Ohhh me oh my. I have a whopping confession for you all today. A whopping confession to go along with these whopping gluten free waffles. I like fun words, just go with it. So anyway, um… the kiwi and I BOTH did something last week that not only made us feel a wee bit aged, but also made us feel one word –>  humbled. You ready for it?

We tried to bounce back into our old workout routine after taking several months off from real structure. It was a much needed break during all that transition time. Yep, the kiwi signed up for masters swim again and rode his bike to coach swimming on top of that.  I took a conditioning class from my coworker, which happened to involve kettlebells. This is why it’s a whopping physical reality check and why I’m hoarding all the gluten free waffles today!

Because —-> total exhaustion and soreness are not signs of an awesome workout. Well, to me they aren’t.

They are signs that ONE ; you need to ease yourself back into certain types of training or totally create a NEW one.

TWO; you need to FUEL AND REFUEL properly in order to RECOVER properly from certain workouts.

And when I say YOU, I mean  ME!! Or rather US! Like whoa!

Friends, do I as I say, not as I do. And slap me silly if we pull that move that again. Mmm k? But in all honesty, this got me back on the pre and post workout meal prep bandwagon. Gluten free easy to digest carbs and all! Hence these easy Rice Banana Gluten Free waffles.

Let’s discuss the whopping gluten free waffles. 

  1.  Like literally  made LEFTOVER rice. Which makes a super easy to digest carbohydrate for FUEL or a nice way to REFUEL muscles with glycogen. All good all good! These remind me of my quinoa bread. A way to be resourceful with scraps in the fridge!
  2.  To balance out the rice, we have eggs, banana, and bit of coconut or almond milk. That’s healthy fats, protein, calcium, and POTASSIUM!! The vegan option uses chia seed, still great source of healthy fats and protein too. YESSSS!
  3. A touch of cinnamon which is an antioxidant rich spice and aids in digestion by helping it slow down. You don’t want a crazy upset stomach pre workout or pre anything, right?! Nope, been there. Not fun.
  4.  And last but not least –> they are FREEZER friendly gluten free waffles. Which means I can make in bulk so we can grab and go when need be. Slap some nut butter on them and you have an EPIC PB waffle recovery sandwich. There’s no excuse for improper fueling now. Right?

Oh and these are kid friendly. Cause we’re really are just big kids. No really, what kid doesn’t like waffles for breakfast? Okay maybe add some chocolate chips. More antioxidants, right?

Now, get yer blenders ready and heat up your waffle makers.  Throw in some banana, rice, egg, coconut sugar, coconut or almond milk, and let’s make those whopping WONDERFUL gluten free waffles. Oh side note –> I have the vegan version in the recipes notes.  YAY!

Blender Rice Banana Gluten Free Waffles {Freezer Friendly, Vegan Option}


Ingredients

Scale
  • 2 eggs (see notes for vegan option)
  • 2 cups cooked rice (white works best)
  • 1 medium banana
  • 1 tbsp coconut oil
  • ¼ cup coconut sugar
  • ½ tsp baking powder
  • dash of salt
  • 1 tsp vanilla
  • 1 tbsp tapioca flour or potato flour
  • ½ cup almond milk (cashew milk or coconut milk work too)
  • Optional teaspoon of Cinnamon

Instructions

  1. Place everything in a blender besides the milk. Pulse blend until mixed, then turn on low and add your milk last.
  2. Blend until smooth and thick.
  3. Keep batter in blender.
  4. Grease a waffle iron. Make sure it’s pre heated.
  5. Pour mix onto hot waffle iron. Cook until golden brown. Around 7-10 minutes per waffle. Remove and serve hot or let cool then wrap in foil and place in freezer for later.
  6. Recipe for vegan in notes. Please be aware that the Vegan waffles take 2x as long.

Notes

VEGAN VERSION will take 20 minutes or so per waffle due to no egg.

** 1 heaping tablespoon chia seed ** 2 cups cooked rice (white works best) ** 1 medium banana ** 2 tablespoon coconut oil ** ¼ cup coconut sugar ** ½ teaspoon baking powder ** dash of salt ** 1 teaspoon vanilla ** 3 tablespoon tapioca flour or potato flour ** 1 cup almond milk

—> Same directions as above but let the batter sit for 10 minutes before cooking. Then pour in waffle iron.

—> it will take a good 20 minutes to cook the waffle through. Depending on your waffle iron. Be PATIENT and don’t open waffle iron until at least 12 -15 minutes as passed to check. THey are delicious though. More sticky rice waffle like. And they will look darker in color.

  • Prep Time: 5 min
  • Cook Time: 10 min

Alright now, these gluten free waffles have been made. In LARGE batches. Because they are so simple and can be stuck in the freezer so we don’t EVER have to go through that whole “I bonked” phase. That’s my husband’s code for… “I didn’t eat enough food and now I’m dying!!!!” Haha, kidding. Kinda.

    Good idea but these turned to dust when cooked in the waffle iron….I could not open the waffle iron (despite spraying it prior to pouring the batter) and they somehow were hollow inside when I finally pried it open. Tried making pancakes out of the rest of the batter but they ended up not working on the griddle either. Had to throw the rest of the batter out and spend another hour cleaning the waffle iron.

    How many waffles is a single serving? The nutritional count is high in everything. Are those numbers for one waffle?

      yes, about 1 large waffle (4 wedges) with banana, butter, and maple syrup on top included. If you have just waffles it’s closer to 250-300. hope that helps.

    I HATE working with kettlebells because they make everything WAY TOO difficult. I pretty much died after my first set! LOL! I’ll probably use this recipe as an excuse to power through my next morning workout. I have to try this with short-grain brown rice if it works out!

    These look so good! Wish we had some waffles in the freezer while the hubby is gone and I seem to be going crazy! Luckily we have some muesli rounds in there and lots of other options! I can’t wait to try these! I’ve made muffins and things with rice and put wild rice in savory pancakes but can’t say I’ve ever made waffles with rice!

    1st thing – These look incredible and I can’t wait to make them! 2nd thing – I feel ya girl! I pretty much did the same thing, where I took wayyyyyyy too much time off working out. I’d workout here and there, but wasn’t regimented like my normal self, then decided to jump back in full force. I was like WHOA nelly! Sore sore ouch ouch sore! I hope you’re recovering well and cheers to getting back on the workout bandwagon!

    Oh maaaan you and kiwi are such badasses! I bet you’re already feeling stronger from having done such an intense workout…it sucks in the moment but you feel SO GREAT once it’s all over…slash a few days after the soreness has worn off 😉

    I’m obsessed with this idea of making waffles out of leftover rice. Words cannot describe. Sheer brilliance, m’dear!

    GAH – Lady – I needed these waffles this past Sunday in a BIG way! I didn’t do what you and the Kiwi did, but I spent almost 8 hours squatting and weeding and pulling and pushing weeds and wheelbarrows around my yard and boyoboy, you’d think I knew by now that I am not 20 still! If I pull that long segment of yardwork again, I’m gonna have to have these waffles the day after for sure!

    I’m currently in the sabbatical/bounce back phase. I’ve definitely taken a larger break and every few days, my body decides it wants to move. I always want to go back to my old workouts, but after a few waaaaaayyyyy tooo sore days, I realized I have to take it slow. Also, these waffles! With the new job, I need a few nutrient dense, but easy breakfast options I can take with me and these would be perfect!

    Ha! I’ve totally done that before… After months of nothing I’ll think it’s ok to do a hardcore workout. NOPE. I’ve learned my lesson and, when I do ease back into it, I always use lighter than usual weights to start out.

    YES! I had to take quite a while off working out recently when I had some skin cancer removed just above my knee. I went to do a Barre class that I would normally easily get through and I was totally floored. Nothing on your kind of training but still, it was a shocker!
    LOVING the look of these waffles. I have not had waffles for so long. I love that you have used leftover rice. I always make way too much rice and it can sometimes get wasted!
