The time has come. Summer time… well almost! And in Texas, that means it gets hot! It also means that our oven goes into hibernation. Yep. it’s true. I rarely bake during our Texas summers. It just makes the house to hot. But you know what? I actually don’t mind my little baking sabbatical because it forces me to expand my horizons with easy no bake meals. You know, the ones you can throw on the grill or scramble in a skillet for 10 minutes and call it a meal?

Yes, I am become quite fond of those meals during these warm months.
So today I thought I’d share with you some more NO Bake meal ideas that I’ve collected, plus our favorite Texas Tacos Recipe! Sound good?

Tacos will also be a summer staple in our house! Hello TACO TUESDAY! Here is our favorite fish taco recipe. It’s unique in flavor, but I promise you’ll love the refreshing and nourishing ingredients.
Texas Tacos with Sablefish (makes 2 tacos)
- 2 3-4oz sablefish or other white fish fillets
- 1 cup broccoli slaw or cabbage slaw
- ·2 tbsp oil
- ¼ cup Chopped red onion
- Balsamic vinegar
- ¼ tsp sea salt
- ¼ tsp black pepper (optional)
- 1 tsp red pepper or chili pepper flakes
- Salsa or Cholula to top!
- Corn or gluten free tortillas
- Optional toppings- avocado, sour cream, pico de gallo. Or sometimes I put this hummus on top!
In a small skillet, place your fish and oil. Let it simmer a few minutes on medium, and then add in your onion and other seasonings. Sautee everything till fish and veggies are cooked. Set aside and keep warm. In another pan, add your slaw and balsamic vinegar. I just drizzle a little on it with some oil. Cook it slightly leaving the slaw somewhat crunchy.
Warm your tortillas then add your slaw then fish. Make sure to add in the onion and sauce from the fish pan as well! Top with salsa or Cholula. Feel free to add in more spices.
