Grain Free Apple Cider “Coffee Cake”


  • 1 cup almond meal (almond flour)
  • 1/4 cup coconut flour
  • 1/3 cup applesauce (regular or unsweetened)
  • 1 oz dried apple (chopped)
  • 50 grams Vanilla protein powder (about 2 scoops)
  • 2 tbsp Raw Apple Cider Vinegar
  • 1/4 tsp sea salt
  • 1/2 tbsp nutmeg, ginger, and clove combined (or just one if you don’t have both)
  • 1/2 tsp cream of tartar
  • 1/2 tsp baking powder
  • 2 eggs
  • 1 tsp liquid stevia (optional)
  • To make it sweeter add 2-3 tbsp honey (optional)
  • butter or coconut butter
  • Note: You don’t have to use protein powder. But it does give it bulk. Sub any other flour there (about 1/4 cup). If you like it more dry, then take out the applesauce.


  1. Preheat oven to 350F.
  2. Mix your flour and dry ingredients first. Set aside. Whisk your egg and then fold in the Grain free flours.
  3. Add the applesauce and dried apple and mix again.
  4. Pour into a greased bread pan (9×13) or brownie pan. Bake at 350F for 15-16 minutes or so.
  5. Remove from oven and pour a little melted butter or coconut butter on top, then let it cool.
  6. This bread is lightly sour and sweet. If you want it to be sweeter, add in more xylitol, coconut sugar, or stevia baking blend..
