Is it just me or are my titles getting longer? No, it’s true.
Anyway, hello Monday. Glad you are here. The kiwi and I both spent the weekend working. The weather was dreary and it actually felt nice to stay inside and just get things done. I don’t mind working weekends like that.
An early morning run with a DEAR FRIEND and then off to the kitchen I went.
Turned on Ironman Kona and was all set for the next 5-6 hrs. So awesome to see and hear our fellow friends and athletes competing. I know Amanda got a special Sherpa experience watching the event. You gotta check out her posts from this past weekend!
After spending a majority of my weekend in the kitchen, I figured I might as well stay there a little longer and make something “fallish.” You know, that FALL FOCUS. We were craving anything in bread form and with a nice spice. I didn’t have pumpkin, so I scrounged the left over ingredients in my pantry and came up with this. Not gonna lie, I was quite impressed it turned out so well.
- 1 1/4 cup almond meal
- 2 eggs
- 4-5 oz water or almond milk if you prefer
- 1/3 c maca powder (can also use coconut flour or peanut flour or protein powder here)
- 1/4 cup psyllium powder or grinded husks (can also use flaxseed but pysllium gives it more fiber and bulk)
- 1 tbsp cinnamon
- 1/2 tbsp pumpkin spice
- 1/4 cup full fat greek yogurt or organic buttermilk
- 2 tsp baking powder
- baking stevia or drops – 2 tsp (can also use honey if preferred 2-4 tbsp)
- optional- butter extract (1/2 tsp) and or vanilla extract
Mix your dry ingredients first in bowl. In separate bowl whisk eggs, water or milk. Add to dry ingredients, mix. Then add in your yogurt and mix with hand or mixer. pour into grease pie dish or bread pan and bake at 375 for 20-22 minutes. check center at 20 minutes. Remove and cool before slicing. Best with butter and coffee.. trust me! [/print_this]
Note: If you have oat bran, that can be used in place of the psyllium powder but it will no longer be grain free.
