Three things happened this week that brought me tears of joy.
- A cool front blew in making it feel Fall-ish and making my Monday morning run quite refreshing! This also means my oven was used and we’re no longing melting in the kitchen.
2. My Healthy Halloween treats came in the mail! Thank you Justins! P.S. I’m trying hard not to eat them all.
3. And lastly, gluten free stuffing is now readily available!! Three bakers gluten free stuffing mix graciously offered me 2 boxes of their new Gluten Free Stuffing mix. I of course had to accept and of course had to make a recipe.
Why? Because the holidays are just around the corner and we should probably start baking demo dishes. At least that’s what I am thinking. And I’m thinking it’s the perfect opportunity to do a recipe and a giveaway!
Let’s get to the recipe first, shall we?
[print_this] Ingredients
- 2 cups gluten free stuffing (three bakers)
- 4 eggs
- 2 egg whites
- dash of milk or non dairy milk
- ⅔ cup shredded brussel sprouts
- ⅔ cup chopped chicken sausage (GF) or roasted chicken
- 1 teaspoon garlic
- ½ teaspoon chili pepper flakes or seasoning
- ¼ cup chopped red onion
- black pepper (to taste)
- Dash of salt
Directions.
Preheat oven to 350F. In a large bowl, mix your egg, stuffing, and milk. Let the egg thoroughly coat the stuffing. Then add in your brussel sprouts, chicken, and seasoning. Mix again. Spray a muffin tin or silicon cups. Pour batter evenly into each. Bake for 20-25 minutes, check middle with tooth pick at 20 minutes to see how the egg is sitting. Broil the last minute.
serves 10 medium or 6 large muffins.[/print_this]
Three bakers gluten free bread company has quite the story. I love how they started this business as a family and were on a mission to make good tasting gluten free bread, especially for Celiacs. You can read more of their history here.
Three bakers would like to giveaway 2 boxes of their new Stuffing Mix, just in time for the holidays. Giveaway is open to US residents only. Go ahead, stuff your muffins and enter below.
Disclaimer: Three bakers graciously sent me their GF stuffing mix to review, my thoughts and opinion are entirely my own.
Let’s eat!

Favorite fall dish? HANDS DOWN my grandmother’s cornbread stuffing! I love so many different fall dishes but the fact that she usually only makes it for Thanksgiving makes it even MORE delicious!
can i come over for thanksgiving?
I’ve made stuffing muffins before but that was before I went gluten free. Would love to try this recipe!
crockpot apple crisp
whoa, i need to make this!
Confession: I’ve actually never eaten stuffing. My mom never made it part of our turkey dinners when I was growing up (my parents immigrated from Poland, where Thanksgiving doesn’t even exist), so it never really caught on. That and pumpkin pie are things I don’t associate with Thanksgiving. Turkey, on the other hand, is a must.
if you win, i’ll personally ship these to you! You need stuffing!
My favorite fall recipe to make is apple and butternut squash bisque with creme friache
I was crossing my fingers for this recipe to be posted after you taunted us on instagram with it- It looks amazing- I’ll have to be on the lookout for a stuffing style mix here! I LOVE savoury muffins!

I love the idea of this…sadly, I’ve never been much of a stuffing fan. But I know my husband and kids would love! And ditto your #1. I had a fabulous Monday morning run (unfortunately, that was the only morning that Ian was home, so it was the only one I got!). Trying not to think about the humidity coming back tomorrow :p.
I personally would love some Justin’s. Dark chocolate. Please and thank you. 😉
Oh yeah, pumpkin…anything. I have had overnight pumpkin pie Superoats every day this week. And I’m not a bit sorry.
can i come to your house for breakfast?

Favorite fall meal is a tough one. I do love me some stuffing though!!! Last year I made a stuffing dish inspired by one in Eating Well magazine (switched some things to make it gluten free) and it was great! How much easier would it be to use this stuffing?
I love anything pumpkin! Especially desserts, yum!
Oh, cool, need to check around for that. Let’s see, favorite fall recipe. I think it’d have to be chili. This time of year we have chili probably once a week. It’s so hearty and so easy to make.

I say it again, I love your patio. I think I would hang there all day if I loved there!
Muffins look great! I never had stuffin. Yep. We don’t do Thanksgiving 🙁
I love making a nice warm soup or chili to enjoy on cold Fall nights!
I love the idea of making muffins w/ stuffing mix. As I’ve never been a huge stuffing fan, Joshua is & would go crazy for this product!
