A one bite wonder! These gluten free no bake Vanilla Plum Crumble Protein Bites wrap up all the flavors of that stone fruit summer dessert into one delicious, healthy, gluten free protein bite.
Well Hello JULY! It’s gonna be a good mont! Do any of you have summer birthdays? Because if you do, you’ll totally understand the dilemma of summer birthdays. Yep, my birthday is this month. Apparently my brain is the first to age because for a moment there I couldn’t remember if I was turning 32 or 33. And apparently I have a short term memory. Oh wait, where was I?
Birthdays.. Summer… Ahh yes!
Not going to lie, when I was younger, I didn’t like it. Every body was out of town and my party usually had to be shifted to later in August when friends were back in town. The only good thing that came from shifting my birthday party to August was that it was PEAK Plum season. We would often stop on at the fruit stands on the side of the road to buy a bag of plums. These were especially tasty on hot summer day, and trust me, it was and still is HOT in Texas during August! But you know what else? Plums makes the best summer birthday dessert! Especially paired with vanilla bean ice cream.
Which leads me to this recipe. The July Flavor of the month! One of two flavors. Yes, I have two flavor. So stay tuned here! Ok?
Plum Crumble or Crisp is one of my favorite summer desserts. Which is why it also makes a good “birthday cake.” I think it’s similar to that summer comfort food thing that I crave. Light and refreshing, but also a little rich. I tried to pack all that light but rich flavor into this little bite too. Vanilla, almonds, dried plums, honey, cinnamon, a little lemon zest, and vanilla cream protein. Oh and the option to add in a little oat granola crumble, if you want a crunch! See, it’s all about having your cake …err crumble, and eating it too. These are my one bite wonders, okay you can have more that one bite but you get my point, right? It’s one bit of summer dessert that will leave your taste buds happy.
You ready for it? Let’s make my birthday crumble cake bite!

These look unreal! How exciting it is your Birthday soon! I hope you are spoilt! I love plums, summer time, and birthdays:)
omgosh these look incredible – I always forget about plums but they’re so good! Summer birthdays are a gift and a curse. I love the nice weather but I almost always end up working on my birthday.
Yum! We have a plum tree and get a massive amount of plums each year. This year I haven’t had time to do anything with them and am so wishing I had a dehydrator so they didn’t go to waste. I did freeze a bunch but many have ended up going bad and getting tossed 🙁 So sad!
you need a dehydrator! i got a super cheap on on amazon! does the job. I know you’d love it too!
why is the word CRUMBLE so so so tasty sounding in my mouth when I say it???
<3 <3 and crumble crumble.
Love this healthy no bake recipe! and I’m so jealous of you being able to purchase plums from fruit stands on the side of the road. Can we swap? You send some of those fruit stands here, so I can get fresh plums, and you can have some of our roadside fruit stands which have fresh raspberries and strawberries in, currently? 🙂
Isn’t it sad that it’s hard to remember how old we are once we hit 30? 🙁
Hope you have a very happy birthday month…I know these little bites will help to make it cheery! 🙂
lovvvve my protein sweets 🙂
you and me both!
These look so yummy and your photos are like pieces of food art!!! Happy early birthday Lindsay 🙂

Cherry Pie…Strawberry Shortcake…Ice cream in a waffle cone with a some sort of decadent topping…YUMMY!
Plums, glorious plums!! The vanilla cream, vanilla extract and lemon sound amazing in this. Pinned and will try for sure. YUM.
Happy almost birthday!!!
let me know if you do!
Happy birthday month! Stone fruit like peaches and plums is my absolute favorite type of summer fruit – these look so good!
I absolutely LOVE dried prunes… my family thinks I am weird, but I think they are just missing out 😉
Another ball win! The stone fruit here has been unreal. I need to make something like this – there’s so much to play with! Just got a whole box of nectarines that I bet would work here.
Amazing. Cannot wait until your bites are back up and shipping again.
I feel you on the summer birthday celebration situation…mine is in August right before labor day and everyone is always out of town!
And these look divine! I LOVE plums – and I’m sure these little bites are absolutely delicious.
Hooray for summer birthdays! Mine is in August but I also remember wishing I didn’t have to push my birthday party back for people to be in town. I cannot wait to make these bites, they just look amazing!
I hope you have you the best birthday month ever! You deserve it xoxo

I can relate to your birthday woes. My birthday is 2 days after Halloween and everyone always wants to make it into a Halloween themed party. Let me tell you. That gets old! These bites wouldn’t get old. I don’t know why I never thought to use coconut flour in mine. Genius!
this looks delicious!!
mmmm this sound so good- what an epic combo!
Yayyyyy birthday month!! We should just meet up somewhere in the middle, all of us blogger ladies and drink a lot of cold white wine and eat those bites. Love plums!
Vanilla and plum is marriage made in heaven. I need to try these asap!
What a great flavor combo! I have all the ingredients, too. One reason I have those prunes on hand? That mission trip! Southern cooking and no running make a runner want prunes, you know what I’m saying?!
One bite wonder of love! Vanilla plum sounds like a perfect summer flavor explosion!
I thought these sounded good when I thought they were maybe a peach flavor but LOVE them even more now that I found out they are plum! Aurora even got really excited as she fell in love with plums in Ireland. She actually got really upset at the store last night because she wanted them and they only had plouts and hearing her tell the guy at the store they aren’t the same as plums was funny. She may only be 6 but she knows her produce and has good taste man don’t mess with her! Haha!
Can’t wait to try these, you are killing it with goodness this week I can’t keep up!
Yummmmmmmmm I love plums! Can’t wait to try these 🙂
I’ll trade you birthdays! Mine is right at the beginning of January, which isn’t only the coldest time of the year, but is also the time where people are coming down off the Christmas high, and everyone is in a crabby mood 😆 The best was when it happened to fall on the first day back at school, too 😡
I’m gunna say it: I haven’t had balls in a bit, so now I really want some in my mouth.
These little bites sound heavenly!!! We recently got these tiny little plums from the Farmer’s Market. They are so cute!
My parents had a plum tree at their old house. I miss it. Those things are little nuggets of deliciousness!!
I forgot about the existence of plums until right now! Must..make..plum..recipe. These sound amazing! And I always felt bad for kids with summer birthdays in school haha but now I’m jealous!
I didn’t get the flavor right on Instagram… shoot!!! Do you ship? Because these bites would certainly help to fuel my crazy days! Love the plum + vanilla combo [insert clapping noise…]. 🙂
Vanilla plum- you always outdo yourself with a fun and unique flavor! My husband’s bday is next week and I know as a kid it kinda sucked, but 3 of the past 4 years we have had a wedding on his birthday and this year it’s sandwiched between two weddings 🙁 I will have to make him something delicious to make up for it!
These look incredible! Vanilla-plum sounds like a match made in heaven 🙂 Pinning these asap!
Happy birthday month!! And yes, you should celebrate for the whole month 🙂 My fav summer dessert is any seasonal fruit crisp or pavlova.
This is totally unexpected, and you know what it makes me think of? Christmas in July (sugarplums, lol). But I tell you what, this might be one of my favorite flavors for a bite that you have ever made. I love the idea of plums in these, and I can’t wait to try one!
Nope! I would never in a million years of guessed plums. I was actually just asking my dad the other day if I’ve ever even had one. He insists I have. I’m not quite sure he’s right though?
Oh wow I need these! I’m all about sweets and treats lately 🙂 one of my daughters has an August birthday and we do wind up shifting her party to sept, but she doesn’t mind because we also do a family party in August. I think anything related to ice cream is my favorite for summer. Or fruit pies, love those too 🙂
