Simple creamy garlic herb mushroom toast recipe!  This is one savory vegetarian gluten free appetizer that’s packed full of flavor! Buttery sautéed garlic mushroom toast with cream cheese, cracked pepper, and basil made into one super easy and delicious gluten free snack or appetizer.  It’s a staple gluten free recipe I keep handy for parties, holidays, or even for a quick light meal.
I think I may have a little obsession. It’s called “convince your husband to like all vegetables that you LOVE but he doesn’t.” That’s a real obsession, right? Well, it all began with the candied bacon asparagus. That dish was a hit! So I thought if I could convince him to like asparagus, maybe I’d convince him to like mushrooms as well?  Better yet, my favorite way to make mushrooms…. sauteed… garlicky… and on toast; mushroom toast! Emphasis on the Garlicky!
Yes, mushrooms are MY FAV, but not so much the kiwi. WHY!? They are so tasty! Am I getting greedy here ya’ll? Don’t answer that. Just listen to my game plan.
First, I will make a  fun “appetizer” dish that I know he be attracted too. Hence the TOAST part. Man loves his toast, gluten free toast. This will be perfect because I can bring it to our Easter lunch/dinner.
And then maybe this toast appetizer can also be topped with basil and garlicky buttered sauteed mushrooms. Mmmmm… can you just smell that now? No one pass that up, right? Sauteed mushrooms are like heaven on earth. But here I go again, going gah gah over a vegetable that I haven’t convinced him to like yet. Back to my game plan here. This  mushroom toast appetizer extraordinaire! I just know that most of my family will love it. Because they’ve tried it! I made this garlic and herb sauteed mushroom toast when the Kiwi was in New Zealand. We gorged on mushrooms while he was gone. Haha, kidding. Kinda.
I am thinking that if I made this appetizer just like I did for my family, with just the right amount of butter,  garlic,  cracked pepper, fresh basil, and cream cheese all slathered on a warm piece of gluten free toast …. ahem… with mushrooms, then he will like it! And if my WHOLE family is enjoying this appetizer together (on Easter Sunday) …. ahem…. with a glass (or two) of wine, then he won’t want to miss out. Sounds logical to me!
Besides, if he doesn’t end up liking my mushroom toast appetizer, then that just means more for us. Hey getting him to like 1 out of 2 of my favorite vegetables isn’t too shabby, eh? I’ll keep you posted and report back come Monday!

Description
Vegetarian Creamy Garlic Herb Mushroom Toast {Gluten Free Appetizers}
Ingredients
- 1 ½ cup whole mushrooms (about 1 cup sliced)
- ½ tbsp salted butter
- 1 large garlic clove, chopped
- 1 tbsp or less of olive oil or avocado oil
- 2 tbsp cream (coconut cream works too here if need be)
- black pepper
- sea salt
- 4 pieces of gluten free bread
- 1.5 to 2 oz cream cheese
- fresh basil leaves
Instructions
- wash and dry your mushrooms. Slice and place to the side.
- Next, heat a skillet or cast iron skillet with butter on medium to medium high.
- Add your garlic and lightly fry for 1 minute.
- Next add your oil and mushrooms.
- Mix all together and add pinch of salt and black pepper.
- Sautee for 3 – 4 minutes on medium high.
- Reduce to lower heat, not too low, and add cream.
- Cook for a few more minutes or until mushrooms are done and nicely coated. Garlic will be browned.
- Remove from heat.
- Next toast your bread.
- Smear .5 oz or less on each piece of bread.
- Place ¼ cup of the mushroom garlic mix on top of each piece.
- Spoon the cream from the pan on top of the mushroom toast.
- Garnish with 1 or 2 small basil leaves and more cracked pepper.
- ENJOY
Notes
Simply double ingredients if you want a larger batch. THe only ingredient you need to be careful with when doubling is the cream. Add 1 tablespoon at a time until mushroom mix is creamy not saturated in the cream.
You can use dairy free.vegan cream cheese and butter to make this vegan.
Feel free to cut the pieces in toast in half to make it more like brushetta or crostini.

Now, about this super simple and delicious garlicky buttered sauteed mushroom toast dish. I’m sure 90% of you like mushrooms and will like this. Okay, so it might be my sneaky way of getting people to eat more vitamin D rich mushrooms, we can thank the butter for helping with that, but it’s also just a great appetizer recipe to keep handy.
This garlic herb sauteed mushroom toast is perfect for when you need a quick dish to take to a party or if even if you are having people over to yourself. It’s AMAZINGLY easy and scrumptious. And it doesn’t require prep time or ingredients for that matter.
You can serve this gluten free mushroom toast appetizer with with salmon cakes, a light spiralized or quinoa salad, wine,  and/or a simple soup. But you don’t really need a party to make this. It’s totally acceptable as a light meal, another reason I love this appetizer!
Okay geeze, now I’m just getting hungry. Maybe I should have been a party planner versus a nutrition specialist. Nah…

Weird fact about me….. If I eat mushrooms – like clock work = midnight = I throw up. SOOOOOO WEIRD! That being said, I DO love the shrooms so it totally sucks too.

I’m seriously going to go make this today. I have a whole thing of mushrooms that I was trying to think of something to do with. Perfect. We have mushroom toasts not long ago in Napa and we both commented that we needed to make them at home. You rock.
