What to do with a fennel bulb… hmmm…..
PrintRoasted Balsamic Fennel
- Total Time: 25 minutes
Description
Roasted Balsamic Fennel
Ingredients
- 1 fennel bulb
- honey lime dressing or marinade
- balsamic vinegar
- apple cider vinegar
- olive oil
- garlic (minced)
- black pepper
- red pepper flakes
Instructions
- Cut your fennel bulb in half with the stem still attached. Then cut bulb into wedges. Take the stem and pull off leaves (seeds). Arrange the bulb pieces in a baking dish and lightly drizzle each of your vinegars and dressings over the wedges. I would say about 1-2 tablespoon of each. Then sprinkle your seasoning on top (about 1 teaspoon of each) along with the rest of your fennel leaves.
- Roast at 400F for about 12-14 minutes. Broil the last 2 minutes. To make a complete dish, add a fish and bell peppers. SIMPLE!
- Prep Time: 10 mins
- Cook Time: 15 mins
We’ve had tamales and tacos 3-4x in the past 10 days. Can you tell we missed being away from Mexican food for 4 months?

I’ve only used fennel seed, but I want to expand into using an actual bulb at some point! This recipe looks really good!

eek, I don’t think I’ve ever tried fennel and to be honest, it’s not at the top of my list lol but the tamales, tacos and any Mexican food, now that IS at the top of my list. Yum!!

i have found sometimes i like fennel other times not so much, but i was awfully proud the first time i bought it and figured out what to do with it!

Yum! I LOVE fennel actually. My Nonna used to cut it into slices for us and we’d call it ‘yucky celery’ because it tasted different than regular celery (we liked it though, despite the yucky name). This just reminded me of that memory and how I miss her so, but know she’s here with me everyday. (and I’m pretty sure Jess will comment similarly or see mine and then NOT comment similarly because that might be weird – lol). Look forward to your updates, friend!

I’ve never had fennel before. I’ve always wanted to try it but I hear it tastes like black licorice and I hate black licorice unfortunately. Love Mexican food! 🙂
and we love black licorice. But i really didn’t taste that. Load up the oil and spices and its delicious!

Also – fennel holds such a soft spot in my heart. My Nonna who passed away a couple of years ago used to give us fennel as a palate cleanser when we were little (we had no idea that’s what it was for!) and we loved it. BUT we called it “yucky celery” because it had the texture of celery but the fennel flavor we called “yucky”…even though we liked it. Funny, right? But anyway, any time someone talks about fennel, it brings me right back to age 5. 🙂

haha, everyone is saying that. I didn’t taste that but i really loaded on the spices. It was more like a celery root texture. But then again, we love black licorice!
I love roasted fennel!! I started growing it in my garden a few years ago, and there is nothing that is as good as fresh fennel. The green tops are great in scrambled eggs, too!

i tried it plain too. Wasn’t bad but needed a good marinade or flavor. the honey and lime and garlic was so good!

Yeah for sure, any brands you can recommend would be appreciated… I get stuff through iherb all the time too, so even stuff that is not on the shelves here in Aussie. Might have to get into some strength training too, get a bit of muscle bulk happening (build a butt anyone!?!) xx

ahhh ha! it totally tastes like that. Yes, fennel goes better with fish than good and plenty.

Doesn’t fennel have a black licorice taste? I love the marinade for it though! And Mexican food can easily adorn my plate anytime. Although… that is quite a bit there. 😉
haha, well we like licorice so no biggy. But i think it tastes more like celery root. The key to to put lots of herbs and flavorings on it.

well we like licorice, so i can’t really complain there. But i didn’t taste licorce. more of the lime and honey. DELICIOUS!
