Carrot Ginger PB Bread & a Fitness Friday Exercise

Well it happened. I got sick as a dog on Wednesday night and in bed all day yesterday with the flu. Oh man oh man was that brutal! I don’t remember  the last time I had the flu.

Today is a little better but I definitely need to keep it easy.

So I won’t be doing the these Crazy Cotter GI Jane moves anytime soon. But you can, and then report back. Ok?

I’m also hoping my appetite comes back soon. So much goodness around the interwebs.

Speaking of goodness. I promised to post my strange but good Carrot Ginger Peanut Butter Bread I mentioned in my GF Thanksgiving Round Up. Don’t know it till you try it!

Mmmm Ginger, I think I need that for my flu symptoms… ASAP.

[print_this]Ingredients:

·  1 and 1/2 cups GF Flour (or regular flour)

· 2 tbsp. crunchy PB (Nuttzo works great!)

· 1/2 c peanut butter flour  (could also use almond meal or coconut flour)

· 1 1/2 teaspoons baking powder

· 1/2 teaspoon cinnamon

· 1-2 tsp ground ginger (can also use fresh)

· 1 1/2 cups shredded carrots

· Dash of salt

· Sweetener of choice– I used liquid vanilla stevia. You can also use 1/4 cup honey or agave nectar.

· 1 banana, mashed 

· 2 eggs  

· milk (I used a little less than 1/4 -1/2 cup almond milk depending on thickness of batter)

Directions: Mix flour, baking powder, and spices/salt. In separate bowl, mix carrots, banana, stirred egg and sweetener. Combine with dry ingredients and then add in your milk. Mix batter thoroughly. Pour batter into loaf pan and bake @ 350 for 45-50 minutes. Might be longer depending on your oven. So be sure to check at 45 minutes. I’m also thinking they would make great muffins too! If you want to add more fiber to the bread, try mixing in pysllium husk fiber! maybe 2 tbsp. [/print_this]

 

I’ve made it without the crunchy pb. If you don’t have pb flour, try this one! It’s still my recipe just tweaked.

Also, you gotta try this dish, another strange but good Cotter concoction. GF Pasta Carbonara with hard Boiled egg and Chili Sauce on top. It’s a Kiwi Cotter favorite!

    Oh my goodness this bread sounds amazing!! Instead of losing my appetite, I have been starving since this weekend. I need all the foods! 🙂 Adding this to my list for when we’re back at home and I’m in the kitchen.

    Hope you’re feeling 100% now!
    The flu is terrible. I got hit SO hard last year, so I got the flu shot this year. I’m hoping it’s effective.

      i know! ugh. Mine was a 24 hr bug that i hope never get again. Although sleeping for 18hrs felt awesome!

    I was wondering…where do you buy your gluten-free flour? is there an online store you like a lot, or do you find a good deal at a local store?

      i use almond meal and coconut flour a lot, but for a great multi purpose mix i use Bob Red Mill. It’s AWESOME! I keep it in the freezer. they sell it at whole foods, our local grocers, or you can buy at vitacost.com for cheap!!

    That pasta combination….I love carbonara. I love eggs. I am obsessed with chilli sauce. Cottergeniuses.

    Feel better my friend! Don’t wanna be sick over TG and miss all that yummy food… I love that recipe, huge ginger fan for it’s anti-inflammatory properties – I always double it in a recipe. Good thing I actually like it, too. I also like ginger ale but have a feeling that doesn’t help inflammation. 😉

    For the bread spices, is it 1/4 t cinnamon and 3/4 t ginger or is it
    1/4 t cinnamon, 1/4 t nutmeg and 1/4 t ginger?

      there’s two variations. If you want more ginger use 1 tsp or so and 1/4 cinnamon and a dash of salt, which is about 1/4 tsp. If you want more “holiday” spice, use 1/4 to 1/2 tsp each of ginger, nutmeg, and cinnamon. Same salt content. Let me know if that makes sense!

        Thank you. I went with “holiday” spice and used spelt flour, 1 T vanilla almond sunbutter and 1 T chopped almonds. Love that your recipe doesn’t have oil and uses stevia.

            Oh really? I used 1/2 c spelt and 1/2 c peanut flour and it turned out great. I only cooked my loaf for about 40mn.

    babyyyyyy i have been waiting for this recipe for what seems like years. but i know it hasn’t been years but you get what i mean. i need to make this. i have to make this. i just got my wisdom teeth yanked from my face so my mom and i are just chillin and i would love nothing more than to incorporate some lindsay cotter in my life today 🙂 i told my mom we have some recipes to make and this is one of them 😉 i think i need to make your other bread that i have been speaking of for quite some time. yup, a lindsay cotter baking day it will be. love you.

    Oh no! Stomach bug? We all had one of those in September. Yuck. Now I’m trying to keep away scratchy throats and runny noses brought on by this crazy weather!
