Gluten Free Meatloaf with Pop Chips and Balsamic Glaze

Ingredients

  • 1lb organic ground beef or turkey
  • 1 oz (small bag) of crushed sea salt pop chips (or other GF potato chips)
  • 1/2 tsp BBQ seasoning- Make sure it’s gluten free
  • 1/2 tsp garlic powder
  • 1/2 cup tomato sauce
  • 1 egg
  • 1/3 cup chopped onion (optional)
  • oil
  • Balsamic glaze or balsamic vinegar

Instructions

  1. Directions:
  2. Preheat oven to 400F. Oil your bread pan and set aside. Crush your pop chips and set aside. Save a few crumbs to sprinkle over loaf when done.
  3. Then, in a small mix your ground beef and egg. Add in your pop chips and onion and mix again. Finally, add your seasonings and mix on last time. Press batter into pan and bake at 400F for about 40 minutes give or take. Check around 30 to see how it’s baking.
  4. Remove from oven and cover with tomato sauce. Then drizzle with balsamic glaze or vinegar and any leftover pop chips crumbs.
  5. For Vegetarians: –> Try it with tempeh, lentils, or ground chickpeas!
