February Extra’s and Healthy Bites Recipe

Hello Wednesday! Where in the world did you come from? I’m still trying to get caught up on life and work from this weekend, so today kinda snuck up on me, in a good way I guess.

Speaking of the weekend. It was busy, but I did have a few extra’s.

A few extra moments to get outside. It’s been 75F here all week. Crazy!

A few extra Healthy Bite ingredients and GF cookie dough to make mocha PB chocolate chip cookies. hint: just add 1-2 tbsp crushed peanuts or PB flour, cocoa crispies, and coffee grinds to your next batch of chocolate chip dough batter.


A few extra BLOG FRIENDS that I got to chat and laugh with. Yes Katie, I’m thinking about the tattoo leg now.


A few extra goodies delivered and a few extra choices to make for breakfast. LOVEGROWN HOT OATS!

I’m also thinking I’ll be needing some extra time this month. So much going on and some other things I need to focus on, like being a wife. We have few weekend trips and are moving. No, not out of the city, just down the road. Haha, I think I confused a lot of people in my last post.

That being said, I won’t be able to take on a lot of healthy bite orders till next month. BUT…..

I won’t leave you empty handed.  I’m gonna share a Healthy Bites recipe that you can make for your LOVED ONES this month. I mean it is February, the love month, you gotta make some treats for your valentines, ya know?

This is a tweaked recipe from my eBook. Just think of it as your “sneak peak.”

I love that my husband is back from Alaska and brought me souvenirs!


I love that I actually feel womanly again. Wait, let me explain. I recently got my nails done and my hair done. I haven’t had my hair  really “done” in almost a year (gasp) and I haven’t had a manicure in almost 5 years (double gasp)! I’m frugal, yup!


I love that my class was jammed packed yesterday and we all sweated it out together, like major sweat fest!


I love that it is 75F today and we are taking the pup to the trails to walk…..IN SHORTS!


I love that God is so blunt sometimes. As I sit, read my devotional, and eat my breakfast, HE reveals so much.

How to Break the Fast

We all know what breakfast is, am I right? It literally means to “break the fast.” So clever, eh? But really. Breaking a fast from a night’s rest. Feeding our body and fueling it for the day.

In the Cotter house, we like to break the fast a little different each day. I know I know, some people have their go to breakfasts’ each and every morning, and that’s totally fine, but for us, we never know what our bodies will be craving come morning. We don’t eat right away, usually a little coffee first. And then BOOM, we know what our bodies want. Some days it’s a big hearty breakfast, other days it’s a quick smoothie, or even just GF toast and banana. But I’ve (we’ve) come to realize that we don’t plan meals well, we just crave them well.

Here are a few (okay more than a few ) ways we BREAK the FAST….

Fresh Fig and almond butter, carrot ginger grapefruit juice.


Coconut Creamed GF oats with egg, Paleo Bread toasted with butter.


Attune Foods Hemp Cereal or Hot Hemp seed and brown rice meal with yogurt and berries.


Cocoa Eggins or Basil Coconut Banana Protein Shake


Rum Raisin Dough Balls with Coffee or Kefir, fig jam, and goats milk yogurt


Love Grown Foods ANYTHING (hot Oats or Granola Clusters)


Gluten free and Dairy Free Oatmeal Cookie with tea or Grain Free Faux Rye bread with cream cheese.


Frozen Kefir, molasses, and GF muesli or egg and chicken sausage Breakfast tacos on corn tortilla.


Cheesecake Protein Poppers (grain free) or plain Kefir with Orange, cherry, cashew butter.


Egg Salad toasted GF sandwich (made with cultured cottage cheese) or a plain jane banana almond kefir yogurt smoothie.


Told you we are NOT creatures of habit when it comes to food. Haha.

I do have a point here. You see, all these foods BREAK the FAST and give us nourishment, energy, and well…LIFE. But what if applied this to the week, or even the whole month? Is there something you need to BREAK the FAST pace of life from. Will that thing FUEL you? Will it RESTORE you? Will it NOURISH you? Could be a week of rest from working out. Could be saying NO to other commitments in order to spend time RESTORING your energy at home or with family.


I realized this today as I was figuring out what I wanted for  BREAKFAST. I wasn’t too hungry, but needed the nourishment. Simple ingredients. The same goes with this week. I need a simple week to get me back on track.

And so it is..

What I’m (fairly) Certain of Wednesday

Can I do that? Can I do a spin off WIAW? I think so. I know Jen won’t mind. She’s cool like that. Plus I need to release (share) some thoughts and it just so happens that I have a few recent food pics to go along with it.


I am fairly certain, yes I say fairly because there is a 1% chance I might be wrong on a few of these things, but 99% of the time I a right and it feels good. Winking smile

I am fairly certain that I am behind on a lot of life things (work, laundry, emails, etc). But then again, who is ever ahead? Well besides the  the overachievers. We all know I am not one of those. Ha! I am what you call a “just right” achiever. ONE DAY and ONE WAVE AT A TIME! Amen.


I’m fairly certain that frozen lifeway Kefir is even better when it’s cold out and you drizzle warmed molasses over it with a bit of fruit and GF Love Grown Foods Granola.

I’m fairly certain that 35F is not cold to many people. But when there is a windshield of 23F and it’s drizzling, it’s flipping cold. And I am fairly certain I am a badass for running it. Plus I ran here (picture on right), which makes me even COOLER (pun intended)


I’m fairly certain that we could live off homemade breakfast tacos and my new go to snacks (Grain free Cheesecake Protein Poppers). I made these last week and posted it here.


I’m fairly certain, no wait, I am 100% certain that I am blessed. I know such wonderful people who send me goodie packages. Thank you Kalli for the necklace and thank you Amanda for sending me some David’s Tea. I finally get to try it. YAHOO!

Not your Average Pancake Breakfast

We’re so out of our element this weekend. House sitting with 3 dogs and one kitten. Sleep? What’s that? I am not sure i could handle motherhood right now. Kittens are whole new ball game, ha!

Anyway, ever since Thanksgiving I’ve been on a pancake kick, actually I’ve been on a breakfast all day kick. But here’s the thing, I’m not actually a good pancake maker. My FLIPS are FLOPS 99% of the time. But I love the batter! I love Pamela’s GF pancake mix and I love making Grain Free Coconut Pancakes. So, here’s what I did. Took the batter and baked! Yep, made a pumpkin pancake flat bread one day and buttermilk coconut muffin the next. No flipping required, syrup or melted almond butter recommended. ;-)

 For the pancake flat bread, i just mixed 350 grams of Pamela’s GF pancake mix with 2 tbsp coconut flour, 1 egg, pumpkin spice, few drops of vanilla stevia, 1/2 cup almond milk, and a few scoops of peanut flour together. Then i poured in a greased bread pan and baked at 350F for about 8-12 minutes. Just depends on how your oven works. Comes out pretty thin.

For the Buttermilk coconut muffins/biscuits, i did the following.

  • ¼ cup coconut flour
  • 3 to 4 eggs (use 4 if you are adding less milk)
  • ¼ cup almond meal
  • 1 tsp butter extract
  • ½ tsp vanilla extract
  • ⅓ to ½ cup coconut cream or buttermilk
  • dash of sea salt
  • 1 tsp baking powder
  1. mix all ingredients together. it will be be very grainy at first. Just keep mixing. Then roll in ball and press into a greased muffin pan. Bake at 350F for about 12-15 minutes. So simple!

I’ve been eating these pre or post run with banana and molasses or honey. I look faster now, right? ;-)


Oh, and I’ve also been trying out the NEW LOVE GROWN product……HOT OATS!! Or as stuftmama would say.. HOT LOVE. LOL!

Let me just say, this is not your average Instant oatmeal. Cooks up hearty like steel cut oats and isn’t loaded with sugar! Plus it’s gluten free. Very impressed! It comes in four different flavors: blueberry walnut, apple cinnamon, peach vanilla, and strawberry raspberry. Should be in stores next month and on Amazon!! Free Friday and Giveaway

I’m convinced the best things in life are free. I think you would agree.

Free day, free fun, free samples (Whole Foods Market on Saturday afternoon), free time, free wine (haha), free hugs, free good conversation, free advice and inspiration. I could go on forever.

Yesterday was a free day.

First I taught cycle/core, not free for me but free for members.

Core Part:

  • Plank Jacks on balance disc- 20 reps
  • hold boat pose for 45 seconds
  • 30 bicycle crunches
  • 20 bird dogs
  • 15 Stability Ball Push ups

Repeat 3-4

And then I took a free day. No other work, just play.

Mac and cheese with peas, corn, carrots, diced burger patty, and cholula sauce on top with a side of Guinness for the hubs. And egg salad (mixed with hummus), broccoli slaw, kelp noodles, and cholula wrapped in brown rice tortillas for me.

Then it was off to town for a free walk by the lake with DEAR friend. A friend who I admire and gives me free friendship (although it’s free, it’s still very VALUABLE).


We enjoyed free laughter, free conversation, free hugs, and free moments of fun!

After that I met up with another friend. And although it was a short visit, I wanted to take advantage of a little free time. Again, valuable.

When I got home, I was greeted by the mailman with a free goodies. Free for me, but oh so valuable for our bodies! Especially now that I am back to teaching and  my husband is back to training. Oh, and valuable to others because I get to share!

Things to Come & New Finds

Well friends, this is going to be short and sweet. Yup. Good ‘ol Mal (Malware that is). He must like Cotter Crunches cause apparently he has been stealing bites all week. Okay, sarcasm aside… my site has malware and my friends at sitelock are fixing it. Not sure I’ll be able to get into wordpress for a few days while they fix it.

But you know what? I’m kinda okay with it. I needed a break really. I need to tend to other things and play catch up on life happenings, Healthy Bites, appointments, WIFE roles.

Tuesday Truism

How’s that for a title?

Truism according to good old Webster:

Definition of TRUISM

: an undoubted or self-evident truth; especially : one too obvious for mention

You know what TRUISM slapped me right across the face this morning? It was this quote from a devotional I was reading. Well, it’s not really a truism per se but I am going to make it one, k? A Cotter Truism.


I liked it so much I tweeted and instagrammed the heck out of it. Ya, I tend to do that.

The truth is we forget that we are blessed beyond means. We’re human. We get wrapped up in our daily “to-do’s,” errands, job obligations, life obligations, etc. Ya, we’re busy bodies. We need a slap in the face TRUISM to humble us. Well, at least I do.

If I were to have today what I thanked God for yesterday, it wouldn’t be much, even though I do have much. So I am starting over. DO OVER right here, right now!

I’m going to start by thanking GOD for big and small things in my life. The things that I am thankful for today. Then I will put this quote on my fridge, look at tomorrow morning, and repeat. Thankful. Humbled.

I am thankful I have been able to travel to some amazing places.


By the way God, feel free to send us to more of these places. Winking smile

I am thankful for a husband who shares a similar passion. Triathlon, fitness, Health!


I am thankful that he works hard for our family and I am even more thankful that I get to make him breakfast every morning and dinner every night.


I am thankful that I have some one waiting for me at the door every time I come home, even if it’s not a real “person.”


I am thankful for great companies that fuel us and cater to all our food allergy needs. Gluten free, real ingredients, quality care all around! Thank you Lovegrown Foods and CorePower. Not sure what we’d do without you!


I’m thankful I get to roll balls make Healthy Bites as a job. Haha, had to make you laugh somewhere.

No kitchen? No problem

Well, welcome Wednesday. I am so glad you are here. Just means the week is half way over. Which I need it to be.

You see, we’re leaving tomorrow. Yes, leaving for a work trip. This kind of sprung on up on us last minute. Oh say…. 2 days ago! WHOA!

I thought I was gonna get to go to Fitbloggin. But God obviously had other plans. In fact, I actually won a ticket to Fitbloggin. Did I tell you that?

Yep, I won a ticket about 2 weeks ago. I was stoked! I really wanted to go. I really wanted to go just to meet people and hug BLENDS (blog friends). I know, selfish, but true. What I didn’t take into account want that this ticket was only a ticket. It didn’t pay for food, airfare, or hotel. So I did what any blogger would do. Begged for a sponsor, pleaded in fact. I found no one. Sad face. I searched high and low in hopes that some company would sponsor me. But I think I was a little late to the game, as most companies already had sponsored bloggers going.

Oh well I said. There’s always BLEND 2013. I figured this was a sign that I needed to stay here, work on making extra money (cause we ALWAYS need that), and keep healthy bite orders flowin.

Well, little did I know that God had other plans.

He’s quite clever like that. Winking smile

We received an email about 3 days ago. An email from one of my husbands athlete’s he coaches. She needed help with an race she is putting on and she needed some help with her ironman training. Oh and of course, some good cooking.

We were her go to. I would help race direct, cook, etc. and the hubs would coach her and train few others. The perfect duo. The perfect JOB opportunity.

We took it, in fact, we jumped on it!

But there’s a catch. The house where we’re staying has no kitchen. Actually, it’s under construction. It was funny because I got this email saying that the house has no kitchen and was I okay with that? Would I freak out if I had no place to cook for everyone?

Guess what I said? …..NOPE! Not a problem. I thrive off this stuff. No kitchen, no problem. I’m bringing a blender and rice cooker in my bag. No joke.

I’m also stocking up on these items (Vega, larabar, chobani, attune cereal, and love grown just to name a few). Yep, a whole suitcase worth, well half are coupons, but you get the picture.


So a rice cooker and mini blender. Yep, i think that will do.


Lots of cold food meals like broccoli slaw, hummus, and turkey. Rice, quinoa, and oats in the rice cooker. A little hemp and love grown granola bowls, protein shakes/banana smoothies, canned fish and salmon on GF bread, Chobani yogurt and fresh fruit, and eggs that you can cook in microwave. Sounds good to me.


I’m thinking I might need a few of these kombucha cocktails to get me through it, but I’m ready.


I’ve got my game face on and I’m well hydrated.


So, does this count as falling into a good habit? Sporadically leaving the country for a last minute opportunity? Sure, why not.

Thursday Things- Grain Free Recipe

Why? Because I can. LOL. No really. I can. Blogging doesn’t have to be a chore. It can be a way to share by doing just this. Keeping it simple SILLY. I constantly have to remind myself of this too!

And last, a recipe. A grain free recipe in honor of Celiac Awareness Day! Yes, it’s the fig coconut muffins. I finally got around to posting it. Sheeesh!

Fig Coconut Muffins (Grain Free)

Thursday Things- Grain Free Recipe
Prep time
Cook time
Total time
Recipe type: snack
Serves: 8
  • ½ cup almond meal
  • ¼ cup coconut flour
  • ¼ cup protein powder
  • 2 extra ripe fresh figs (i used frozen ones and thawed them out)
  • ½ cup almond milk (or other milk)
  • 1 egg
  • 2 egg whites
  • coconut extract (optional)
  • ¼ cup unsweetened shredded coconut
  • 2 tbsp greek yogurt or applesauce (optional if you want them extra moist)
  • cinnamon
  • ½ tsp baking powder
  • ⅛ tsp salt
  • vanilla extra or vanilla stevia (1/2 tsp or so)
  1. Smash your figs up or blend them up then place in a small bowl. Set aside. In another bowl, combine your dry ingredients, then slowly mix in your egg, milk, and optional yogurt.
  2. Beat or mix well. Finally add in your mashed fig and coconut shreds. Mix again thorough. Batter will be a little lumpy but thats okay. It's mostly the coconut shreds and fig pieces.
  3. Spoon into oiled muffin pan
  4. Bake at 350F for 15-17 minutes, depending on your oven.
  5. Let cool then enjoy!
