Gluten Free Stuffin Muffins and Three Bakers Giveaway

Three things happened this week that brought me tears of joy.

  1. A cool front blew in making it feel Fall-ish and making my Monday morning run quite refreshing! This also means my oven was used and we’re no longing melting in the kitchen.

2. My Healthy Halloween treats came in the mail! Thank you Justins! P.S. I’m trying hard not to eat them all.

3. And lastly, gluten free stuffing is now readily available!!  Three bakers gluten free stuffing mix graciously offered me 2 boxes of their new Gluten Free Stuffing mix. I of course had to accept and of course had to make a recipe.

Why? Because the holidays are just around the corner and we should probably start baking demo dishes. At least that’s what I am thinking. And I’m thinking it’s the perfect opportunity to do a recipe and a giveaway!

Let’s get to the recipe first, shall we?

[print_this] Ingredients

  • 2 cups gluten free stuffing (three bakers)
  • 4 eggs
  • 2 egg whites
  • dash of milk or non dairy milk
  • 2/3 cup shredded brussel sprouts
  • 2/3 cup chopped chicken sausage (GF) or roasted chicken
  • 1 tsp garlic
  • 1/2 tsp chili pepper flakes or seasoning
  • 1/4 cup chopped red onion
  • black pepper (to taste)
  • Dash of salt

Directions.

Preheat oven to 350F. In a large bowl, mix your egg, stuffing, and milk. Let the egg thoroughly coat the stuffing. Then add in your brussel sprouts, chicken, and seasoning. Mix again. Spray a muffin tin or silicon cups. Pour batter evenly into each. Bake for 20-25 minutes, check middle with tooth pick at 20 minutes to see how the egg is sitting. Broil the last minute.

    My favorite fall dish or what I call comfort food is macaroni and cheese and thanks to all of the wonderful gluten free sites I can now make it for my husband and I love Three Bakers – they have the only bread that my husband likes and have wonderful service!!!

    oh wow this looks soooo delicious! I definitely need to try this recipe. I’ve been eating lots of brussel sprouts this week! I can’t wait to make some sweet potato casserole for Thanksgiving 🙂

    Hands down homemade green bean casserole for Thanksgiving – I use a homemade gravy recipe with gluten free flour, nutritional yeast, bragg’s, and non-dairy milk. The casserole turned out amazing last year, and I can’t wait to make it again!

    Favorite fall dish? HANDS DOWN my grandmother’s cornbread stuffing! I love so many different fall dishes but the fact that she usually only makes it for Thanksgiving makes it even MORE delicious!

    Confession: I’ve actually never eaten stuffing. My mom never made it part of our turkey dinners when I was growing up (my parents immigrated from Poland, where Thanksgiving doesn’t even exist), so it never really caught on. That and pumpkin pie are things I don’t associate with Thanksgiving. Turkey, on the other hand, is a must.

    I love the idea of this…sadly, I’ve never been much of a stuffing fan. But I know my husband and kids would love! And ditto your #1. I had a fabulous Monday morning run (unfortunately, that was the only morning that Ian was home, so it was the only one I got!). Trying not to think about the humidity coming back tomorrow :p.
    I personally would love some Justin’s. Dark chocolate. Please and thank you. 😉
    Oh yeah, pumpkin…anything. I have had overnight pumpkin pie Superoats every day this week. And I’m not a bit sorry.

    I love helping with Thanksgiving dinner. The past three years my husband and I have visited his parents for Thanksgiving, and I usually end up cooking the entire meal! It’s really special to be able to cook a wonderful meal for my in-laws. They are such incredible people!

    These stuffin’ muffins looks incredible!!! Stuffing is my favorite Thanksgiving side dish and it is awesome to know of a great gluten free brand! I have never been tested for celiac, but I notice a huge difference in how I feel when I don’t eat gluten! Thanks for sharing this!

    Favorite fall meal is a tough one. I do love me some stuffing though!!! Last year I made a stuffing dish inspired by one in Eating Well magazine (switched some things to make it gluten free) and it was great! How much easier would it be to use this stuffing?
