We’re so out of our element this weekend. House sitting with 3 dogs and one kitten. Sleep? What’s that? I am not sure i could handle motherhood right now. Kittens are whole new ball game, ha!
Anyway, ever since Thanksgiving I’ve been on a pancake kick, actually I’ve been on a breakfast all day kick. But here’s the thing, I’m not actually a good pancake maker. My FLIPS are FLOPS 99% of the time. But I love the batter! I love Pamela’s GF pancake mix and I love making Grain Free Coconut Pancakes. So, here’s what I did. Took the batter and baked! Yep, made a pumpkin pancake flat bread one day and buttermilk coconut muffin the next. No flipping required, syrup or melted almond butter recommended. 😉
For the pancake flat bread, i just mixed 350 grams of Pamela’s GF pancake mix with 2 tbsp coconut flour, 1 egg, pumpkin spice, few drops of vanilla stevia, 1/2 cup almond milk, and a few scoops of peanut flour together. Then i poured in a greased bread pan and baked at 350F for about 8-12 minutes. Just depends on how your oven works. Comes out pretty thin.

Let me just say, this is not your average Instant oatmeal. Cooks up hearty like steel cut oats and isn’t loaded with sugar! Plus it’s gluten free. Very impressed! It comes in four different flavors: blueberry walnut, apple cinnamon, peach vanilla, and strawberry raspberry. Should be in stores next month and on Amazon!!
