We’re so out of our element this weekend. House sitting with 3 dogs and one kitten. Sleep? What’s that? I am not sure i could handle motherhood right now. Kittens are whole new ball game, ha!
Anyway, ever since Thanksgiving I’ve been on a pancake kick, actually I’ve been on a breakfast all day kick. But here’s the thing, I’m not actually a good pancake maker. My FLIPS are FLOPS 99% of the time. But I love the batter! I love Pamela’s GF pancake mix and I love making Grain Free Coconut Pancakes. So, here’s what I did. Took the batter and baked! Yep, made a pumpkin pancake flat bread one day and buttermilk coconut muffin the next. No flipping required, syrup or melted almond butter recommended. 😉
For the pancake flat bread, i just mixed 350 grams of Pamela’s GF pancake mix with 2 tablespoon coconut flour, 1 egg, pumpkin spice, few drops of vanilla stevia, ½ cup almond milk, and a few scoops of peanut flour together. Then i poured in a greased bread pan and baked at 350F for about 8-12 minutes. Just depends on how your oven works. Comes out pretty thin.
For the Buttermilk coconut muffins/biscuits, i did the following.
PrintCoconut flour breakfast muffins
- Total Time: 23 minutes
- Yield: 10 1x
Ingredients
- ¼ cup coconut flour
- 3 to 4 eggs (use 4 if you are adding less milk)
- ¼ cup almond meal
- 1 tsp butter extract
- ½ tsp vanilla extract
- ⅓ to ½ cup coconut cream or buttermilk
- dash of sea salt
- 1 tsp baking powder
Instructions
- mix all ingredients together. it will be be very grainy at first. Just keep mixing. Then roll in ball and press into a greased muffin pan. Bake at 350F for about 12-15 minutes. So simple!
- Prep Time: 10 minutes
- Cook Time: 13 minutes
I’ve been eating these pre or post run with banana and molasses or honey. I look faster now, right? 😉
Oh, and I’ve also been trying out the NEW LOVE GROWN product……HOT OATS!! Or as stuftmama would say.. HOT LOVE. LOL!
Let me just say, this is not your average Instant oatmeal. Cooks up hearty like steel cut oats and isn’t loaded with sugar! Plus it’s gluten free. Very impressed! It comes in four different flavors: blueberry walnut, apple cinnamon, peach vanilla, and strawberry raspberry. Should be in stores next month and on Amazon!! pancake flipper – Michelle is the best in our family! she is always our go-to pancake flipper! not sure how she does it, she always says the first batch is the hardest, once the pan warms up it is easier.

I can’t flip pancakes to save my life either! They end up on the stove and half on the pan. I usually just turn them over with a spatula (but it’s still messy). I loveee oatmeal so I’m excited about these giveaways and for when it is out!
I find that I have the most trouble flipping pancakes with coconut flour too!!

Both of these faux pancake recipes look fabulous! I’ve actually never tried Pamela’s baking mix (I know, crazy, right?), but may need to buy a bag so that I can make this flat bread. I’m also loving the biscuits – especially because they’re portable! (And yes, you are looking MUCH faster!)
I’m definitely a flopper who tries ever-so-desperately to be a flipper. I’ve learned that using two spatulas (one on each side of the pancake) increases my success rate enough to make the extra effort (two hands!) worthwhile. 😉 <3
You can come over to our house on Saturday mornings. The boys make pancakes, but curiously, there are never any leftovers for me. I love that you took the idea of the pancake and ran with it and baked it! Genius.
I fancy myself a pretty good flipper. I don’t really eat pancakes much anymore, but I went through a phase where I ate them every morning for about a year. It was a little out of hand, actually.

For all of you that are having difficulty flipping…. a little advice. Be sure you pan is hot before adding batter. to test if it’s hot enough, use your fingers to flip a little water in the pan, it should sizzle and dance. Then drop in the batter, and wait – don’t play with it until the edges look browned and bubbles are rising to the top and starting to burst. THEN you may slideyour spatula under the pancake and flip. Rule of thumb, you don’t eat the first one, the rest of the batch will be perfect. Good Luck.

I hardly EVER make pancakes…. I’m not sure why, just haven’t jumped on that bandwagon (yet) – I’m an OK flipper (that’s what years working in kitchens does to you – you get in trouble if you mess up the flipping 😉 )

I’m brutal at making pancakes- I think it’s because I’m too anxious and flip them early and then take them off the griddle before they’re cooked!

Breakfast all day and baked pancakes? Have I ever told you that I love the way you think? I’m pretty sure that 99% of the reason I never have pancakes is because I’m a flopper… I think I’m just impatient and never let the batter sit long enough before attempting to flip, so they just end up sticking and falling apart.

I was a terrible flipper, but realized my problem is impatience. You have to put them in the pan and not touch them at all until they are ready. I was always poking and trying to rush them. And I make super-thick cakes, which helps.

I wish I could get back to enjoying pancakes . . . but every time I think of making them, I just can’t tear myself away from my favorite bowl of oatbran. It might be my favorite meal of the day. Mmmm.
