With everything going on in the Cotter household these days, I think its safe to say our days are pretty, well….. sporadic. Ever since we got back from Portland, we’ve been housesitting/dogsitting. In fact, we didn’t even unpack our suitcases. We just took them straight to our “house.” Quite the nomads here.
And poor Sadie, she went from my parents house (while we were in Portland), to this house (with 2 other dogs), and then tomorrow we will be switching homes and housesitting/dogsitting for yet another family. She’s really not sure what to think. But at least the dogs are welcoming her with open……bellies. haha.
Wasabi Seaweed Crepes
-
2 tablespoon GF flour (I used coconut and potato mixed)
-
3 strips of wasabi seaweed OR you can use 1 sheet nori with 2 teaspoon wasabi powder or wasabi mustard
-
1 tablespoon oil
-
1 tablespoon balsamic vinegar
-
2- 3 tablespoon milk or water
-
¼ teaspoon sea salt
-
¼ teaspoon black pepper
-
any other spices you like. I added some paprika, cause we love paprika!
-
1 teaspoon baking powder
-
1 egg
-
goat cheese or white cheddar (optional)
-
Sirracha Chili sauce to garnish.
um ya, totally would try that. I ate cashew butter on nori sheets with romain lettuce leaf and spicy ketchup as a snack the other day. no shame here. Lindsay ________________________________
Speaking of odd things and nori….I use the untoasted nori sheets, spray them with braggs, smear them with peanut butter and sprinkle with gomasio…..fold it in half like a sandwich and then cut into bite size pieces with a scissor. Um…yum. I'm only sharing this because I have a feeling you might try it and I assure you you will like it. I love the way your culinary brain works, those crisps look delish!

Ha I don't think I've ever even had seaweed in my possession! The last randomly delicious thing I made involved pb + tempeh & some veggies on a sandwich. I had no idea the nut-butter could taste SO good with everything… 😉

definitely the wrong person to ask… at least your 'odd' things look edible! mine inevitably look revolting but are actually amazing… honest! lately? tuna mashed with dry oats and a bit of natural yogurt… oh and tomato puree… and some gherkins might have also found their way in there…

Hmmm I don't think I have made anything TOO odd lately! Last year I didn't have butter to melt on my popcorn so I put pineapple juice and curry on it. It was tasty!

I think they look pretty darn delicious – but then again, the only thing I don't put Sriracha on is my oatmeal and if I could figure out how to put it on that, I probably would! I've never tried vegemite, but I've heard a lot about it… I'm not sure if I'm ready to give it a try just yet though. I'm more than a little afraid!

I (sometimes, ha!) come up with some pretty good stuff when I am down to few ingredients. today's lunch was a quick socca crepe filled with beans + red pepper in the food processor, topped with salsa. a big pile of spinach topped with salsa was the "salad" to go with it! 🙂

That looks definitely odd but surprisingly delicious! I haven't cooked/created much lately since we've kind of been in between jobs/homes/lifestyles…but I miss it!
