Savoring Springtime Suppers

The first few days of Spring have been all about savoring.

We had my father in law in town from New Zealand and soaked up every minute of family time we could.

No agenda. No rush. No plan. No worries.

That’s the one of the many things I really enjoy about these Crazy Cotters. There will never be a plan. There will never be  a “rush” of the day. We spent hours around the table eating good food, sharing stories, and catching up.

The weather was perfect to show him around the trails, the evenings last longer so we could sit outside and chat over a glass (or 2) of wine, and I couldn’t help but realize how much I (we) needed to just step back from life’s “agenda” and enjoy/savor the time we had now.

Maybe that’s the whole point of the “spring forward” time change anyway. To savor the last bit of day together…………. supper.

Just the word in itself makes me feel at home.

So maybe your supper is just two people, maybe it’s 10! Maybe it’s crazy loud and chatty. Maybe it’s calm and collected. Either way, it’s about the time and the people you share it with, am I right?

The last day my father in law was here, we grilled out. He made his famous curry ribs (which I’ve begged him for recipe on multiple occasions), and I prepared a ginger and garlic haddock fillets. The meal, of course, was delicious, but the supper itself was savored for hours!

Garlic and Ginger Spiced Haddock Recipe- quick version

Ingredients:

  • Fresh Haddock or other white fish fillet
  • sea salt
  • 1 tbsp chipped garlic
  • olive oil
  • 2 tsp ginger spice
  • balsamic vinegar
  • crushed black pepper
  • avocado

Directions:

Mix together 1/4 cup oil, 2 tbsp balsamic vinegar, and your spices. Whisk and then pour over fillets (about 2 fillets). You can also marinate them in the mixture for 20 minutes if preferred. Bake or Grill at 425F to 450F for about 10 minutes or less. Depends on how thick your fish it. 10 minutes per inch of thickness. Once removed, place on steamed spinach and add fresh avocado. Add more crushed pepper is desired.

Udis Glutenfree Dinner and a Sneak Peek of new Products

I didn’t work this weekend. You see, I’ve been working most weekends for a while now, so this weekend I decided to take a break. In fact, I did not roll one ball. I mean Healthy Bite. I was what you call a “weekender”. Which felt odd, but good.

Friday night we took advantage of a dinner invite! I tried my best to dress up my Target attire. Head tilt helps, right? Jk.

The wonderful crew from Udis Gluten free were in town for the Blogherfood Conference in Austin. They invited us down to Second St. Kitchen and Grill for a private and GLUTENFREE three course meal. It was so nice to able to meet the people behind the scenes and a few other blog friends. Liz (pic on left) from the Lemon Bowl. I am a Udis gluten Free Community leader with her. We often hold live chat’s together on the forum. Plus I stalk her blog and instagram. It’s deliciousness! Then there’s Alexandra (pic on right) from Fun and Fit, my fellow Fitfluential Ambassador. What a treat to FINALLY meet her. She’s just amazing and so full of life. Love her!

We had an scrumptious dinner. Yes, scrumptious. This word needs to be used more!

As you can see, I went with the trout and black eyed peas. I was so close to licking that sauce off my plate. Had to restrain.

The husband picked the short ribs with grits. I stole several bites of the grits. Heavenly! Coconut Basil Sorbet was for dessert. Very fresh and rich, probably why I left feeling so full, but in the best possible way.

Plus we received these complimentary GF treats from a specialty bakery. I call thist reat a GF Ho-Ho on steroids. We were so full from dinner that we saved this mega bite for a Saturday treat.

Pretty sure I was in a food coma for most of Saturday, but at least my belly was happy. Thank you UDIS Glutenfree!

The rest of the weekend were spent creating more smoothies (Berry cocoa Basil), playing sherpa to a weekend warrior, and hiking with the dog.

Wow, so that’s what a real weekend feels like? I could get used to that! But let’s make them 4 days and work only 3. Sound good? That would be.. MARVELOUS!

REFILL: Dark Chocolate MMAZ and MIMM

The truth is, we aren’t weary simply because our schedules are full. We are weary because our spirits are depleted. Within each one of us resides a soul that desperately needs renewal and restoration, something an overloaded schedule doesn’t always allow.”

Such truth, isn’t it? That word….Depleted.

How often do we find ourselves depleted at the end of the week and weekend?

This weekend was definitely an “eye opener” to me. I have been slammed with business (good busyness).  But by the end of the day, I felt depleted. Not the physical kind, the mental kind. The kind where your brain goes from 100 mph speeds to a sudden crash burn plop.

So Saturday morning I decided i needed to refill, recharge  restore. I woke up early, spent some extra time with lots of coffee in hand,  my devotional, and prayed for rest,  mental/emotional restoration. You know, the kind that makes mind feel at ease? Yes, that kind.

I felt better. Then after a full day of work, i felt it again. The ” ‘where’s my brain?” depleted feeling. It was at that moment my husband pulled me me away to spend some time, well, not thinking, just doing something fun. Okay and there may have been wine involved. God bless him.

Sunday was the same. I woke up early, spent time reading/journaling, then back in the kitchen. Later friends came over to help me package all the Blend Retreat Healthy Bites. HUGE HUGE Blessing!

But this time around, I knew what to do. I knew how to get my “refill” before the depleted feeling snuck it. So, I (we) convinced them to stay for dinner and then ventured over to my parents house to celebrate Mother’s day with a low key backyard BBQ .

What’s my point here? When we feel depleted, we often seek our physical rest. Am I right? Yes, this is important, but maybe it’s not what we need refill our “soul.”

We need to refill with time to ourselves. No, exerting too much energy, I mean really sitting down and enjoying solitude. 3 minutes, 5 minutes, 10 minutes, etc. Any little bit of time helps! Pray, journal, be thankful.

We need to refill with others. Whether it’s a date night with your spouse or a get together with friends/family, we need to refill with fellowship. With laughter. With love. We need to accept help and be grateful.

I’d like to think I realized this myself, but I did not. It was pointed out to me by others, and it only took me 30 years to listen. Winking smile

So glad I did.

Today I want REFILL your Dark Chocolate Lovers Soul with a recipe from my archives. Enjoy it by yourself or with good company. Either way, you’ll get the FILL need.

BWV-Round2-May-Chocolate

  • ⅔ cups Pecans, Finely Chopped
  • 1/2 cups condensed Milk and 1/3 cup almond milk combined -melted coconut butter and almond milk if you want the healthy version.
  • ⅓ cups brown Sugar (or NuNaturals sugar)
  • 2-1/2 cups Dark Chocolate Chips
  • 2 teaspoons Vanilla Extract
  • 1/4-1/3 cup shredded unsweetened coconut.
Preparation Instructions:

Toast the pecans for 3 minutes in a 325 degree oven. Then chop finely. Set aside. Combine milk and sugar in a small heavy-duty saucepan. Bring to a full rolling boil over medium-low heat, and boil stirring constantly for 3 minutes. Remove from heat. Stir in chocolate chips. Stir until mixture is smooth. Then stir in vanilla extract. Then, roll chocolate out on parchment paper and sprinkle the pecan and coconut mixture on top. Refrigerate for 1 to 2 hours.

Base Ingredients:

  • 1/2 Cup butter (earth balance for vegans)
  • 1 Cup packed brown sugar
  • 1 large egg (or 1/4 cup egg whites or 2 tbsp flax for vegans)
  • 1 tsp. vanilla extract
  • 1 1/2 Cups all-purpose gluten free flour (you can use regular flour too)
  • 1 tsp. baking soda
  • * 1 cups rolled oats
  • * 1 cup gluten free pretzels

* NOTE: I grounded up the oats and pretzels together to make one dry mix.

Directions:
Set aside 2 Tbsp  the butter. Beat the butter with mixer on medium speed for 30 seconds. Add brown sugar; beat until well mixed. Beat in eggs and vanilla. In another large bowl stir together flour and baking soda; stir in oat/pretzel. Gradually stir dry mixture into beaten mixture. Set aside.

Press two-thirds of the oat/pretzel flour mix into the bottom of an ungreased baking pan (I used a 8×8). Take cooled dark chocolate mix and peel it off the parchment paper with the pecan/coconut mix facing down over the oat mixture. You might need to spread it more into the corners.

Bake in a 350 degree F oven about 25-30 minutes or until lightly browned (chocolate mixture will still look moist). Cool on a wire rack. Let it cool then cut into 2×2 inch inch bars. Makes about 16 bars.[/print_this]

Glad it’s over: Race Weekend

You know when you have one of those weeks ( or days, hours, moments, etc.) when everything just seems to go wrong? It’s starts with one thing then just escalates from there? Yup, that was our past week and weekend. But in hindsight,  we laugh. Because although it didn’t go as planned, we still were safe, had fun, and were with each other.

So… let me begin. 12 days ago (after the hubs victory race), James caught a virus and got sick. It lasted 10 days. No workouts, at all! He got in one run before this weekend. We figured he might as well go and race since he really had nothing to lose, right? Haha. So we packed our bags, the good travel food,  and were ready for an easy trip down to Kemah.

Well, his car ended up needing repair so we had a late start. Then we got stuck in a down pour of a thunderstorm and missed the pro meeting. Oh well, no sweat, right? We’ll just email the race director, and we did.

Once we got there and got him registered, we ventured off to find out hotel. Yes, I booked this hotel 3 weeks ago and had a confirmation number. Apparently that did not matter because they did not have our reservation. We called the helpline and they seemed to have our registration but the hotel did not. Hmmm.. sketchy. So off we went in search of a new hotel, at 7pm on race night.

After the third hotel stop, I begged the Super 8 hotel man to let us stay and told him our situation. God bless him because he actually gave us the last cancellation. We were able to get into a handicapped room and he gave us a discount. At this point we are tired, hungry, and soaked (from rain). More thunderstorms rolled in and we decided to just hit the sack early.

4AM came way too early and so did the horrible coffee we inhaled. Winking smile Around 4:30am we got an email saying they had canceled the bike due to flooding. Yep, flooding. Just a swim run duathlon would be taking place.

Okay, not a problem. Right?

3 hrs later we finally get to the boat dock and put James on the boat. Oh, I forgot to mention that they were suppose to jump off a boat (1.2 miles out) and swim in. And instead of doing 2 boat trips for elites and age groupers, everyone was going to go on one boat at 7:45am now. No prob. But wait, James forgot his swim cap. Ohhh, we laugh. And we scrounge.

See that little boat below? That’s where they were to jump off, eek!

It was rough, rocky, and still a bit rainy. Finally I see 2 pack of swimmer coming in. One group was way right (due to the current) and one was way left, not even near the buoys. James got caught in the current and pushed to the right, way out. It was a mess (for him at least).

7th out the water and on the .. run? But wait, there was a half mile run to transition. You had to take your cap with you to transition and drop it there in order in order to stay qualified (since there was no bike). James was running strong but then forgot to take his swim cap with him to transition. He ran all the way back to the swim finish (lost 4 minutes on the run) to get the cap and then ran back. Bad move overall, but at least he played by the rules.

Well that put him just out of the top 10. Not a happy camper but hey.. it was that kind of weekend. We’re home, we’re laughing, we survived the weekend and well… WE’RE GLAD it’s OVER!

Today is marvelous for that reason. Over, done with, moving ON! Phew!

Weekend Truths and Happy Easter

Weekend truths are a semi vague way of letting you into our little life together. Truth can be funny, Truth can be hard, Truth can be joyous, Truth IS PURPOSEFUL!

So here goes.

Truth is… we are stocked! Special delivery from Udis Gluten Free and from Bestowed Box. Truth is I am BEYOND THANKFUL! Being an Udis Gluten Free Community Leader has it’s perks, yes, but TRUTHFULLY it’s the people I engage with everyday that make it amazing and worth making the time for!

Truth is… the husband arrived home Friday after being gone for 3 weeks. He had been in Hawaii working a few training camps and racing. Truth is there was a little surprise from Quintanaroo when he walked in the door. FYI, QR is his bike sponsor.

Truth is… I took a week off working and working out. Yes, I needed it. When I left for Hawaii (to go Sherpa the race), I left all my work here. My classes were covered and Healthy Bites were put on hold. I squeezed in one run while in Hawaii but then opted to just walk half way through it. Coming back to reality was HARD—>TRUTH —> but I felt so refreshed and that time away was MORE than NEEDED.

Truth is … we went to Easter service last night so that we could have a more quiet Sunday morning. I got all fancy and put on my Easter pearls. Truth is I haven’t worn a skirt or pearls in probably over a year. ha! Our afternoon on Easter will be more relaxed. Hamburgers and Hot Dogs at my parents wit the whole family. Truth is … we can quickly lose focus on what’s important. Guilty! My husband has been back for less than 48 hours we already let the stresses of life build up on us. Post Easter service arguments are always the best way to celebrate, yes? Ugh, wrong! But the truth is …. WE NEEDED IT! We needed to communicate things in order to change things. Oh it’s so easy to get back to the grind of life and forget that we are made to carry each other burdens, not add to them. It’s easy to get wrapped up in the TO-DO’s of life and forget that sometimes it’s better to… TO-DON’T! Don’t worry about a plan, don’t worry that you (we) are still unsure of our future, don’t worry about a clean house, or trying to catch up on work. I’m talking about myself here as you can see. Instead, we’re trying to rest in God’s truth, His Plan, His Purpose. Easier said than done at times, but worth every bit of effort.

So cheers to not being perfect! No perfect plan. No perfect marriage. No perfect way of life.

Cheers to embracing simplicity and accepting the day for what it is…..in God’s hands.

Sherpa Scenes: Lavaman Triathlon

Such a great weekend! Being able to see my husband race, pain free and carefree, was my highlight. True JOY and PASSION! And despite having mechanical issues on the bike (had to stop and change out new wheels) he still finished strong. First out of the water and onto the bike then ran a 33 minute 10k. Not too bad considering he has been out of the racing scene for over a year. Love that guy!

I’ll leave you with a few Sherpa scenes. Every day was filled with friends, laughter, sunsets, and good memories. Just what us Cotters needed. A full recap will be coming soon (hopefully from the kiwi himself), but for now I’m soaking up my last day here with the hubs and the island. Cheers!

When things just Click

There are several things that just seem to “click” from time to time. I am sure you could agree.

Like putting on new run or workout gear and feeling motivated. It just clicks in!

But Marriage… well… that took 5 years to click. Five years worth working on too!

It took 5 years of seeing each other at our lowest of lows and highest of highs, yet never leaving each others side.

It took 5 years of trying to change each other only to realize we can’t, we won’t, and we really don’t want to.

It took 5 years of trying to figure out how to make “our” plans mesh when really we needed to let go and LET GOD’s PLAN lead us.

It took 5 years for me to figure out that I can’t always fix a problem and sometimes the best way to help my husband is just to pray for him (us).

It took 5 years for me realize that needing to control everything only leads us nowhere! In fact, it backfires.

It took 5 years for us to realize that there is no such thing as a perfect husband, a perfect wife, or a perfect marriage. But we are PERFECT for each other.

It took 5 years to realize that Love and Respect are KEY ingredients in marriage. And when you wake up wanting to make that person’s day a little better, then you’ve found your purpose.

It took 5 years to realize that marriage isn’t about the happily ever after, it’s about STAYING TOGETHER…….ALWAYS!

Not your Average Pancake Breakfast

We’re so out of our element this weekend. House sitting with 3 dogs and one kitten. Sleep? What’s that? I am not sure i could handle motherhood right now. Kittens are whole new ball game, ha!

Anyway, ever since Thanksgiving I’ve been on a pancake kick, actually I’ve been on a breakfast all day kick. But here’s the thing, I’m not actually a good pancake maker. My FLIPS are FLOPS 99% of the time. But I love the batter! I love Pamela’s GF pancake mix and I love making Grain Free Coconut Pancakes. So, here’s what I did. Took the batter and baked! Yep, made a pumpkin pancake flat bread one day and buttermilk coconut muffin the next. No flipping required, syrup or melted almond butter recommended. ;-)

 For the pancake flat bread, i just mixed 350 grams of Pamela’s GF pancake mix with 2 tbsp coconut flour, 1 egg, pumpkin spice, few drops of vanilla stevia, 1/2 cup almond milk, and a few scoops of peanut flour together. Then i poured in a greased bread pan and baked at 350F for about 8-12 minutes. Just depends on how your oven works. Comes out pretty thin.

For the Buttermilk coconut muffins/biscuits, i did the following.

Ingredients
  • ¼ cup coconut flour
  • 3 to 4 eggs (use 4 if you are adding less milk)
  • ¼ cup almond meal
  • 1 tsp butter extract
  • ½ tsp vanilla extract
  • ⅓ to ½ cup coconut cream or buttermilk
  • dash of sea salt
  • 1 tsp baking powder
Instructions
  1. mix all ingredients together. it will be be very grainy at first. Just keep mixing. Then roll in ball and press into a greased muffin pan. Bake at 350F for about 12-15 minutes. So simple!

I’ve been eating these pre or post run with banana and molasses or honey. I look faster now, right? ;-)

Oh, and I’ve also been trying out the NEW LOVE GROWN product……HOT OATS!! Or as stuftmama would say.. HOT LOVE. LOL!

Let me just say, this is not your average Instant oatmeal. Cooks up hearty like steel cut oats and isn’t loaded with sugar! Plus it’s gluten free. Very impressed! It comes in four different flavors: blueberry walnut, apple cinnamon, peach vanilla, and strawberry raspberry. Should be in stores next month and on Amazon!! There will be a series of giveaways starting this week so be on the look out in the blog world. Lots of  HOT LOVE to spread! Haha yes, i just said that.

What’s the survey? Oh just a little bit of my own thinking. I need advice. Advice on Healthy Bites.

Do we take a chance and invest in more? Do I stop? Do I wait it out in hopes that we will find someone who will invest in us?

If you’ve sampled or ordered Healthy Bites before, are you interested in them being available in stores? Or would you rather just use the recipes?

Do you think Healthy Bites are unique or are there similar bars/bites out there?
