Its midweek, well actually its more than midweek now. WOOHOO! But usually around Wednesday or Thursday, the hubs and I are feeling it. Training a bunch, training others, teaching classes, making Healthy Bites, etc. etc. etc. We need more iron in our diet to get over that “hump.” Usually I try to fix a meal with lean meat (like bison, beef, ostrich, etc.) but this week I just wasn’t feeling “meaty.” I blame it on the heat! So whats one food that has almost double the amount of iron as meat? ………OYSTERS!!! They are loaded with iron. Almost 40% per serving, WOWZA! But before you judge my recipe, just read the ingredients. Doesn’t look as good as it actually is.
Garlic Sauteed Oysters in Wakame Brown Rice noodles w/ Spinach, Tomato, & Goat Cheese
I used a can of raw oysters. I first sauteed them in a little olive oil with garlic. Then add in lots of spinach and 1 cup cherry tomatoes. It will make a nice little sauce once fully cooked. Cook the noodles according to the package.
These noodles usually take less than 10 minutes. They are quick and easy and delicious. Throw them back in the pot after draining and add a little butter or olive oil. Add a few dashes of black pepper and sea salt. Serve up your pasta and add your iron rich topping. I sprinkles some goat cheese on top. What can I say, I’m in a goat cheese phase. haha!
This definitely hit the spot and left us feeling re-energized. Could be just a placebo affect, but hey, if it works….it works.

OMG – I need to find those noodles. YUM. I love love love wakame. I am so with you on using a ton of spinach. I go through an entire bag by myself in a week. The hubs just better get his own 😉 And goat cheese goes well on anything I think. So when are you planning a trip to AR????

wakame seaweed is AWESOME! i love how theyve got ones mixed in with brown rice for a nice pasta alternative.. plus its a nice change from the usual spinach pasta i see everywhere. damn this looks delicious!!!ps. popeye's got nothin on you <3

oysters? oh boy…I love your recipes & I think you are wonderful but I'm not so sure how I feel about oysters. I can't say I've ever eaten them–what other seafood are they similar too?
