Ingredients

- 1 cup Mila (chia flour) or Flaxseed meal
- 4 eggs (separated)
- 1/3 cup coconut milk or kefir
- 2 tbsp coconut butter or other butter/oil
- 1 1/2 cup almond meal (I just grounded up my own almond meal)
- 1/3 to 1/2 cup shredded veggies (like zucchini, carrots, cauliflower, etc)
- 1 tbsp dried herbs
- 1/2 tbsp caraway seed (optional)
- 1 tsp orange peel (optional)
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tsp baking powder
- few drops of stevia or honey if you want it sweeter
Instructions
- place all your dry ingredients in a bowl, mix well. Set you egg yolks in one bowl and your egg white in another. Whip your egg whites until you get peaks. Fold your eggs into the dry mixture and then your egg white, mix well. Add in your creamer or kefir for extra moisture. Mix and then mash batter (it will be thick) into a greased bread pan. Bake at 375F for 55 minutes or so.
- Serve with butter, cream cheese, etc. DELISH!
