We’re so out of our element this weekend. House sitting with 3 dogs and one kitten. Sleep? What’s that? I am not sure i could handle motherhood right now. Kittens are whole new ball game, ha!
Anyway, ever since Thanksgiving I’ve been on a pancake kick, actually I’ve been on a breakfast all day kick. But here’s the thing, I’m not actually a good pancake maker. My FLIPS are FLOPS 99% of the time. But I love the batter! I love Pamela’s GF pancake mix and I love making Grain Free Coconut Pancakes. So, here’s what I did. Took the batter and baked! Yep, made a pumpkin pancake flat bread one day and buttermilk coconut muffin the next. No flipping required, syrup or melted almond butter recommended. 😉
For the pancake flat bread, i just mixed 350 grams of Pamela’s GF pancake mix with 2 tablespoon coconut flour, 1 egg, pumpkin spice, few drops of vanilla stevia, ½ cup almond milk, and a few scoops of peanut flour together. Then i poured in a greased bread pan and baked at 350F for about 8-12 minutes. Just depends on how your oven works. Comes out pretty thin.
For the Buttermilk coconut muffins/biscuits, i did the following.Print
Coconut flour breakfast muffins
- Total Time: 23 minutes
- Yield: 10 1x
- ¼ cup coconut flour
- 3 to 4 eggs (use 4 if you are adding less milk)
- ¼ cup almond meal
- 1 tsp butter extract
- ½ tsp vanilla extract
- ⅓ to ½ cup coconut cream or buttermilk
- dash of sea salt
- 1 tsp baking powder
- mix all ingredients together. it will be be very grainy at first. Just keep mixing. Then roll in ball and press into a greased muffin pan. Bake at 350F for about 12-15 minutes. So simple!
- Prep Time: 10 minutes
- Cook Time: 13 minutes
I’ve been eating these pre or post run with banana and molasses or honey. I look faster now, right? 😉
Oh, and I’ve also been trying out the NEW LOVE GROWN product……HOT OATS!! Or as stuftmama would say.. HOT LOVE. LOL!
Let me just say, this is not your average Instant oatmeal. Cooks up hearty like steel cut oats and isn’t loaded with sugar! Plus it’s gluten free. Very impressed! It comes in four different flavors: blueberry walnut, apple cinnamon, peach vanilla, and strawberry raspberry. Should be in stores next month and on Amazon!! There will be a series of giveaways starting this week so be on the look out in the blog world. Lots of HOT LOVE to spread! Haha yes, i just said that.
Are you a good pancake flipper? If so, please teach me.
Are you ready for some HOT LOVE? hmmm.. don’t answer that.
Not sure I will be back until the New Year, so if I’m not… HAPPY NEW YEAR!
I love hot oats, they are delicious!
Happy New Year, friend! Have a great year in 2013.
happy New Year friend. I’ve missed YOU!
pancake flipper – Michelle is the best in our family! she is always our go-to pancake flipper! not sure how she does it, she always says the first batch is the hardest, once the pan warms up it is easier.
Happy New Year dear friend! We wish you a wonderful new year eve!!!
Brittany @ Delights and Delectables
I want those biscuits!! How about this… you make me biscuits and I’ll flip your pancakes!
Happy New Year friend!!!
She Rocks Fitness
My pancake flipping skills are pretty consistent, meaning pretty awesome! It’s all about the heat of the pan and being patient. 😉 Nice shirt woman! Happy New Year and sending you a big old hug! XOXO
well come make me some!!
beka @ rebecca roams
I can’t flip pancakes to save my life either! They end up on the stove and half on the pan. I usually just turn them over with a spatula (but it’s still messy). I loveee oatmeal so I’m excited about these giveaways and for when it is out!
Linz @ Itz Linz
I find that I have the most trouble flipping pancakes with coconut flour too!!
I wish I could flip pancakes. Ha. Those biscuits look delicious and I have yet to try flatbread. You just reminded me I haven’t gotten my HOT LOVE yet. He he.
Laura @ Mommy Run Fast
You definitely look fast! I love your flip flopping silliness. If the batter is thick enough, I can flip but I love the idea of baking pancakes. Happy new year, Lindsay!
Alysia @ Slim Sanity
that recipe looks awesome! we don’t make pancakes very often, but they taste sooo good!
Sara @ Nourish and Flourish
Both of these faux pancake recipes look fabulous! I’ve actually never tried Pamela’s baking mix (I know, crazy, right?), but may need to buy a bag so that I can make this flat bread. I’m also loving the biscuits – especially because they’re portable! (And yes, you are looking MUCH faster!)
I’m definitely a flopper who tries ever-so-desperately to be a flipper. I’ve learned that using two spatulas (one on each side of the pancake) increases my success rate enough to make the extra effort (two hands!) worthwhile. 😉 <3
Christine @ Love, Life, Surf
You can come over to our house on Saturday mornings. The boys make pancakes, but curiously, there are never any leftovers for me. I love that you took the idea of the pancake and ran with it and baked it! Genius.
I fancy myself a pretty good flipper. I don’t really eat pancakes much anymore, but I went through a phase where I ate them every morning for about a year. It was a little out of hand, actually.
I’m ready for some HOt Love. Wait. What? 😉
how’d i know you’d be a good flipper!? I think it’s your crafty skills. Teach me your ways oh crafty one.
For all of you that are having difficulty flipping…. a little advice. Be sure you pan is hot before adding batter. to test if it’s hot enough, use your fingers to flip a little water in the pan, it should sizzle and dance. Then drop in the batter, and wait – don’t play with it until the edges look browned and bubbles are rising to the top and starting to burst. THEN you may slideyour spatula under the pancake and flip. Rule of thumb, you don’t eat the first one, the rest of the batch will be perfect. Good Luck.
ahhh thank you!! i am trying that next time!
bwahahah Hot Love — fabulous! I’ve slowly gotten better at the pancake flip – I find I stink unless I have them on a griddle! 🙂 Have a FABULOUS New Year buddy!!
Cait the Arty Runnerchick
i think the pancake all day and breakfast for dinner trend needs to be much more capitalized on! lol…actually my roommate and i were talking yesterday about wanting to open a pizza and pancake/waffle restaurant…best of both worlds, right?! that said i SUCK at flipping, so i better school up…haha.
Brooke @ Running In Heels
OMG! Those look so good! Will definitely be trying them this week 🙂
You’re so cute!
I don’t think I’ve ever made homemade pancakes…slacker over here!
Oh man, these looks AWESOME! I’m super sad I can’t have eggs now. Boo to that. Yah, I’m with you on flipping! I’m honestly the worst! It takes me about 10 tries to actually flip properly. You are too cute in your picture!
oh try it with the flax egg instead! i bet that would work. and don’t worry, i’ll eat eggs for you.
I hardly EVER make pancakes…. I’m not sure why, just haven’t jumped on that bandwagon (yet) – I’m an OK flipper (that’s what years working in kitchens does to you – you get in trouble if you mess up the flipping 😉 )
I LOVE your idea of baking the pancake mix though – genius! And those hot oats sound awesome, yummo!
Happy 2013 beautiful gal xxx
i reckon it would be a great idea for buckwheat “cakes.” oh and when i get more Love Oats, i’ll send you some. We need more vegemite anyway! hehe
we have been busy here with two dogs too…….3 dogs and kitties i can’t imagine. it is crazy but fun! love your pancake idea. can you believe i am too lazy to make pancakes and cheat a lot by buying trader joes gluten and diary free ones. and yes you do look fast! i hope you and james have a wonderful new years. we are sending lots of hugs your way 🙂
kitties are the little punks, haha. They just pester the poor dogs! I wish we have TJ’s here. I guess we just need to come visit sooner, yes? Really, 2013 is the year!
Abby @ Change of Pace
Housesitting pets it tough work! Whenever we watch my in-laws dogs, we barely sleep!
I’m brutal at making pancakes- I think it’s because I’m too anxious and flip them early and then take them off the griddle before they’re cooked!
Your cakes turned bakes sound delicious! And, you look amazing in that photo.
Happy New Year!
ahh yep, i’m anxious too. Its like a watched pot! Happy New Year friend. Hope 2013 is full of healing!
Debbie (Accidently Delish)
I am the flop master so you’re not alone! My fiancé actually laughs at me because I get so mad when I flop his pancakes and they aren’t “pretty” enough.
And you know I’m jealous of that oatmeal proven by my Instagram declaration! Haha. Looks so good!!
I also have turned to baking my pancakes. Works for me haha!!
mine are never pretty, but they taste great. That counts, right? oh and you better get some Love from all the giveaways going on with Lovegrown. If not, i’ll sneak you some! hehe
GiGi Eats Celebrities

haha i just bought cinnamon roll candles for that very reason!
[email protected] of Pace
I bookmarked these. They look so good and seem simple to make! I’m awful at flipping pancakes. I am just so impatient!
good, i’m not alone. I can’t flip for the life of me!
Oh I love pancakes but I’m probably not the best flipper haha!! I think it’s my lack of coordination plus my clumsiness hahaha indeed lol! Omg I wanna try that new Love Grown food Hot Oats aka HOT LOVE HAHAH love that! I just got the granola & I love it. Need more Greek yogurt to go with lol. Glad u had an awesome Christmas & here’s hoping u have a blessed New Years. <3!!
so glad you got the granola! isn’t it awesome!!? New year you will try Love Oats. I know it!
Heather (Where's the Beach)
Teehee – funny how sometimes what we wear for our runs makes us feel super zippy! I am horrible at flipping pancakes. I don’t flip food very well – would be a terrible short-order cook. Happy New Year!
me too! i can’t wait on food that long. Pressure cookers would be my best friend. How are you feeling??? Any news on the clot?
LOL “HOT LOVE” is a riot. I can’t wait to try the hot oats, holy moly am I SO SO SO excited about the big Love Grown reveal!!
And now I want pancakes. It’s all your fault 😉
happy new year girl! xo!
Heather @ Better With Veggies
I just love that photo of you – you look like you’re having so much fun! 🙂
Yum!! I am not a good flipper either 😉 this looks so yummy, and perfect running fuel! now you can run for me until a) this flu goes away and b) my knee feels good enough to run. Yes? 😉 Happy New Year friend!
The Delicate Place (@misathemeb)
mmmm coconut cream <3 i am not a good flipper of pancakes but i can do a pretty mean french omelet! apparently, the pancake flipping awards go to those with the most patience…of which i have none in the morning when i'm hungry 😉 happy new year L!
You look faster to me! 🙂 I love Pamela’s mix, too. I actually prefer those pancakes to gluten ones. I have found I need to add more liquid than the recipe calls for though or they are too thick.
oh good call! maybe they need to be thinner.
Amanda @ .running with spoons.
Breakfast all day and baked pancakes? Have I ever told you that I love the way you think? I’m pretty sure that 99% of the reason I never have pancakes is because I’m a flopper… I think I’m just impatient and never let the batter sit long enough before attempting to flip, so they just end up sticking and falling apart.
ya, we floppers need to stick together!
Laura @ Sprint 2 the Table
I was a terrible flipper, but realized my problem is impatience. You have to put them in the pan and not touch them at all until they are ready. I was always poking and trying to rush them. And I make super-thick cakes, which helps.
I want some biscuits!!!
yes, that’s me! so impatient!
Michelle @ Eat Move Balance
I wish I could get back to enjoying pancakes . . . but every time I think of making them, I just can’t tear myself away from my favorite bowl of oatbran. It might be my favorite meal of the day. Mmmm.
Happy New Year!! 🙂
ohh now i want oatbran! haha
Oh I love pancakes! I’m definitely not a pancake flipper but I would love to learn some tricks too!
Thanks for the get well wishes…I do hope this cold leaves me soon!
Happy New Year!
shall we go to pancake school? hehe
