Curried Chicken and Veggie Pad Thai. A Gluten Free Pad Thai dish paired with curried chicken and veggies. You can’t go wrong with this pair! Delish!
One of my husband’s favorite dishes I’ve made (ever) is a gluten free and vegan mac and cheese with curried chickpeas. I am still shocked to this day that he requests that recipe, only because he’s a man, and he craves meat daily. Haha. But I don’t complain, it’s a great meal and I try to recreate it when I can.
Well, the past few weeks of traveling and racing for the Kiwi (my husband) have been a wee bit stressful and tiring. That being said, it was time for his favorite meal to cure things. Makes sense, right?
But this time around, I added in extra protein (chicken), veggies, and switched to a new pad Thai pasta to make it lower carb. Guess how it turned out?

- Total Time: 30 minutes
- Yield: 3-4 1x
Description
Gluten Free Pad Thai Noodles paired with curried chicken and veggies. You can’t go wrong with this pair! Delish! Gluten free , quick to make, and healthy!
Ingredients
- 1 pack Gluten Free Rice Pasta or Zucchini Noodles
- (½ cup)- spicy or plain Almond or cashew Cheese (You can make your own or even just use nutritional yeast).
- 1 ½ cup sliced chicken breast (about 8 oz)
- 1 jar pimentos
- 1 cup peas or other veggie of choice
- ½ to 1 tablespoon curry and paprika combined
- garlic- 1 to 2 tsp.
- sea salt and black pepper- to taste
- olive oil or other oil of choice (2 tbsp.)
- almond milk (unsweetened)- ¼ to ½ cup
- Optional Topping – Chili flakes or sriracha
Instructions
- First, slice your chicken and coat them in 1 tbsp. oil and curry powder. Spread on a baking sheet and bake at 400F for about 15 minutes or you can grill or sauté in skillet until gold brown but not over cooked (crucial). Set aside. Then cook pasta according to the directions. This pasta only took about 4 minutes. Strain the water and add in the milk, cheese, oil, and seasoning. Stir on low until cheese starts to melt. Once its starts to melt, add in your chicken, cooked peas, and pimentos until all the cheese is melted and coated onto the pasta and chicken. Top with chili pepper flakes, sriracha, or any other spice you’d like!

It actually paired quite nicely with my favorite bread to eat –> grain free garlic protein bread!

I have a friend who makes vegan pancakes every time I come over. I love cake-y breakfast dishes, and the pancakes are so thick and moist, I can never resist. Amaaazing.
That sounds like when I had Miguel try tofu for the first time when I pressed and marinated it and I was shocked he liked it and actually requested it again! Because he too loves his meat and potatoes 😉 This looks soooooo good!!! I must make! And let’s see, I love when Miguel makes me his homemade soups from scratch that his mom showed him how to make 🙂 SO GOOD! (kale soup, tomato, carrot etc!)

Question for you….did you do whole 30 when you went through your gut healing? I’ve cut out all grains, pasta, dairy, sugar, etc. that combined with ACV and a digestive enzyme has helped tremendously. I’m wondering how and at what point to start introducing things back. It’s been two weeks for me so far.
Let’s email. I never did whole 30 for certain reasons. Too much restriction at once. I focused on low fodmap and more micronutrient dense foods for 90 days

I LOVE LOVE LOVE cashew cheese! That stuff with curry/cumin is pure gold! I have been using it with veggies/pasta – but haven’t tried it with chicken! Loving the sound of this recipe lady!

I think Jason would live on mac n’ cheese if I let him. Is it a guy thing? Since Jason used to work in a French restaurant, when he decides to get creative in the kitchen, I let him have at it. He’s really a great cook when he decides to cook 😉

OH, how I miss mac and cheese. This looks like another must try recipe, for sure! When I ate gluten and dairy, my two favorites were my dad’s homemade pizza and biscuits and gravy. Now, my favorite might be his pea soup w/bacon – which happens to be gf + df 🙂

I’m a crazy person for mac and cheese. There was a point in my late teenage years where I was going through a [blue] box a day. It’s probably a good thing that I learned you can make your own healthier version 😆
i still buy annie’s GF mac and cheese –> the blue box gets me every time. cheese powder and all. haha

I adore pad thai, but can’t usually have the restaurant versions because all of the added ish in there, so I had to come up with my own. Hadn’t taken the curry approach yet, but will definitely try it!
