It’s already February! Like whoa! And as I sit here typing up my Healthy Bites Flavor of the Month Post Β (HELLO –> Chocolate Fudge Red Velvet Cake Bites), it’s 82F for the high today. This 2016Β weatherΒ is already crazy sporadic. Much like ourΒ life right now. But I’m gonna go with it.
You see, I’m not doing a giveaway for Healthy Bites this month. GASP! I know, I’m sorry. But I feel like because my life (and the weather) is sporadic, maybe the giveaways need to be sporadic. Alright alright. Let’s talk fudge and red velvet cake and superfood. Wait, which one of these doesn’t belong? Haha, probably the superfood. I’m sure you’ve never seen aΒ super food red velvet cake or a cake bite. Well, that’s about to change.
You see, Β I think I’ve only had red velvet cake only once. And actually, it was in the form of a cupcake, way before my gluten free days. That being said, my goal here with this Valentine’s Day theme recipe was to make a chocolate fudgish (is that a word?) type of no bake gluten free cake bite that was healthier than that cupcake but stillΒ smooth as velvet. Pun intended.
Like ……Β When you take bite it’s taste and texture is kinda like cake and fudge combined. Yes, it’s possible!
Oh and it needed to be dye free! But wait, how do you add RED to red velvet cake without adding dyes or chemicals? Well, you rallyΒ up your superfoods!
Dark Brown and Pink = RED! So think DARK CHOCOLATE (COCOA) and any form of red fruit/vegetable powder. Beet, raspberry, strawberry, etc.
Today’s recipe I combine Cocoa with GOJI BERRY POWDER. Goji berry (powder) has so many amazing wonderful superfood properties and it’s basically tasteless so it takes on the chocolate and buttery taste quite well. This is great for those looking to sneak more veggies Β in their diet/recipes without actually having to taste it! Β Chocolate
Things to know about GOJI Berry – Besides that it’s fun to say.
- Did you know they are actually a fruit and herb? Ha, go figure.
- They are EXTREMELY HIGH on the ORAC Antioxidant scale.Β An ORAC value calculatesΒ a food’s antioxidant power on a relative scale. Adding these to your dietΒ just might help with athletic performance! RUN BABY RUN!
- Studies have shownΒ that goji juice/berries can help increase energy and gastrointestinal health due to their anti-inflammatory and antibacterialΒ properties . I’ll eat chocolate fudge red velvet cake bites for that!

Description
No Bake Chocolate Fudge Red Velvet Cake Bites {Gluten Free}
Ingredients
- 1 cup vanilla pea protein powder or [url] gluten free box cake mix. βhttp://www.amazon.com/gp/product/B002NLY0QE/ref=as_li_tl?ie=UTF8&camp=1789&creative=9325&creativeASIN=B002NLY0QE&linkCode=as2&tag=cottcrun02-20&linkId=MBNDUY5SNEML27SR[/url]
- 1/4 cup cocoa powder
- 1/4 cup coconut flour (finely ground or light in texture works best)
- 2 oz semi sweet or dark chocolate baking chocolate (see notes for vegan brand)
- 1 tsp pure vanilla extract
- 1/2 tsp butter extract (optional but it sure does make it taste like cake!)
- 1/2 cup smooth almond or sunflower seed butter
- 1/2 cup honey or agave syrup
- beet or [url] goji powder βhttp://www.amazon.com/gp/product/B0037RMHSG/ref=as_li_tl?ie=UTF8&camp=1789&creative=9325&creativeASIN=B0037RMHSG&linkCode=as2&tag=cottcrun02-20&linkId=33K5J6UPX535GM67[/url] for natural red coloring (1-2 tbsp)
Instructions
- First, grind up your baking chocolate into shavings. You can use a blends or food processor. Make sure it’s not too ground up. You want chocolate shavings.
- Next, in large bowl, add in all your dry ingredients. Mix them all together.
- Add your almond butter and honey and mix with a spoon. Then add vanilla/butter. Add 1 tbsp beet powder or goji powder here if you want it red inside.
- Mix again and then use your hands to finish. Itβs easier using your hands to mix after a certain point.
- Roll dough into bite size balls. Mine turn out to be about 18 grams each. Place in freezer after. Makes anywhere between 28-29 balls.
- After they are frozen roll in 1 -2 tbsp additional cocoa powder and beet or goji powder.
- Freeze or keep in refrigerator to maintain freshness.
Notes
Vegan/dairy free baking chocolate – you can use Baker’s unsweetened chocolate or Enjoy LIfe chocolate chips (large morsels)
To find a pure butter extract, look here . Or you can use the imitation if it doesn’t bother you.

I have a great first red velvet cake memory. It was for my birthday, and I was expecting my typical chocolate cake, but my mom decided to surprise me and get me a true Southern treat of red velvet cake (I think I was like 8). Well, I was NOT impressed and carried on and on and then tried it, wasn’t so sure about and continued to be a brat. A few years later, I came back to red velvet cake, and I loved it.

I love Red Velvet Cake. When The Hubs and I started dating, we tried our hand at a cake and it turned out TERRIBLE!! Love that you shared this recipe too because we have an event focused on chocolate Monday. I love anything Red Velvet. I can’t wait to try these!!! But, I don’t keep honey or agave in the house. I have liquid stevia… any chance you can give me a substitution amount? And will this cause a denser batch of balls? I am trying to stay away from carbs. While this recipe doesn’t have a lot of net carbs I would like to see if I can make it less. Is that the same as xylitol syrup? If so, it’s a little thinner but can still work. You just might have to adjust the flour content a bit. Or the protein. Does that make sense?
