Gluten Free Valentine’s Day Recipe Roundup

by Lindsay Cotter · 02/03/2014

Did I really just use the word lovin’ in a title? Yes, yes I did. But hey, it is Valentines month, so it’s justifiable. Or so I think. But I have to confess, the kiwi and I aren’t really that’s romantic. I know I know. Corny Cotter is not romantic. I think we show our love by spending time with each other hanging out and of course food. Food is always love in our house.

pumpkin choc. cake

So here are a few of my favorite Valentine’s Day gluten-free recipes. An oysters recipe is in there…oh, I’m so cliche.

*This is a sponsored opportunity with Foodie.com

And to keep the theme of love on this marvelous Monday, we’ll go with a few other things I’m loving. Or how I phrase… “loving this!”

thehealthydiva

I’m loving actually having time to get a haircut because now it’s less work style. And also helps to have a nuttzo trucker hat after I workout to cover up the frizz.

photo 5

I’m loving sizzlefish! They are amazing company and even more amazing sis delivered right to your door. Our go to right now is trout with collard greens lemon garlic and red pepper.

I’m loving having Mila Chia back in my pantry. It’s basically a Chia flour. So good to bake with too. Can’t wait to make my Grain free faux rye bread again this week. Will probably use a different variation. So stay tuned for another recipe that’s grain free and omega rich.

Processed with VSCOcam with f2 preset

I’m loving running trails without a Garmin, just me and my Mizunos. Although that probably has to change soon since I’ll be running a 200 mile relay is in two months. Thanks to our Team Captain Taylor for reminding me. I better start actually training now. Ha.

trail run no time

And of course I’m loving all these flavors for February’s healthy bites giveaway and recipe. Now I just need to finalize one. What do you want to see? Dark chocolate cherry Chia, cherry vanilla, cashew cocoa GF pretzel, or raspberry chocolate chip?

bite flavors feb.

Lastly, I’m loving this. It’s Corny Cotter at its finest.

okay, you know I have to end with this question.

What’s your “loving this” statement this week?

Cashew Cocoa! I admit, Nick and I aren’t that into the Valentine’s day thing either. Last year he sent me roses and I yelled at him because they overcharged and the flowers were wilted. I love that he wanted to send me something but I don’t like succumbing to the idea that we have to do the traditional things. I love cooking and having a nice meal at home (I mean I love that any day of the year)

LOVE your hair! Super cute! I finally (after almost a freaking year) got my haircut last week, alas the stylist was ‘afraid’ to cut it and after begging 3 times to take more off, I gave up. It’s better ‘healthier’ overall but my hair grows like a weed and I wanted MORE! Sigh.
