So I’ve been waiting WAY TOO LONG to post this recipe. In fact, I’m posting on a Thursday just to share. I rarely post on a Thursday. Heck, I rarely post on a Tuesday but I did this week. Call me crazy Cotter, eh?
Anyway, this recipe, yes.. A MUST MAKE for summer.
You see, as a Bliss Foodie Author, I get to work with lots of great companies. This company is no exception. Naked Juices! They have 2 new Power Up Garden flavors (Tomato Kick and Berry Veggie) and I was asked to create a recipe for their “Pin It To Win It” recipe contest. Voters will then be entered in the “Pin It To Win It! Win A Naked Juice Garden Gift Basket” sweepstakes.
I actually think this is a win/win for me. I get to make a fun recipe and try a new product, which I love! Then I get to share it. Even better! Yes, Corny Cotter is PUMPED!
I loved both drinks, both refreshing in a total different way. Savory vs. lightly sweet. The tomato kick would be perfect for a Bloody Mary (healthified).
Well, I just had to go with the Berry Veggie for my recipe. You’ll see why in a minute. Basil, fresh basil, from my parents garden. I had tons of it and wanted to use it with my farmer’s market lemons and Fig Balsamic Vinegar (another local purchase).
This combo popped in my head and then BAM, it was made.
Perfect topping for a summer salad. Fresh basil, lemon, and Berry Garden Naked Juice combine to make a lightly sweet and delicate dressing. Toss with spinach and feta and you’re all set!

Berry Basil Lemon Vinaigrette
· ½ bottle of Berry Garden Naked Juice
· ½ Lemon (juiced)
· ¼ cup extra virgin olive oil
· 3 fresh basil leaves
· 4 tbsp. balsamic vinegar or glaze
· Lemon pepper (¼ tsp)
Blend together in small blender. Store in glass jar in fridge for up to 5 days. Serves 3 [/print_this]
Needless to say, I’ve been using this dressing on everything lately. Even a side salad with a breakfast taco. Ha, works well for this Texas gal!

This sounds wonderful! I don’t know Naked juices (nothing that exists in Europe, to my knowing), but I imagine making such a salad dressing with blended frozen berries would work out nicely. 🙂

YUM!!!! This sounds fabulous. Who would have thought to use a bottle of Naked juice to make a dressing?! Not me. It’s brilliant. I have been using MANY fresh herbs lately; mint and basil most often. I can’t get enough these days.

well, i think they’d be too high in sugar and sodium for your preference (to drink straight), but not in salad dressing. YAY!

soo fun!! love the Berry one. I have a strong dislike to tomato juice of any and all kinds, so I can’t say I’d be testing that one out 😉 But the idea of dressing made with the juice is BRILLIANT! you are so talented with this stuff! love your creativity and cotter creations!

Hmm, like the creative way to use juice without, well, using it as juice! Now that my herb garden’s in full swing, yup, fresh herbs are going into everything. More reasons to love summer!

hmmm. i’d made bread! like grainfree bread with herbs and parsley. Spread butter or cream cheese on it and your golden!

Ooh I love the idea of using a berry juice in a salad dressing! I am always trying to use natural herbs and juices (like lemon) on my salads but this would totally jazz it up and be perfect for summer 🙂
