Happy almost Cinco De Mayo!! Pretty sure it’s one of my husband’s favorite days of the year. Any excuse for him to eat more tacos! Don’t worry, I’ll share the recipe soon.
Actually today’s recipe is still Cinco de Mayo themed.
I had a hard time deciding whether or not to make May’s Flavor Mexican or go for the orange and dark chocolate chip.
But I figured we needed to SPICE THINGS up a bit, yes? A little strange but good combo here too!
PrintNo Bake Mexican Chocolate Protein Bites
- Total Time: 11 minutes
- Yield: 22 1x
Description
No Bake Nutty Mexican Chocolate Protein Bites
Ingredients
- ¼ cup crushed almond meal or coconut flour for nut free version
- ⅓ cup chopped walnuts (can’t have nuts? try banana chips)
- ⅓–½ cup nut butter ( PB, almond, or sunflower seed is awesome for this recipe of course)
- 6–8 tablespoon Chocolate Protein Powder (I use
- Growing Naturals
- Brown Rice or Pea)
- 3– 4 tablespoon unsweetened cocoa powder
- 1 tsp cayenne or chili pepper (more if you like spicy)
- 2–3 teaspoon cinnamon
- ¼ to ⅓ cup raw honey, agave, or maple syrup.
- Optional-
- mexican hot chocolate powder (for rolling them in after you freeze)
- Optional
- – handful of dark chocolate chips
Instructions
- Chop nuts in food processor, or you can buy them already chopped. Transfer into a large bowl and add in all the remaining ingredients with the nut butter and honey/maple syrup being the last . Mix well ( I use my hands) and roll into bite size balls. Coat bites with extra cocoa powder/cinnamon. I usually coat them after they have set in freezer for at least 5-10 minutes. Then return to freezer after.
- Makes anywhere between 18-22 balls. Just depends how big or small you roll them. Mine are usually around 18grams
- Freeze or keep in refrigerator to maintain freshness.
- Prep Time: 10 min
- Cook Time: 1 min

And Big thanks to JEN for my new header.
Delicious protein bites and killer flavour too (Mexican chocolate? YUM.) I often make bites like these to snack on during the week so this recipe is one I will be making. Thanks.
oh yea! YOu’d love this combo. ALthough I cringe at this old post and the pictures, the recipe is still awesome. haha. But I bet you could make a killer cake with this combo, yes?
Tamales–hands down!
My favorite Mexican dish is homemade chicken nachos!
Nice idea! Love spice. I owe you an email with a couple of recipe ideas (I have no clue how much of anything I used, so they’re all yours to re-do if you want!).
oh i can’t wait!! gimme me your balls!
i remember bringing JC to a chain mexican place near where i live and he was not impressed. i wouldnt be either given you guys are closer to the border than boston 😉 i love all mexican, fish tacos, ceviche – mmm mmm. margaritas!
Horchata and carne asada burritos from my local San Diego hole in the wall.
Fish tacos are my absolutely favorite. Especially when eaten at the beach with a salty margarita. Mmmmm!
Favorite Mexican dish, guacamole and bean burritos!
Yum these look so so good! I love that they don’t have a base of dates, my stomach really can’t handle more than one date at a time so usually I can’t make snack balls as most ones I’ve seen use dates. I’m going to be making these ASAP!
This is going to sound stupid, but I’m not sure what a mexican dish is that I like. I suppose salsa but that’s not a dish that’s a condiment. I haven’t played around with the Mexican cuisine to really give a proper answer.
I love all Mexican food. If I had to pick one dish, it would definitely be fajitas. I think I’m actually going to have to have them for dinner tonight after reading this post 🙂
Pinning this recipe for later! It looks great 🙂
My favorite mexican dish is hands down, tacos!
Fajitas – no doubt about that. And the margaritas go down nice too 🙂
So tough- probably fajitas! Or any taco really
Do margaritas count as a dish? If not tamales are a pretty close second! This sounds like an awesome flavor and I’m excited to whip some up later this month.
you better believe they count!!
Fish tacos!
Fish tacos!
I want to win so bad! I love your giveaways and could LIVE on your Healthy Bites alone! I love guacamole and GF nachos. Yum
As if we need a reason to eat more tacos. The kiwi is a smart man.
Love your bites.
My favorite Mexican dish is crockpot salsa chicken with homemade guacamole – that’s what we had for dinner last night actually!
I love enchiladas! Especially cheese which have to be horrible for you 😉
I am not entering, but these sound so tasty! I need a new food processor asap so I can attempt making some healthy bite goodness.
feel free to enter for the ebook jess! wish i was giving away a food processor now! haha
Yum! These sound great! I honestly didn’t even realize it’s Cinco de Mayo soon! I’ve been so wrapped up in planning our vacation and house stuff… My favorite Mexican would be a toss up between Guacamole, Ceviche or shrimp cocktail.
Oh my gosh I’m gonna need to make these bites soon!! Favorite Mexican dish has to be guacamole.. does that count? 😉
My favorite would probably be loaded nachos!
I don’t think I can pick a favorite! It really depends on where I am. Fajitas are, of course, classic, because you can build your own and make like 4 different versions in the same meal. But there was a great Mexican restaurant that had this pineapple pork taco that was fantastic. But really, it’s all about the guacamole, right? 😉
Favorite Mexican dish? Um… everything?! I adore margaritas and fish tacos… love chiles rellenos… pretty much anything!
I love the new header! My favourite Mexican is grilled black bean burritos! We’ve always loved Mexican, but after coming home from California we took Mexican cooking to the next level 🙂
Favourite Mexican dish has to be taco salad with extra salas and guacamole! !
Oh geez, that’s hard! But really good authentic fish tacos!!
AND can I tell you that I love that you included nut-free variations in your recipe???!?! xox
Huevos Rancheros is my fav mexican dish. And LOVE your new look!
Chips and salsa/queso!!
I’d love to win. I think my fave mexican dish would have to be veggie quesadillas!
Um, favorite Mexican food? That’s easy…burritos. There are probably about 20 recipes on my blog for various types. Though looking at picture of the tacos, that sounds pretty good too (with tempeh, of course 🙂 ).
Man, those Mexican chocolate bites sound sooo good my mouth is watering!
I am a sucker for all types of Mexcian food!
Favorite Mexican food is, hands down, guacamole. With a spoon. No chips necessary 🙂
Does my own thrown-together-non-authentic tortilla casserole count as Mexican? If so then that. If not a burrito bowl or anything covered in salsa. And healthy bites with cayenne pepper [one of my most-used spices]?! Strange but definitely good idea.
fajitas with extra GUAC!
I love all mexican!
Favorite Mexican dish may just be one of the most difficult questions I’ve ever been asked! 😉 If it came down to it, I’d probably choose enchiladas.
enchiladas!
And I thought those bites had some sort of berry in them! And I learned something else good today – I learned you sell your bites…something to remember if I don’t win! Thanks for hosting this AMAZE-BALLS/BITES giveaway Lindsay!
i am too lazy to make balls from your book lol i just need you to move here and make em for me 24/7
i can do that, especially when it’s a 100F here and i need to escape to the mountains. Balls for a free bed? p.s. I still owe you some, DOH!
CAn I sat margaritas!!!! 🙂 Guac too… 🙂
I love taco salads the most but there is also a great taco place nearby too
I love that these Healthy Bites are totally perfect for Cinco de Mayo! 🙂

my favorite mexican dishes are tacos and enchiladas… it’s hard to choose just one 😉
Beautiful new header!! I love it! I love fish tacos, but my favorite as of late has been my Cinco-de-Layer Dip!
VERY favorite Mexican dish is guacamole.
I don’t know if guacamole counts as a Mexican “dish” but I can definitely eat my body weight’s worth 🙂
Otherwise I love taco salads. Crunchy (gluten free) corn tacos for me! <3
Favorite Mexican staple? Salsa fresca!!!
Favorite Mexican Food?? Nachos with Giac and Chicken/CHeese Quesadillas. And Margaritas. LOL. No surprise I needed to include some alcohol 🙂
ah, these look so good. i love tacos, but chips, salsa and guacamole win first place in my heart.
Favorite Mexican dish would have to be enchiladas!
Burrito bowls have to be my favorite Mexican dish! I love putting everything I love in one big bowl and mixing it all together! It’s not complete without avocado though!
Loving the new site Lindsay, it looks great 🙂 i have never celebrated cinco de mayo (I just had to look that up…I never realized it was spelt the same as mayo…as in the gloopy white stuff haha). I hope to celebrate it in the future, could be fun….and my other half LOVEs tacos and enchiladas!

CHIPOTLE!!! Ugh. I die.
I love tacos and guac! So delicious!
My favorite Mexican dish? That is too difficult to answer! I love all of them!
I love mexican chocolate! Yum and great idea!
Yum! Your bites look awesome!
Do nachos count LOL. probably not. Every time I see tacos photographed on blogs I suddenly want one. Mine never look like that though. I over-stuff and they fall to pieces!
i could eat salsa & guacamole alllll day 🙂
ceviche! and guacamole!
I love anything with mole sauce!
Guacamole slathered on anything!
I am the whitest of white girls, so any Mexican food I have is not very spicy! And tequila messes with my stomach, so I don’t even have margaritas either. LAME!
Spicy balls! I knew it!!! 😉
Actually… I might go make these right now…
Guacamole and chips, and healthy bites!
My favorite mexican dish is great mole! I have a friend who makes a different version every time we get together–amazing!
Game face on! I’m so winning these
I looove mexican food – they do these burritos near my old house for a fiver and they are massive and so so tasty!
Chili in those healthy bites sound delish – I love chocolate chili combo!
Yum, yum, yummmmmm! Strange but good for sure. I actually forget about Cinco de Mayo every year… Oops?
Nachos, hello!
Cinco de Mayo dessert! I have everything on hand to make them…bonus! I share your husbands favorite day of the year.
I love fajitas…and healthy bites 😉
I was going to bust out the healthy bites cookbook this weekend. They taste SO good with a cup of coffee! I am curious about the mexican ones…John would like them.
Cinco De Mayo is our anniversary! I’d cook a Mexican meal, BUT hubby wants to do dinner out 😉
