1.—-> Toasted GF Sandiwch Roll, with the works:
For this one, I combine dill mustard with avocado and egg yolk. Mash or blend together and use it as a spread for sandwiches. I added veggie cheese, lettuce, and cabbage slaw on this tasty sandwich.
2:——–> Baked GF Tortilla with Avocado Ricotta and Balsamic Glaze
For this one, I just bake an Udis GF tortilla in the oven, about 3 minutes each side on 400F. It actually turns out to look more like a pita, which i think is even better.
Then I mix together ricotta cheese, avocado, red pepper, and a little bit of spicy hummus. Spread it on the tortilla, add balsamic glaze and your choice of veggies on top. This is a great snack or double it for a light lunch.

Both of those recipes sound SO good! I am a huge lover of avocado! My favorite way to eat it is to mash it up and smear it on toast with salsa and nutritional yeast. This is one of my go-to breakfast :).
where did you find the Udi’s tortillas?
they should be at HEB, sprouts, or whole foods. Or natural grocer!
Avocados complete me. The only “unique” way I have used them before would be in desserts. Chocolate pudding with avocado!

I loveee avocado! Mashed and mixed with cottage cheese and a sprinkle of salt + pepper + parm cheese on top of a pita or rice cakes, YUM 😀

I am not a fan of avocados, I’ve tried, but it’s the texture I think more than the flavor. But, I’m enjoying seeing a few different ways to use them that I might actually try and like perhaps!

I’m that girl…the only girl that hates avocado. Why? I want to like it! Tony is always shocked that I just can’t seem to find a way to like it since I’m a veggie LOVER. Avocados are my fav food right now. But, I don’t really make anything with it – I think mostly b/c I love it plain (with a touch of Lowry’s Season Salt) – just give me that with a big spoon and I am one happy girl =)
The baked tortilla recipe looks really good – I prefer lighter meals that I can eat every 1-2 hours these days =)

I LOVE avocado!! But you know what? My kids are allergic – of all things!! I think that I ate too many while I was pregnant and breastfeeding. ha! But I do sneak some into the house sometimes. I can’t resist!

Yeah, there’s no possible way I could ever keep up with Marc, even for two minutes LOL. Although when we were on our way home from Arizona and sprinting to the departure gate I got a taste of his speed (our names were called twice, we were so close to having the door shut on us!)… dude is crazy fast just like James, I was dying by the time we got there!

I have never been a huge fan of avocado, but I wish I was because of all the health benefits. It sure is the little things, and making salads pretty is definitely something I appreciate haha! 🙂

The combo of avocado and hummus is one of my faves. I like your idea of mixing the avocado with ricotta though–never tried it and it would be great on a rice cake or pita.

I love the combination of avocado and hummus, although I’ve never thought of combining it with mustard. Sounds kind of genius. Throwing avocado into smoothies is my thing… it makes them so wonderfully rich and creamy.

Although avocado is so versatile and tastes good on pretty much anything, I never quite know what to do with and end up eating it plain with a spoon over the sink ;-). So thank your for the avocado inspiration, it was much needed!

yes, avocado and hummus are my go to mixture for salad topping!! Right now I’ve been tossing the bagged coleslaw mix in the microwave to steam then topping with daiya cheese, avocado, salsa and chicken….seriously it’s so ugly, but I love it 🙂
