Well it happened. I totally forgot to post the flavor Friday recipe and giveaway for March. I blame February, the short month. I guess I couldn’t really time it right though anyway. So instead, we’re going to do a little Healthy Bites flavor recipe and giveaway on this Marvelous Monday. I’m pretty sure you won’t mind, right?
Okay, now about this flavor. It’s March. It’s St. Patrick’s Day month. And I had a very hard time deciding between two flavors. The Irish cream with chocolate or the vanilla latte. So I figured we might as well just combine them both to create an Irish delight bite with chocolate and vanilla options. How does that sound?
You can make this with coffee added or without. Your choice! And as you can see from the recipe below, I like to use Capella drops or Irish Cream extract. I found the extract at whole foods but it’s also on amazon. The capella drops are sugar free, all-natural, and add The perfect flavor punch.
If you don’t have Capella drops or extracts, feel free to use an Irish cream ground coffee flavor or even the real deal if you want.

Ingredients:
- ¼ cup coffee grounds (regular or Irish cream flavor)
- 2—4 tablespoon crushed coffee beans (I crush in bag. just adds texture but it’s optional)
- ¼ cup almond meal
- ¼ cup coconut flour –> or you can just use ½ cup total of coconut flour or almond meal if you don’t have both.
- ⅓-1/2 cup nut butter or sunflower seed butter
- 6-8 tablespoon Protein Powder (chocolate or vanilla)
- ¼ to ⅓ cup raw honey or maple syrup.
- ½ teaspoon Irish Cream Extract.
- ½ teaspoon Vanilla extract or NuNaturals Stevia.
Optional- . I also like to use NuNaturals Cocoa Bean extract when I make the chocolate version. And coat with cocoa powder.
Directions: In large bowl, add in all the your dry ingredients. Then mix in your nut butter, extracts, and last the honey. Mix well ( I use my hands) and roll into bite size balls. Coat bites with extra protein powder (vanilla) or cooca powder for the chocolate. If you have any crushed coffee beans left, you can also roll the bites in some of those. I usually coat them after they have set in freezer for at least 5-10 minutes. Then return to freezer after. Makes about 20 balls. Feel free to roll into larger bites, or smaller to make more. Freeze or keep in refrigerator to maintain freshness. [/print_this]

For St. Paddy’s (NOT PATTY’S! SHEESH) I love real Irish food. Colcannon, Bangers and Mash, Dublin coddle, beef and Guinness stew (with Irish brown bread)……..

Paddy is derived from the Irish, Pádraig: the source of those mysterious, emerald double-Ds.
Patty is the diminutive of Patricia, or a burger, and just not something you call a fella.
My fave St. Paddy’s Day recipie is an Irish potato and leek soup I found in a cookbook that Mom bought in Ireland on vacation. Love some good corned beef and cabbage too!
Does the Shamrock shake from McD’s count? Kidding of course. I really don’t have a favorite recipe but my mom used to make corned beef that I loved back then.

I would have to stay pretty traditional on this one and say Corned Beef, Cabbage and Potatoes…and use the leftovers to make a nice big Reuben (with GF bread, of course!)
Despite both of my parents being half Irish and hosting a party almost every St. Patrick’s Day that I was in elementary school, I don’t remember ever eating any specific St. Patrick’s Day food… I do like Irish Soda Bread though 🙂

My dad used to make the best Irish soda bread and maybe it’s weird but I always loved the steamed/ boiled cabbage we would have on St. Patrick’s day. Or the green shamrock shaped pancakes we would make for breakfast.

Fingers crossed that I win! Irish Creme is my favorite!! My husband is full blown Irish–son of immigrants on both sides (St Pat’s day is a big deal) so we do corn beef and cabbage, but I also make a yummy irish soda bread (which will have to be modified this year)

I love my sweet potato turkeyherd’s pie! It’s a riff on the original, of course, but one that doesn’t fight me like the typical. I also love braised cabbage.

I’ve never heard of cappella drops, and I’m intrigued! As always, these look delicious. And my favorite St. Patrick’s Day recipe is to try to make everything I eat green! My mom used to add green food coloring to EVERYTHING (applesauce, milk, mashed potatoes), but this year I’m going to try to do it all natural … I’m thinking spinach blended eggs, some kind of green mashed potatoes/ cauliflower, and of course plenty of green veggies throughout the day :).
It USED to be corned beef & cabbage, but with all my digestive issues, I may just have to create a “safe for me” Shamrock Smoothie!

Soooooooo, as you know, St. Patty's day isn't the biggest celebration in (South-Central) Texas. MEANWHILE, IN CHICAGO…! Since this is my first St. Patrick's Day as a Chicagoan, I might have to get in on the celebration noms. 😀
Thats cool! I have never heard of irish cream extract, but I guess it works! Not the biggest coffee fan, but some desserts with coffee are great, and I am sure this would be one of them.

I literally geeked out for a second when I saw you were hosting a giveaway – esp. since I don’t have all the ingredients to make these delight healthy bites. To answer your question, is it crazy I don’t have a favorite St. Patty’s Day food? However, I do enjoy a few drinks… which obv. won’t be happening this year. Darn you Kuwait for making it illegal. Oh well. Guess it’s a good thing I’m not a big drinker anyways :).
Corned beef and cabbage!!! A tradition is my Irish Catholic home as a child. You were always welcome at the Sullivan home on Saint Patrick’s Day for corned beef, cabbage and Irish whiskey!!
