Lower sugar, protein packed, dairy free, no bake, and Vitamin C rich! Great for snacking on the go, between sports and activities, or anytime of day!
Friends!! It’s August! The last month of Summer! I know I know, I shouldn’t be excited. If I were a kid, I would be depressed. But as an adult living under the sweltering Texas sun and teaching fitness classes outdoors, I couldn’t be more pumped for fresh FALL air to arrive. I’m guessing we have 8 weeks to go until that happens here, but hey, that’s do-able!
More importantly, a new month means new Healthy Bite flavor and giveaway! I’m devoting this whole week to Healthy Bites recipes, so there’s something to get UBER excited about, along side my end of summer excitement of course.
This month I’ve created two kid friendly protein bite flavors! Since kids are the ones that have to go back to school, it’s only fair, right? I usually make a few batches of healthy bites for my nieces and nephews when they head back to school. But I also receive a lot of requests from parents for protein/snack bites. Bites that their kids can eat between school and extra curricular activities/sports. Two a day football practices, soccer, swimming, dance, etc. you name it! And with that in mind, I thought I needed to make a gluten free protein bite flavor that was refreshing and wouldn’t melt, like chocolate.
That being said, today’s kid friendly healthy bite flavor is definitely still SUMMER themed but with a back to school accommodation.
Yes, it’s PINK LEMONADE! I mean, who here grew up selling regular and/or pink lemonade on their front lawn during summer? My childhood summer was all about the lemonade! Fresh, frozen, slushy, and more. Although I have to admit, most the time the lemonade we sold on the street was far from fresh. More like a scoop of sugar and Kool-Aid. Whoops. Don’t tell Martha!
Fortunately, these pink lemonade protein bites are actually are made with real ingredients and less sugar than the drink I grew up on. Oh and they have Vitamin C in them as well!!

- Yield: 28 1x
Description
Kid Friendly Pink Lemonade Protein Bites {Grain Free}
Ingredients
- ½ c vanilla or strawberry flavor protein of choice
- ½ cup coconut or almond flour
- ½ cup almond butter
- 1 tbsp dried raspberries or strawberries (optional)
- ¼ tsp lemon extract
- 1 tbsp true lemon powder (you can also use any lemonade powder that is naturally sweetened)
- ⅓ cup honey
Instructions
- In large bowl, add in all your dry ingredients.
- Then mix in your nut butter, extracts, and last the honey. Mix well (I use my hands) and roll into bite size balls. You can then roll bites in the extra protein/lemonade powder after you roll. Makes about 27-28 balls.
- Feel free to roll into larger bites, or smaller to make more.
- Add more honey/nut butter if they end up being too dry to roll. Just depends on type of protein you use.
- Freeze or keep in refrigerator to maintain freshness.

For more strawberry taste, add in ¼ teaspoon raspberry extract.
Don’t have lemonade powder? Try a packet of Raspberry EMERGEN-C!

Growing Naturals strawberry vegan Protein to keep them dairy free.
or My Mix Nutrition Grass fed Vanilla Whey for grain free protein option.

This is what they look like before heading to the freezer. And this is where you can get creative with your coating!
Coat them in more vanilla protein, strawberry protein, lemon powder, or leave them as is. Either way they turn out tart and tasty! As you can see, I used true lemon as a coating. They have raspberry lemonade and lemon powder option. What I like about true lemon is that their are no added dyes and it is made with stevia. But if you don’t have true lemon, feel free to use your lemon powder of choice! I’ve also tried mixing a batch of these bites with Raspberry Emergen- C packets instead. You just need to make sure to add in the lemon extract if you do so. Both work great! But if you are looking for an extra kick of Vitamin C, then go with the Emergen-C, obviously.
As far as Summer goes, I think it’s killed many of my brain cells, hence the ALL OVER THE PLACE topics within this post.

It’s so funny, because here in So Cal, our summer is far from over. Sept. and October can be our hottest months! Even beginning of November. We don’t buy pumpkins until right before Halloween, because they just rot in the heat 🙂

These sound just delicious, Lindsay, and actually I think you’ve introduced me to a new idea today. I love ‘healthy bites’ like the ones made with pulverised dates, but haven’t really delved into the ‘protein powder’ world yet! I reckon Martha Stewart has got a rival to watch out for, actually! 🙂

And I feel your pain regarding the heat – I live in Florida and we still have until at least October until we get some relief from the heat!

Love the idea/flavor for these bites, Lindsay! Pink lemonade was always a summer favorite of mine growing up, and I love that you can add dried raspberries to the bites, since raspberries are one of my all-time favorite fruits. I can’t wait to give these a try!
