Happy almost Cinco De Mayo!! Pretty sure it’s one of my husband’s favorite days of the year. Any excuse for him to eat more tacos! Don’t worry, I’ll share the recipe soon.

Actually today’s recipe is still Cinco de Mayo themed.

I had a hard time deciding whether or not to make May’s Flavor Mexican or go for the orange and dark chocolate chip.

But I figured we needed to SPICE THINGS up a bit, yes? A little strange but good combo here too!

No Bake Mexican Chocolate Protein Bites

Description

No Bake Nutty Mexican Chocolate Protein Bites


Ingredients

Scale
  • 1/4 cup crushed almond meal or coconut flour for nut free version
  • 1/3 cup chopped walnuts (can’t have nuts? try banana chips)
  • 1/3–1/2 cup nut butter ( PB, almond, or sunflower seed is awesome for this recipe of course)
  • 6–8 tbsp Chocolate Protein Powder (I use
  • Growing Naturals
  • Brown Rice or Pea)
  • 3– 4 tbsp unsweetened cocoa powder
  • 1 tsp cayenne or chili pepper (more if you like spicy)
  • 2–3 tsp cinnamon
  • 1/4 to 1/3 cup raw honey, agave, or maple syrup.
  • Optional-
  • mexican hot chocolate powder (for rolling them in after you freeze)
  • Optional
  • – handful of dark chocolate chips

Instructions

  1. Chop nuts in food processor, or you can buy them already chopped. Transfer into a large bowl and add in all the remaining ingredients with the nut butter and  honey/maple syrup being the last . Mix well ( I use my hands) and roll into bite size balls. Coat bites with extra cocoa powder/cinnamon. I usually coat them after they have set in freezer for at least 5-10 minutes. Then return to freezer after.
  2. Makes anywhere between 18-22 balls. Just depends how big or small you roll them. Mine are usually around 18grams
  3. Freeze or keep in refrigerator to maintain freshness.
  • Prep Time: 10 min
  • Cook Time: 1 min

    i remember bringing JC to a chain mexican place near where i live and he was not impressed. i wouldnt be either given you guys are closer to the border than boston 😉 i love all mexican, fish tacos, ceviche – mmm mmm. margaritas!

    Yum these look so so good! I love that they don’t have a base of dates, my stomach really can’t handle more than one date at a time so usually I can’t make snack balls as most ones I’ve seen use dates. I’m going to be making these ASAP!

    This is going to sound stupid, but I’m not sure what a mexican dish is that I like. I suppose salsa but that’s not a dish that’s a condiment. I haven’t played around with the Mexican cuisine to really give a proper answer.

    Yum! These sound great! I honestly didn’t even realize it’s Cinco de Mayo soon! I’ve been so wrapped up in planning our vacation and house stuff… My favorite Mexican would be a toss up between Guacamole, Ceviche or shrimp cocktail.

    I don’t think I can pick a favorite! It really depends on where I am. Fajitas are, of course, classic, because you can build your own and make like 4 different versions in the same meal. But there was a great Mexican restaurant that had this pineapple pork taco that was fantastic. But really, it’s all about the guacamole, right? 😉

    Um, favorite Mexican food? That’s easy…burritos. There are probably about 20 recipes on my blog for various types. Though looking at picture of the tacos, that sounds pretty good too (with tempeh, of course 🙂 ).

    Loving the new site Lindsay, it looks great 🙂 i have never celebrated cinco de mayo (I just had to look that up…I never realized it was spelt the same as mayo…as in the gloopy white stuff haha). I hope to celebrate it in the future, could be fun….and my other half LOVEs tacos and enchiladas!
