Baked hummus, it’s a thing. A thing you’re gonna become totally obsessed with. Just like the whole roasted garlic foodie obsession. And speaking of obsessions, I have a little confession. Actually I have several, right now and they all have to do with food, duh.
Confession One ….. I am a closet hummus addict. Like majorly obsessed. In fact, it’s the reason why I’ve only made one homemade hummus recipe so far. Because Making large batches is dangerous for me! As in it will be gone within a day and I’d probably  turn into a chickpea. My family knows this but no one else really does. I mean, it’s even hard for me to share my hummus snacks with my husband. Poor guy.
 Confession Two … I have an obsession with roasted garlic, but I don’t make it often because then our house and my clothes smell like the whole foods hot bar for days! And that’s all good but not when you’re trying to fall asleep at night but you swear your hair still smells like garlic. Okay I might be a tad dramatic, but you can relate, right?
Confession Three…. I have been on a mission (a secret mission)Â for YEARS to try to get my dad to like hummus. He makes fun at me at all our family dinners because of my “tiny” addiction. His exact words are “hummus tastes like paste.” Um, no dad. Not the hummus I eat! And definitely not this roasted garlic baked hummus recipe.
With all these confessions laid out all the table, it’s probably best I do something productive with them. Don’t you think?
Like… combine the obsessions and create one EPICÂ Parmesan Roasted Garlic Baked Hummus Dip with Zucchini .
Lord have mercy on me, this big boat of baked hummus is so delicious. Dangerously delicious. The roasted garlic, ya, that’s a magic ingredients. The zucchini? Oh, it adds in some great texture and of bonus vitamin c boost!
The pimentos? Well, that’s just for looks but I do adore pimentos. I’m southern, we all do.
And the parmesan? Well, parmesan is low in lactose and an aged hard cheese I can tolerate. HOOORAY! Plus it’s cheese. Need I say more?
But wanna know why this roasted garlic baked hummus dip is epic? Besides the fact that it’s healthy, super easy to make, and delicious? Besides the fact that it is gluten free, a great source of fiber, and goes so well with homemade snap pea chips?
Well…. this roasted garlic baked hummus recipe is now A FAMILY FAVORITE! Meaning, my dad LOVED it! And he can no longer make fun of my hummus addiction. That’s right, hummus daughter wins! Mission complete.

Description
Easy Parmesan Roasted Garlic Baked Hummus Dip with Zucchini {Gluten Free}
Ingredients
- 1 garlic bulb (or 4 to 5 cloves)
- 2 tsp olive oil (divided)
- 20 ounces of plain hummus (or homemade hummus)
- 1 cup parmesan crumbles (divided)
- 1 cup chopped zucchini
- 4 ounce diced pimentos (i buy in a jar and drain juice)
- sea salt and black pepper to taste (at least ¼ teaspoon each)
- chopped basil or cilantro to garnish (if desired)
- veggies or gluten free crackers for serving
Instructions
- First roast your garlic. (see notes for alternative)
- Preheat oven to 400F.
- Peel outer layers of the whole garlic bulb, leave the skins of each clove intact. Don’t separate the cloves. Next cut a tiny top part of the cloves off so they are exposed. Not much. This is optional but really helps with removing them once roasted.
- Place bulb in a muffin pan cup or baking tray, drizzle 1 teaspoon of olive oil over the clove heads, then cover with foil. Place in oven for about 30 minutes or so.
- Remove and let cool. Then remove the cloves and dice or chop. Set aside.
- Next make sure all your zucchini and pimentos are chopped and toss them all together in a bowl (see picture above). Add a little sea salt/pepper if desired.
- Place 20 ounces of plain hummus in a mixing bowl. Add ½ to ⅔ cup of parmesan along with your roasted garlic. Mix together.
- Place hummus, parmesan, and garlic mix into a small baking dish or 8×8 pan.
- Layer the zucchini, parmesan, and pimentos on top.
- Drizzle 1 teaspoon of olive oil on top.
- Place in oven at 350F for 20-25 minutes or until veggies are cooked.
- Remove and Sprinkle sea salt/pepper and fresh herbs.
- Serve warm with gluten free crackers or chips. Or chill for later and serve with veggies.

If you don’t have time to roast garlic, just use regular minced garlic.

Recipe says “serves 2-3 Tbls”. Is that a serving size or the amount the recipes makes. Making this for guests and trying to figure out how much to make as an appetiser.

Confession: I have an obsession with roasted garlic. I used to roast like 4 or 5 heads at a time and freeze whatever I could eat. I’ll squeeze it out of the individual cloves onto a cracker and eat it allllllll (despite the amazingly bad gas it gives me).

So, my dad actually will not stop eating hummus and has been eating it by the spoonful since I was a kid! It’s like one of the 3 foods he eats on a daily basis 🙂 And I don’t think it’s ever been one without garlic. Anyhow, I will definitely have to make this for him because he will go nuts for it!
