Well what’d ya know? I’m 3 for 3 this week. Meaning, I’ve written 3 posts in 3 days. Whoa, now that’s BOLD for me. Ha. But I’m trying. Trying to be BOLDER blogger. And that means sharing good content when inspiration hits, yes?
Today is no exception because it’s a GRAIN FREE Cotter Creation. Yes the Sherpa wife is back in the kitchen and the Kiwi Cotter is starting another training block. That means dense calories, good calories, quality calories.
You might have seen me post this GARLIC bread during his recovery weeks. It’s low sugar/carb and freakin delicious. But now we must switch gears a bit. Same grain free concept but I wanted to add in a wee bit more calories and nutrients. Hence this chia recipe. It’s perfect for a nourishing snacking or a fueling breakfast. Okay it’s just plain good ANYTIME!

¼ cup Chocolate or vanilla Protein powder
- ½ cup Mila Chia flour (or flaxmeal or just grind up chia seed very fine)
- ¼ cup coconut flour (can use peanut flour instead or almond meal)

3 eggs separated (save the yolk)

¾ cup egg whites (so about 6 egg whites combined with the eggs above)

½ teaspoon coconut extract

¼ teaspoon vanilla extract (optional)

2-3 tablespoon unsweetened cocoa powder
- 3 tablespoon coconut butter or I used chocolate MELT which is amazing–>blend of coconut/plant oils

Coconut oil or Spray
- dash of sea salt and baking soda
- Add Stevia drops if you want it sweeter (optional- I did not use any extra sugar)
- Optional Add-ins : unsweetened shredded coconut , dark chocolate chips, chocolate coated nuts/seeds, coffee.
Directions:
Combine all your egg whites (and the ones separated) into a large bowl. Beat for about 2 minutes or until fluffy.
Slowly fold in your protein, chia flour, and coconut flour and mix again with hand or mixer. Fold in your 2-3 of your remaining egg yolk and your coconut butter. Last, stir in your optional add-ins and extracts. Pour batter into an oiled (I used coconut spray) bread pan. Bake at 350F for 25  minutes or so. Remove let it cool before slicing or touching.
Notes: You can use any type of protein. If you are vegan, try using flax egg or chia egg. I haven’t tried that yet but it could work.  [/print_this]
Alrighty…. Kiwi is fueled and now I am fueled .. body, mind, and soul. I’d say that’s a good hump day.

What could you sub for protein powder that’s gluten-free? I don’t use it anymore.
any GF flour would work. Or peanut flour. Do you use any protein powder anymore?

Favorite fuel this week is Chocolate Nuttzo! I honestly have had a heaping tablespoon every morning on top of whatever is for breakfast. I’m almost at the bottom of my jar, so cannot wait to make OIAJ…HAHA!

yep. In fact, i’d just use protein powder and coconut flour for you or even buckwheat flour. Whatever is in your kitchen will work! it’s really the eggs that makes it stick,, ya know?

Question — Do you avoid grains? What is your nutri and personal perspective on them if any?
I mean — all grains. I obviously know you are gluten free (0:
i don’t avoid all grains but i definitely don’t eat a ton. I stick with rice and sweet potato and the occasional oats/gf bread but i find that my stomach does better without grains before a workout, hence the bread. I will more carbs at dinner and lunch. I actually think it’s better for the blood sugar too, just might personal experience. ya know?
The kiwi eats GF all day any day. stomach of steal. ha

Yuuuuuum! I am always looking for sweet treats that also pack in nutrition. They then help my training, and I can enjoy them…..if food isnt enjoyable….it isnt worth it! I know you know the importance of nutrition to making every single second count! It can be the difference between qualifying for a championship and not!

This looks fantastic. If I wanted to make this for the kids and leave out the protein powder, do you have a suggestion for a replacement? The kiddos would just love a loaf of chocolate bread and I love the use of chia here.
no problemo! so, i would use extra coconut flour, GF flour, or almond meal instead. It probably will be a little different texture but same taste. Actually, i’d add a little honey or stevia since you won’t be using a stevia sweetened protein powder, ya know? Email me if you need other suggestions. It’s really about the fluffiness of the egg whites too.
So funny…I said yesterday that if I get snowed in (well, iced in), I was going to make the garlic bread one. Except I don’t have the right protein powder :-(. Only have chocolate. Now I am plotting on how to get protein powder here today.
