Now onto today. Yes, Marvelous today! Monday! Thank you Katie for making me smile, as always.
We spend a good 75% of weekends working. James is usually training, training others, coaching, etc. (Side note: He had a good weekend of training, and pain free. Hooray!) I spend most of the time in the kitchen with Healthy Bites, filling orders for Monday shipment, as well as maybe teaching classes and/or other random work. When we’re done with that, we scramble to get outside with the pup for some “family” time. Yes, we chose to be self employed so obviously we gotta make the most of it. Ya know?
But today is different, well for me at least. It’s the start of a slow and savor week. You see, I am taking the next 5 days off from really working. I finished my pre-thanksgiving orders. I have one other class to teach at the gym and that’s it.
No I will not get paid, but I will get a little extra rest which helps me in the long run. I will focus on being a domesticator and you know what? I love it. Time to be thankful for what you have at this moment. And since we’re talking about being a domesticator (aka housewife), let’s talk food.
Confession, I tried to be all fancy and make these grain free coconut pancakes this morning. Well, they crumbled. Still tasty, but they crumbled. So instead of worrying about perfecting the recipe, I decided to bust out an old recipe with the ingredients I had left. Plus I still needed to transfer this recipe over from my old blog, so perfect excuse. These bad boys are perfectly suitable for breakfast as well. Just add coffee and/or milk.
Sugar and Spice Arrowroot Cookies
PrintGF Sugar and Spice Arrowroot Cookies
Ingredients
- ¼ cup applesauce
- ¼ cup raw sugar (you can use brown sugar too)
- stevia –1 teaspoon (add 2 if you want them extra sweet)
- banana
- 1 egg (or flax egg is vegan)
- ½ teaspoon vanilla extract
- ½ cup ARROWROOT flour
- 1 cup all purpose GF flour (or flour of choice)
- 3 tbsp coconut flour- I also used a lot on my hands and on parchment paper to roll the dough into balls then press with fork.
- ½ teaspoon baking powder
- ¼ teaspoon salt
- cinnamon and ground cloves (about ½ teaspoon of each)
- powdered sugar (optional)
Instructions
- Mix applesauce, sugar, and banana together in bowl. Beat in egg and vanilla.
- Stir remaining ingredients together and add. Mix well or use beater on low. Add a little more applesauce if it get to be too dry.
- Flour your counter and transfer dough. Make sure to cover your hands in flour as well in order to keep it from getting to gooey.
- Roll into 1-2 inch balls. Place them on a greased baking sheet and press down with fork.
- Bake in 350 degree F (175 degrees C) oven until golden, about 8 to 10 minutes. Allow a bit more baking time if rolled thicker.
- Once out of the oven and cooled. Sprinkle with powdered sugar and cinnamon. This of course is optional but it’s WORTH IT!
See, perfectly marvelous for breakfast. Enjoy this week and then let it carry over to the next, and so on and so on.

my biggest kitchen disaster of recent times was forgetting the plastics I kept in my oven (as storage) when I turned it on to preheat. They melted, stank out my apartment, smoked so badly that the fire alarms couldn’t be made to shut up and the fire brigade had to attend. I was sooo embarrassed and I had no way of cooking my chicken that night.

I love that you’re taking the rest of the week off to be a domesticator ;). I’m in the process of moving and determined to use up as much of the food items I have beforehand so they don’t end up going to waste. Trying to put together random ingredients just to use them up has made for a lot of kitchen fails lately. lol. But, it’s also led to a few creative, out-of-the box successes. 🙂 I hope you have a very happy and restful Thanksgiving!

Last kitchen fail was definitely the butternut squash soup I tried to recreate a few weekends ago. I forgot to remove the cinnamon stick before I put the immersion blender in. oops.

Oh, and I have fails ALL THE TIME. I just had one last week when I was attempting peanut butter cookies with a new flour. They came out way too cakey and crumbly, so I crumbled them in a bowl and mixed them with more peanut butter. Then I rolled them into bite-sized balls and I froze them. They are the perfect pop in your mouth cookie bites. I wish I’d have covered them in chocolate too. 😉

Yummm!!! Those look SO good! I actually just started having AJ help me bake…he seemed to get the concept and was helpful so I’m anxious to start making some things (other than chocolate chip cookies or cupcakes).

so excited to hear that training is going well for James. I’m back riding the injury train and so I’ve fallen off the training bandwagon…not ideal and frustrating. I’m just praying it’s not a fracture. I ate some cookies today but they weren’t homemade! I loved that recipe—I used them as a snack for rides last time I made them!!

yeah..haven’ been able to run since I raced two weeks ago 🙁 been 3 weeks now of pain/swelling in ankle, no idea how I did it either. Not sure what next step is, rule out stress fracture I guess. Frustrated.
Austin…don’t worry I’ve got my eye on some races there for 2013. Hopefully they don’t fill up before I can afford them! haha

The last kitchen fail I had was on our anniversary! I tried to make a vegan pasta dish but was too impatient and ruined it! It was pretty funny. Cookies definitely didn’t come out of that fail!

YUM!! I have failed way too many times lately… I’ve lost my baking mojo so I’ve been making raw treats! I’m very reluctant to join a vegan/gluten free Christmas cookie exchange because of it… 6-7 dozen cookies?? Eeek! I also have failed miserably with pancakes. My poor husband has had to eat some not so great ones, hopefully I can find a good no-fail recipe soon!

Coconut flour pancakes are always tricky. I think you just have to cook them slowly at a low temp and not mess with them. Something I’m terrible at.
