Chocolate Chips Peanut Butter Cups
“I’ll be happy when I can get more blog exposure.”
“I’ll be happy when I can be at a good weight.”
“I’ll be happy when we move and can start over.”
“I’ll be happy when my spouse does this or that.”
“I’ll be happy when …..”
Raise your hand if these thoughts have scurried through your mind before.
Guilty. Yes. And all these thoughts add nothing to our lives. No value.
BUT…
I think, at times, they are pretty hard to escape. It’s almost second nature to us HUMANS. Good there is something we can do to SHIFT those thoughts.
It’s called thankfulness. You see, I’ve been talking about thankfulness. It can really shift your perspective when looking at life. Glass half full versus half empty, ya know?
It wasn’t until I read this devotional that I realized that these infectious thoughts are lies and can be CURED with PRAISE!
Yes, PRAISE GOD for that.
So today, I want to do a praising, a little curing, a little THANKING!
I praise GOD for the ability to smile, to laugh, to hug, and to cry. All good healthy emotions!
I praise GOD for fun. The ability not to take myself to seriously and to be a goober when needed.
I Praise GOD for his provision. No matter what, He’s always watching over us. Seriously, why do I ever doubt HIS plans, HIS path?
I Praise God for Flavor, because without it, we wouldn’t be able to savor the little things. Like these.
PrintChocolate Peanut Butter Cups
- Total Time: 25 minutes
- Yield: 13 1x
- Diet: Gluten Free
Ingredients
- 1 cup sugar (I used NuNaturals baking sugar)
- 1 cup Organic peanut butter
- 2 tbsp coconut flour
- 1 egg
- ¼ cup dark Chips and optional shredded coconut
- Dark Chocolate Peanut Butter or chocolate hazelnut spread (for topping)
Instructions
- Preheat oven to 375°F. Lightly grease muffin cups or mini muffin cups and set aside. In a medium bowl, stir together the 1 cup sugar, peanut butter,coconut flour, chocolate chips/coconut, and egg.
- Roll peanut butter and chocolate mixture into balls; Press and flatten the PB balls into each muffin cup using your hands. If it’s a little dry, add in some egg whites. Should make about 12-15 large cups or 18-20 mini cups. Then take about ¼ cup dark chocolate pb and place it in ziploc bag.
- Cut the corner and use it as a frosting decorator tube. . Then squeeze the Dark Chocolate PB from the tube/bag into your muffin cups. 2. Bake about 15 minutes or until edges are set and bottoms and edges are lightly browned
- You can also use with sunflower seed butter, almond butter, etc.

I have so much to be thankful for, but for starters I’m thankful that my beautiful son turned 10 yesterday. And I’m thankful that despite battling MS, God has blessed me with not having another relapse this year and I have been able to continue running.

Perspective changes everything – for better or worse! I’ve learned to think “I’m happy NOW”. There doesn’t always have to be a specific reason, other than things are great and your life will only go in the direction you steer it.
I’m praising a great run experience this morning with some kick-butt peeps in DC & the taper I’m enjoying that will lead me over another finish line 🙂

Oh, how I know those thoughts Lindsay! I am having them big time right now because of our house situation. I am trying to hear God’s voice in this and other “if only” areas but mine is screaming over His. Now if I could only figure out how to give Him these burdens and let Him take care of them. I’ll have to work a bit harder on that, thanks for the encouragement!

I have definitely gotten to the point where I am thankful for the here and now! I would be happy if life stayed just like this forever! It’s easy to want more, and while I want to progress, I see that the now is good and if things never change, I would be really happy with that.
i can see that in your writing and your posts. It makes me smile because i know what you’ve gone through.
I just read this devotional & your post & I love it & needed it today! I have been doing alot of “I’d be happy if…” and I know it has done no good for me. So today I’m praising that I have wonderful family & friends that love & care for me because w/out them & the love of God I’d be nothing. I’m praising that God has allowed me to go to Grad School so that I can help those in need. I’m praising that I have a job even though at times it stresses me out ;-). I’m praising that I have food, clothing & shelter because I know so many of God’s children don’t and with the holidays coming around it makes me said. It’s so important to be happy with now – especially because if we’re never satisfied, we’ll always be wanting more, even if we get what we want. Content doesn’t mean a lack of ambition, just a reality of happiness.

I think it’s so important to “live in the moment” and be mindful of where we are in the PRESENT…. it’s so easy to get bogged down with thoughts of ‘when THIS or THAT happens in the future’ that we forget how glorious RIGHT NOW is.

it seems to me that the message of continuous gratitude…of gratitude in all times and first and foremost is like one of if not THE most predominant message in The Word and all the ways He communicates with us through messengers (devotionals, sermons…BLOGGERS..)

I praise PERSPECTIVE. having been given a few challenging aspects to life over the years, what comes with them is perspective. and perspective makes me thankful each day for everything I have! a diagnosis that MAKES me take care of my health, a recurring injury that MAKES me realize how much I love to run (even though I cannot always…), a community and friendships that bring richness to my life, so I don’t dwell on the small stuff.

This post reminds me of a bible study that I did a few years back by Nancy Leigh DeMoss, “Lies Women Believe and the Truth That Sets Them Free. I used to be THE QUEEN of saying I will be happy or satisfied ‘when’. It took a lot of self reflection and prayer to realize what joy this lie I was telling myself was robbing me of. The beauty of it is once you deliberately start giving God the glory and filling your heart with praise and thanks, WOW – it truly is a life changer! Thanks for this wonderful reminder!
So today I am giving praise for being the healthiest version of me that I have been in a while, for having a community of smart, supportive women in my life, and for a caring family who keeps me grounded on what really matters.

I read something a looooong time ago, in a Dr. Laura book (she’s normally not my thing, BUT this one statement struck me) – about people looking for “stupid happiness”. The gist of it was, if you’re always sad about what you don’t have, and focused on what you think you need to make you happy, you never get to see what you DO have.

Oh yes, I’ve had such similar thoughts in my head. I know realize the importance of shifting the thoughts and sending those negative thoughts out into the universe and appreciate all I have in my life! I think by always saying I’ll be happy when, your not truly happy in the moment which means you won’t be when one little thing changes. You need to be happy with yourself in the moment to appreciate other positive things that happen in life! As always, loving this post!!

I used to get so caught up with the “i’ll be happy when’s”, and then I realized 5 years of my life had passed, and none of the “when’s” had happened yet, but I missed SOOOO many happy moments.
So I’m just happy NOW. Regardless of the other stuff. And when you’re happy, everything else just seems to fall into place.
i know the feeling. it’s like life passes you by and all of a sudden your older and you missed out. Never again! RIGHT NOW is a blessing!

ugh, if i had a dollar for every time i had a “i’ll be happy when…” thought i’d be a rich woman, which makes me kind of sad to think about. living a life of praise and thankfulness is not only better and what we’re called to do, but it’s so much more rewarding!

Raising my hand makes me feel like I’m in elementary school again, thinking I’ll be happy when the teacher calls on me so I can put my exhausted hand down 😉 I’m definitely guilty of trying to chase happiness, and I think one of the reasons we never find it that way is because happiness is in there and now, and if we’re constantly trying to find it in the future, we end up missing it completely.

i am praising the inner peace i am feeling right now. i am the happiest i’ve been in months! p.s. i did one of your workouts from a little while back. it had 4 circuits (lots of jump squats, lunges, mountain climbers etc) and you had a note that you could repeat 2x if we liked. girl, you are crazy fit haha. it took me 20mins to do all 4 circuit! i was huffing and puffing so i only made it through once and felt worked out! i am a week bit sore in the butt/leg region today so good job! i have it saved on my phone as a good workout when i’m traveling or short on time and want to get some HIIT in!
hehe, glad you liked the circuit. I usually say 2x through for 20 minute circuits because in an hour long class, we do it twice with a break in the middle. But once is totally enough when you go all out!

LOVE this! It really is so easy to get caught up and expect some things to fix all aspects of our life and make us “happy.” Would I like to have all my college debt paid off? Of course, but after having it paid, it won’t suddenly fix every other aspect that isn’t serving me and sometimes it’s hard to remember that.
i think there will always be debt, but that’s okay, we work towards something and we have a goal. Yes!

Sometimes they can be helpful to give us a push in a certain direction… recently for me it was to switch jobs and yes I AM happier in my new position. But I can see how those thoughts can get out of hand and make you lose the present.
