How to Make the Best Almond Flour Bread Recipe
If you think homemade bread is difficult to make, think again! This cinnamon almond bread comes together with ease and is ready in less than an hour. Watch how it comes together below!
- Preheat. To begin, preheat your oven to 350° Fahrenheit, line a bread pan with parchment paper, grease the sides, and set it aside.
- Combine the dry ingredients. In a large bowl, whisk together the flours, salt, baking soda, flaxseed meal, and ½ a tablespoon of cinnamon.
- Whisk the wet ingredients. In a second small bowl, combine the eggs and egg white until smooth. Then, add in the maple syrup or honey, apple cider vinegar, and oil, stirring to combine.
Note: Make sure you let your eggs come to room temperature before mixing. Otherwise, the ingredients will solidify!
- Combine the ingredients. Working in batches, slowly mix the wet and dry ingredients, making sure to remove any clumps. NOTE – The batter will look super thick, but don’t add more liquid! As long as it looks similar to the pictures above, it’ll turn out great.
- Bake. Pour the batter into the bread pan, and bake until a toothpick can be inserted into the center and comes out clean.
- Glaze. Whisk melted butter with the rest of the cinnamon, and brush the mixture on top of the almond bread.
- Cool. Set the bread aside to cool. Once the cinnamon topping has set, slice, and enjoy!
Tips and Tricks
Adjust the Pan Size. If you don’t have an 8×4 bread pan, don’t worry. A bigger size can be used. Your bread won’t be quite as fluffy, but it will be every bit as tasty!
Make Your Own Flaxseed or Chia Seed Meal. To make the flaxseed or chia meal, simply place the flaxseeds or chia seeds in a coffee grinder or food processor, and grind until a fine meal-like texture is formed.
Keep an Eye on the Oven. This recipe typically takes between 30-35 minutes to bake. However, depending on your oven and altitude, cooking times will vary. So, be sure to keep an eye on your bread, and remove it from the oven if it starts to look golden brown before the baking time is up.
Create a Sweet Cinnamon Almond Bread. For a sweet breakfast bread, feel free to add extra maple syrup or honey to the dough, and add a sprinkle of coconut sugar to the cinnamon glaze.

- 1 ¾ – 2 cups (205 grams) -fine blanched almond flour
- 2 Tablespoons (15–16 grams) coconut flour, whisked or sifted
- ½ teaspoon kosher salt
- 1 teaspoon baking soda
- ¼ cup ground flaxseed
- 1 Tablespoon cinnamon, divided
- 5 large eggs and 1 egg white, room temp and whisked
- 1 ½ teaspoons apple cider vinegar or lemon juice
- 2 Tablespoons maple syrup or honey
- 3 Tablespoons melted coconut oil or clarified butter, divided
- Optional Topping: Chia seeds sprinkled on top before baking
Instructions
- Preheat oven to 350 degrees F. Grease an 8×4-inch bread pan, and place a piece of parchment paper on the bottom.
- In a large mixing bowl, whisk together the almond flour, coconut flour, salt, baking soda, and ground flaxseed. Add ½ Tablespoon cinnamon, and whisk again, removing any clumps in the flour mixture.
- In a medium-sized mixing bowl, whisk together the eggs and egg white. Stir in the apple cider vinegar, maple syrup, and 2 Tablespoons coconut oil.
- Working in batches, gently mix the wet ingredients into the dry ingredients. Pour batter into the greased loaf pan.
- Bake for 30-35 minutes or until a toothpick inserted into the center of the loaf comes out clean. If the center is not set, cover with aluminum foil, rotate pan, and bake for an additional 5-10 minutes.
- Remove the bread from the oven and set aside while preparing the cinnamon glaze.
- Whisk together the other 1 Tablespoon of melted butter (or oil) with ½ Tablespoon of cinnamon. Brush on top of the bread while warm.
- Store in an airtight container in the fridge for up to 1 week.

Hi Kimmie! It’s 2 tbsp coconut flour, which is very minimal when divided by 8-9 servings. Are you currently on a strict low fodmap plan? If so, maybe try 3 tbsp oat flour (GF) in place of coconut flour.

I made this bread for my 16 month old son and he loves it! I spread either almond butter or peanut butter on it for him and he gobbles it up. We don’t feed him gluten and so this was a great way to use up all the almond flour I have and didn’t know what to do with. I love that the bread is savory with a hint of sweetness. I froze half the loaf for later use since it’s for my toddler and he still eats small portions. I did use a bigger loaf pan and it still turned out great. I also used less cinnamon in mine and olive oil instead of butter or coconut oil as that’s all I had on hand. It was great! This will be a future staple for us. Thank you.

I’m going to make this but lean it in a savory direction. I’m going to leave out the maple syrup/honey/ cinnamon, but up the salt to a teaspoon and throw in some garlic powder or maybe some everything bagel seasoning and herbs. I don’t see why it wouldn’t work well, do you? I like the look of this loaf but I’m trying to train my palate away from sweet flavors right now. I’ll let you know how it works out!

It came out GREAT! I made it with the subtractions I mentioned earlier, but with the addition of Everything Bagel seasoning, plus some minced chives and lemon zest. It was really delicious and satisfying! I just toasted a slice and am now eating it with a schmear of chive cream cheese, some ribbons of smoked salmon and topped off with some capers and shaved red onion! Thanks for a great recipe!!

This was a delicious recipe to try for my first time making bread! I didn’t have coconut flour so I just added a little bit more almond flour and it worked great! I also used vegan butter and honey which didn’t alter the taste at all. I also added a swirl of cinnamon in the middle, which my family thought was cute. This bread is very easy to throw together! When its made it makes the kitchen smell fantastic.
On my first attempt, the bread had great flavor for what was there but lacked the significant cinnamon flavor I was hoping for. Additionally, my sample was incredibly dry. I used coconut oil (apposed to butter) and honey (opposed to maple syrup), otherwise I followed every direction just as its written out. Do you have any advice for changing these two features?

Oh no, sorry to hear that nathan. I’m thinking there are two factors that could play into this. One, what type of coconut flour did you use? Brand? YOu might need to sift it before adding to almond flour. The other fact could be over mixing the eggs. I would try sifting the flours together first. Does that me sense?

Thank you for the recipe! I used 1/2 coconut flour and 1/2 almond since I didn’t have enough almond flour– it is VERY dry. Is that why?? Can coconut flour not be substituted for almond?

Oh no, yes coconut flour is pretty sensitive, I never use more that 4 tbsp in a bread. But you could totally try adding a topping, like more coconut oil with cinnamon. Haha I have done this before. Another option, slice it and then use it in a bread pudding with eggs and almond milk. YOu can make it savory or sweet!

this looks easy and Yummy — my two favorite parts of a recipe !! quick Question: what would you recommend substituting for the coconut flour in this recipe? (i don’t do coconut, slightly allergic…)

Hi Catharine! In stead of coconut flour, you could try 3 -4 tbsp tapioca, rice flour, or oat flour. But watch the baking time. I haven’t tried it, so keep me posted! Coconut flour absorbs fast so you always use less.

It would be using whole 30 ingredients, yes! but I think whole 30 doesn’t allow for baking, right? I could be wrong. I know they want you to stray away from baking paleo foods.
