you all these and healthy bites if i Could!
Those look heavenly!
Wow, if those muffins are as delicious as their name sounds, then i am definitely trying them out! I always want to bake some healthy protein filled snacks for the week, but am never sure which route to go.
yes, the muffins are my fav!
These all look yummy, pinned for later. Thanks for sharing
anytime! let me know if you make them!
Love the silver dollar pancakes! I would have never thought to use a mason jar lid to make them….you’re so smart! 🙂
THAT idea with the mason jars!!! Brilliant! My pancake skill got completely lost over tha pst few months – seriously, fail after fail. Good thing I come to the US soon so I can buy my heart out on FlapJacked AND I will try the mason jars trick!
yay!! you will get lots of samples at Blend too!
We are not travelling unfortunately but breakfast time is often hectic! So these are great! Do you think I could use coconut flour instead of flap jack mix? Or would I need something else? I could make these ahead and freeze!
I would use coconut/oat flour and add in baking soda or something as well. Let me know if you try it jess!
I need to travel with you. I’d be so well fed.
yep, i never let me friends go hungry… hangry
All great ideas. I need to figure out what I’m going to bring with me when I travel to Paris for the marathon. I’m kind of getting nervous about eating right in the days leading up to the race. Food can really make me or break me!
wine and cheese! LOL! jk
Yea, i’ll save that for after the race 😉
I need these for this weekend. Actually, I need a sherpa!!!
on my way!
yep, I love this just as much as I thought I would. I could eat pancakes for every meal, so they are definitely my faves, but I am so excited you are making them high protein….which helps keep snack monster at bay for at least an hour 😉
haha yes, the one hour hunger rule.. so true!
I actually love the taste of protein powder, so each of these recipes is ideal for me to make. Looking forward to making the pancakes this upcoming weekend!
★★★★★
Love the use of mason jar lid! so clever! I haven’t travelled in a long time…this post makes me want to do just that ;).
we can go travel together!
That mason jar lid trick is genius!!
ooh those muffins look great! Pinning 🙂
Brilliant idea using the lid! These look so good and fun!
I always try to get protein in at breakfast and I love all of these! Thanks for sharing!
All of these options look so great, especially the ginger pear muffins! This article is perfect for me since i travel every weekend for gymnastics meets!! Thanks for sharing!
Whenever we travel I have even more bars in my purse/bags and the girls have them stashed everywhere as well. Oh and pb packets and protein powder. For places we are driving I will make up some protein muffins and cookies and we have lots of fruits and veggies cut up as well.
Not sure yet. We were suppose to travel with my hubby to Puerto Rico for 2 weeks over the girls spring break and Easter (we would have a long weekend over Easter as he would have 4 days off) but we have been having problems finding flights for us to get back without coming back mid week or separate flights for us so if we don’t find something in the next couple days we won’t go and he will go another time in April/May solo.
Beautiful looking pancakes and such a wonderfuly easy recipe too Lindsay. I LOVE these!!!! 😀 😀

What a great idea to use a mason jar lid to make silver dollar pancakes – I gotta try this tip soon! And seriously – these are way too good to be stashed away for travel only – those muffins are pure gold!
I usually love nuts when I travel – as much as I love chocolate, I cannot seem to eat too much of it if I am sitting for too long. So weird right?!
Happy Monday sweet lady!
Linday you are a so smart using the mason jar lid! I’ve got to try that, my pancakes are usually all over the place! I love ginger pear muffins, and I have to remember to try these next time I travel – I get car and air sick – bleh! I haven’t tried these english muffins but I think Dave and I would both love them!
I LOVE the idea of using a mason jar cover for silver dollar pancakes! Brilliant. Can’t wait to make some of these
Yum!! Love the Ginger Pear Paleo Muffins, and what a great idea to use a mason jar lid to shape your pancakes 🙂 I just got back from a ski trip, and, like you, can’t wait for the next trip to begin!!!
I love the idea to use a lid for the pancakes! Vegas is about to experience the amazing world of mini things. LOL!
Those English Muffins looks AMAZING! I used to eat EM’s all the time as a kid for breakfast and make little pizzas with them…So good and all those nooks and crannies. LOL!
Loving your cute silver dollar protein pancakes!
Clever clever, love this list! And those pancakes…yo, I need to upgrade the kids’ pancakes. It’s sad. I mean, I do do whole wheat and throw some flaxseed in, but the ‘syrup’ has gotta go! You definitely have traveling breakfasts dialed in, and I can’t wait to try them. Thanks for all the inspiration! Cheers to a great week. YUM : )
These are all great ideas!!Lately I have to DRAG Meghan out of bed, like 10 minutes before we have to leave for school. These are perfect for breakfast in the car! 🙂
These are great ideas- I want to try the muffins! I freeze pancakes too, that is usually my pre-run meal and my daughter loves them before school as well. For travel on the day of, I make an egg burrito the night before, stick it in the frig, the next day, throw it my bag and by the time I sit down to take off it’s room temp. I love to travel too– I really miss it… can’t travel much with three kids in tow, but we do a lot of “pretend we are tourists in our own city” stuff.
I’m always packin’ my “instant” baggies of quinoa flakes or buckwheat cereal!
Oh the yumminess! I am always packing foods for traveling to ensure it’s not a crappy food extravaganza on the road. Now I have new ideas!
Such good ideas! The mason jar lid for the silver dollar cakes – who would have thought! I usually take lara bars or homemade protein bars/balls as a go -to travel treat!
Travel ideas are always tough- I love these! Now I just need a place to travel to… 🙂
LOVE those pancakes & your great idea!!!! YUMMERS!!!!!! I LOVE EASY!!!!!!!!!
Yum! I can’t wait to get some Flapjacked to try!!
Love the tip of using a mason jar lid for those beautiful pancakes 🙂 pinned this to Pinterest! Happy Monday, friend!
We just pack protein bars and trail mix. . . . .
Definitely perfect for on-the-go snacks, which I always feel I’m lacking somehow!
Girl, that mason jar lid trick is GENIUS! I love all of these ideas and the timing is perfect because I’ve been starting to experiment with pre-race nutrition (well in advance) for my 70.3 this summer. I’ve always been a very light eater when it comes to pre-race breakfast because I never want to risk GI issues, but I know I need to be smarter when it comes to the 70.3 distance. Thanks for this!
i usually carry granola bars with me but i like the idea of muffins.
Lovely photos my friend! I want to eat all your beautiful snacks and this post is quite timely for me. When I am traveling, I often stash a bunch of homemade bars/balls in my purse to have on hand when needed.
Fabulous travel breakfast ideas! And thanks to you, I’m obsessed with Flapjacked 🙂 Best protein pancake mix ever. Now I think I need to try the Mikey’s English muffins that you recommend.
My go-to travel food = Quest bars, Nii bars, Pure bars, raw nuts, Zing bars… see a pattern here? Haha.

I wish I was going somewhere fun for spring break! I never went on spring break throughout college at all. Oh well. My liver will thank me later I guess? Now I’d just like to go sight-see. I have major issues with my stomach when I travel. My body likes routine a lottttt and I’m not good at planning ahead for myself, so I wind up grabbing the “best” thing I can find. These are good snacks! I should probably rethink my traveling eats haha.
haha your liver is doing a HAPPY DANCE! p.s happy EARLY bday!
I tote my oatmeal, either in packets that I make myself or already cooked in a container, wherever I go! Great emergency option and perfect for travel, especially on a plane.
Oh mmm!! Those all look amazing. The pancakes look the best. I’ve been in such a pancake mood lately! ha
OMG game changer is using the top of a mason jar to make the silver dollar pancakes. GAME CHANGER
mmmm!!! YUM! I am always needing breakfast food that travels now that I commute!
These are PERFECT for my clients and upcoming spring breaks! Hope the jet-leg has settled and thanks for all the help recently. We need a blogger meet up where we eat yum GF things you bake with some wine and the boys bike and run together 🙂 Seriously!
now that would be heaven!
I love this because travel can be such a relative thing.
TRAVELING MOPAC to get downtown during SXSW to TRAVELING to NYC for meetings.
