Okay, it’s Friday. It’s Mother’s day weekend. It’s my nieces birthday. And it’s a week before BLEND!! I’ve got lots of Healthy Bites and other goodies to make in the kitchen, as always. Good thing I like it there. Haha.
But like I mentioned yesterday, I over planned this week. I am human.
BUT…
I still want to share this post, this recipe, and this PRODUCT! Why? Call me crazy (or NUTZ) but I believe in this woman and I find her INSPIRING! She’s my role model as an entrepreneur and mother. Well my mother is my main inspiration, but you get my point.
Danielle (the CEO of NUTTZO) and I have “known” each other since 2009. That’s when the Cotter’s went NUTZ for NUTTZO and Danielle was generous enough to FUEL the hubs with her wonderful product.
But that’s not the main reason we love Danielle and Nuttzo (although it is a MAJOR PERK). We love Nuttzo and Danielle’s vision. Her story is unique. She wanted to feed kids with HEALTHY FATS and she wanted to NOURISH those in need.
So… their family adopted internationally. And that’s just the beginning. You must READ the full story here. I promise you it will melt your heart.
Today we are making a tribute to Mom’s. To those who feed us, nourish us, fuel us, and LOVE us. This tribute all involves a giveaway! Serves 2-4 adapted from here.
Ingredients:
½ cup white or brown rice (be careful not to overcook brown rice if you use it)
1 ½ cups water
¼ cup Creamy Nuttzo or nut butter
¼ cup brown sugar or honey
⅛ cup milk (I used cream and almond milk)
cinnamon and peanut flour mixed in –>(optional) and trail mix topping.
Directions:
Bring water to boil. Add rice and simmer, uncovered for 15 minutes. Mix your Nuttzo, sugar/honey, and ⅛c of milk together in bowl.
When the rice is almost done cooking, add in your nut butter sauce. Simmer a little more until rice is fluffy or tender. Then remove from heat and add in cinnamon and or a couple spoons full of peanut flour (optional). Serve hot or cold and don’t forget to add the Trail Mix topping!

My mom is amazing and really sacrificed so much to always go above and beyond for us and make sure we had everything we needed. Somewhere along the way she has become my best friend and I just hope I can be the mother she is to my children one day.

Gosh, reading about her made me want to go buy out Whole Foods’ supply of Nuttzo.
My mom is the most loving woman I know. She’s supported, encouraged, and loved me unconditionally through the peaks and valleys of life, and has held my hand every step of the way. My mom taught me and my siblings how to maintain a healthy lifestyle and I am so greatful for that! I do not know where I would be today (it frightens me to wonder!) without her loving guidance!

I loved reading the story on Nutzo, that, if you ask me is inspiring! I am only 21 but I aspire to be an entrepreneur in the health and fitness industry and that kind of story fuels my motivation.

Gosh I love my mom. She’s the most giving person (of herself- her time, her help, her love and support). I love that we have a day to tell our moms how amazing they are!
I don’t know where to begin with my Mom… there are so many inspiring things about her. She had the worst possible upbringing with violent abuse, was raped repeatedly by her Uncle as a child and somehow earned and saved enough money to get herself to college, where she met my Dad. They were only 19 when she became pregnant with my older sister, he finished college and they moved to SoCal and my sister and I were born. She left my Dad because of infidelity and then married my step father who was violent, constantly having affairs, and an addict. Seven years ago he died in an accident (he was most likely wasted) while they were on a cruise in the Gallapagos Islands. She had to get his body back to Equador via a rubber raft on the open ocean. I could go on and on. Many people ask me why I am not angry with her, after all, my sisters and I were subjected to many years of abuse at the hands of my step father ourselves, but I am beyond anger, I have completely forgiven her and have come to admire and be in awe of her courage and strength. She is amazing… my love for her is endless.

Mama Smart is just, well, amazing. I STILL don’t think I realize how much she did for us growing up. Although she wasn’t a single mom all the time–we spent one week with her, then one with Papa Smart, etc.–she was who I tended to rely on for most of my adolescence. Oh, wait, I still rely on her now…at 28 years old. She is always there for me (and my brother and sister), and always treated each of us kids equally, and allowed us to be our own people, explore our individual interests, and never compared us to each other. To this day, she never questions my crazy leaps of faith, never puts pressure on me about marriage or babies or any of that, and just trusts that I am following my own path.

Raising two kids pretty much alone…..

So many inspiring things about my mom. I guess the fact that she is the strongest person I know and has been through SO much, yet still puts a smile on her face and gives my brother and I the world. Being a single mom for so many years is so inspiring!
My mom always has an open ear and is never judgmental. She’s amazing.
My Mom is inspiring because she always sees the positive side of things and encourages others to do the same.
My mom is totally responsible for making me into the cook and baker I am today. Everything she made for my sister and I was homemade; to this day, I’ve never eaten canned or powdered soup. I remember coming home from school to fresh baked cookies or some kind of bars, and enjoying so many delicious meals she made for us. My mom also made sure that I traveled and saw the world, as she didn’t get that opportunity. I’ve done so tenfold, and have many stamps on my passports, incredible memories and experiences, and a Scottish husband as a result!

My mom raised me as a single mother and never let me see her struggle. I have no idea how she paid for summer camps, band lessons, or sports gear but she always made sure I could follow my dreams. She is totally my hero!
My mom is the hardest working person I know… she’s SO selfless & would do anything to help anyone out. She’s a HUGE animal lover & has fostered dogs & donated so much of her life to helping her furry friends. She’s definitely an inspiration & a role-model.
My mom went to college…at the age of 39! We actually started college together…AND we had the same history class! 😀

My mom married my dad young, had me young, followed my dad around the country for his job while staying at home with my 2 younger siblings and I, started competing in triathlons in her 40’s, and has helped 2 out of 3 of her kids through depression, eating disorders, anxiety disorders, etc. Now she watches my 2 kids for part of the time while I work, and she and my dad are active in a ministry that goes to the juvenile detention facility in Giddings, TX monthly. She is my best friend (besides my husband) and I still need her and feel comforted by her. And she prays for my family and I every day…there is no better gift!
My mum has stuck by me, & gone through thick & thin dealing with my long term illness. Luv’ er!

I could honestly write 100+ pages about HOW AMAZING my mother is!
yummy! that sounds like an easy recipe that I could use in my lunch bag! don’t have nuttzo but maybe I can use a “fancy” nut butter (cashew-almond or something) as a treat instead.
My grandparents are very old (87 and 95!) and my grandma sadly has a pretty severe case of dementia that often makes her angry. She’ll yell at my mom for trying to “run her life” or whatever but regardless my mom goes back day after day to check on them, go grocery shopping or just stop by to see how they’re doing. I’m not sure I’d be able to do that. I know it hurts her but she goes back anyway.
My mom has such a strong faith! She inspires me to be more of a Godly woman everyday.
My mom is 63 and goes to the gym with me. She is the one who got me to start going and now I’m there 6 days out of the week and love it! She motivates me to work hard.
I have mentioned it before, but my mom just recently took up running and she has been teaching some of her friends to run! She knew she needed to get more activity in her life, but now she does it because she feels good, she’s experiencing that runner’s high 🙂
My mom has always been my best friend. I know it sounds cliche, but it’s true. She has been through a lot in her life, I just love her to pieces!

my fiance’s mother has really been a true mother to me. i have a rocky relationship with my mom and my mother in law has truly showed me what TRUE love is. it’s being there and supporting the ones you love no matter the circumstances, unconditionally, and not looking for anything in return. i truly feel she and my fiance have shown me how to be a better person. to be selfless. and to just love. they are the most inspiring family i know and i am blessed that that welcomed me to be a part of it!

My mom died when I was months old so I can’t tell you about her but I can tell you about my dad. He is an incredible man and the best parent anyone can ask for. He raised me with enough love and support for two parents and for that I am ever grateful.

Love Nuttzo and this recipe! AND my mom 😉 Even though my mom was a full-time hairdresser standing on her feet for 8+ hours a day, she always made it a point to make sure we had hot meals on the table.

Oh my gosh, I got to taste a spoonful of Nuttzo once, and YES, amazing stuff! This is definitely the best for last 😉 And my mom is the most inspiring person I know–she puts up with BOTH me and my dad at our stubborn and hermit-like worst and still does it with a positive attitude and smile on her face!

My mom, at the age of 32 with 4 kids had to undergo what ended up being 5 surgeries for total hip replacements (back in the day when they were not so quick and easy .. they sawed the bone.)
Not only was her life altered in terms of recreational and functional activities (by tennis and scuba) she then got kicked out of Nursing School! Her dream shattered.
She fought both the Dr who gave her the medicine that eroded her bones and the school and realized her dream of becoming an RN.
She has since had replacements in as well as a knee replace but she will NEVER let anything stop her.
my mom taught me about being healthy before i was even old enough to realize she was doing it!

Danielle sounds like a wonderful woman and mom…I have to try this Nuttzo, you talk about it so much! My mom isn’t perfect, never has been, but she’s there when I need her and that’s what counts.

As for my mom — she is THE strongest woman I know. She basically raised my sisters and I all on her own, worked her way through college, graduating summa cum laude and worked full time too. I have NO idea how she did it, to this day. She is the best.
