Well Hello JULY! It’s gonna be a good mont! Do any of you have summer birthdays? Because if you do, you’ll totally understand the dilemma of summer birthdays. Yep, my birthday is this month. Apparently my brain is the first to age because for a moment there I couldn’t remember if I was turning 32 or 33. And apparently I have a short term memory. Oh wait, where was I?

Birthdays.. Summer… Ahh yes!

Not going to lie, when I was younger, I didn’t like it. Every body was out of town and my party usually had to be shifted to later in August when friends were back in town. The only good thing that came from  shifting my birthday party to August was that it was PEAK Plum season. We would often stop on at the fruit stands on the side of the road to buy a bag of plums. These were especially tasty on hot summer day, and trust me, it was and still is HOT in Texas during August! But you know what else? Plums makes the best summer birthday dessert! Especially paired with vanilla bean ice cream.

Which leads me to this recipe. The July Flavor of the month! One of two flavors. Yes, I have two flavor. So stay tuned here! Ok?

Plum Crumble or Crisp is one of my favorite summer desserts. Which is why it also makes a good “birthday cake.” I think it’s similar to that summer comfort food thing that I crave. Light and refreshing, but also a little rich. I tried to pack all that light but rich flavor into this little bite too. Vanilla, almonds, dried plums, honey, cinnamon, a little lemon zest, and vanilla cream protein. Oh and the option to add in a little oat granola crumble, if you want a crunch! See, it’s all about having your cake …err crumble,  and eating it too.  These are my one bite wonders, okay you can have more that one bite but you get my point, right? It’s one bit of summer dessert that will leave your taste buds happy.

Description

Gluten Free Vanilla Plum Crumble Protein Bites


Ingredients

Scale
  • ¾ cup Vanilla Cream Protein of choice
  • ½ cup almond meal
  • ½ cup almond butter
  • ¼ cup oat or coconut flour
  • 5 oz dried plums (prunes)
  • 1 tsp vanilla extract
  • ⅛ tsp lemon extract
  • ½ cup maple or honey
  • dash of cinnamon
  • optional add ins — ¼ cup gluten free granola

Instructions

  1. First, grind up your dried fruit in food processor or blender.
  2. In large bowl, add in all your dry ingredients.
  3. Then mix in your nut butter, extracts, and last the honey. Mix well (I use my hands) and roll into bite size balls. You can then roll bites in the extra protein/cinnamon powder after you roll. Makes about 25-30 balls.
  4. Feel free to roll into larger bites, or smaller to make more.
  5. Add more honey/PB if they end up being too dry to roll. Just depends on type of protein you use.
  6. Freeze or keep in refrigerator to maintain freshness.

Like I mentioned above, this is the first of two healthy bites flavors for July. The other BONUS bite will come either Friday or next week. Plus I feel like I haven’t posted a Chocolate Healthy Bite recipe in a while. Consider this my gift to you and myself! Ha!

    YUM!! I love this flavor combo! and happy almost birthday friend! love you! I think your second flavor combo will be with cherries. or some kind of cherry combo because fresh cherries are the best and my fave summer fruit second to watermelon!

    Yum! We have a plum tree and get a massive amount of plums each year. This year I haven’t had time to do anything with them and am so wishing I had a dehydrator so they didn’t go to waste. I did freeze a bunch but many have ended up going bad and getting tossed 🙁 So sad!

    Love this healthy no bake recipe! and I’m so jealous of you being able to purchase plums from fruit stands on the side of the road. Can we swap? You send some of those fruit stands here, so I can get fresh plums, and you can have some of our roadside fruit stands which have fresh raspberries and strawberries in, currently? 🙂

    I can relate to your birthday woes. My birthday is 2 days after Halloween and everyone always wants to make it into a Halloween themed party. Let me tell you. That gets old! These bites wouldn’t get old. I don’t know why I never thought to use coconut flour in mine. Genius!

    I thought these sounded good when I thought they were maybe a peach flavor but LOVE them even more now that I found out they are plum! Aurora even got really excited as she fell in love with plums in Ireland. She actually got really upset at the store last night because she wanted them and they only had plouts and hearing her tell the guy at the store they aren’t the same as plums was funny. She may only be 6 but she knows her produce and has good taste man don’t mess with her! Haha!
    Can’t wait to try these, you are killing it with goodness this week I can’t keep up!

    I’ll trade you birthdays! Mine is right at the beginning of January, which isn’t only the coldest time of the year, but is also the time where people are coming down off the Christmas high, and everyone is in a crabby mood 😆 The best was when it happened to fall on the first day back at school, too 😡

    Vanilla plum- you always outdo yourself with a fun and unique flavor! My husband’s bday is next week and I know as a kid it kinda sucked, but 3 of the past 4 years we have had a wedding on his birthday and this year it’s sandwiched between two weddings 🙁 I will have to make him something delicious to make up for it!

    Oh wow I need these! I’m all about sweets and treats lately 🙂 one of my daughters has an August birthday and we do wind up shifting her party to sept, but she doesn’t mind because we also do a family party in August. I think anything related to ice cream is my favorite for summer. Or fruit pies, love those too 🙂
