3 Portable Gluten Free Breakfasts with Protein. These recipes are great for travel! On the go, in air, or on the road! Easy to make and simply delicious.
Traveling and fueling right can be tricky. To be honest, I think our minds tell us to either A –> just eat whatever you can find. Or B –> we’re sitting a whole lot so eat less and SUPER clean. But our bodies still need to function –> Â pump blood, digest, rebuild, restore, etc. And all that takes energy (good calories).
So maybe we need an option C. The one where we focus on NOURISHMENT, despite the lack of activity or movement. Option C means we eat REAL foods that will FILL us and keep our inner bodies healthy while our outer bodies are flying at 10,000 ft or zooming through the roads. Travel can be physically hard on the body, but that doesn’t mean we need make it HARD to feed it right.  Am I right?
Being that I just spent 30 hours traveling, and REFUELING a hungry Ironman athlete, I thought I’d share our 3 favorite protein packed and gluten free breakfast/snack foods that are great for travel. Well, they are great for ANYTIME but let’s just stick to one topic today, mmm k?
Silver Dollar Protein Pancakes! I love making these with Flapjacked mix and then freezing them until I’m ready to use them.
Here’s a little trick to making them silver dollar –> use a mason jar lid!

Description
silver dollar pancakes with protein pancake mix. Protein Packed and Gluten free and great for travel! On the go, in the air, or on the road! Oh and simply delicious. www.cottercrunch.com
Ingredients
- Mix 1 cup Protein Pancake Mix (Or 1 cup gluten free 1:1 flour flour with 2 tablespoon protein powder mixed)
- 1 cup coconut or almond milk
- dash of cinnamon
- 1 egg or 2 egg whites
- oil or butter for pan
Instructions
- Mix your pancake batter flour, cinnamon, and milk together until smooth. Let it sit for 5 minutes then fold in the egg or whipped egg whites. Using egg whites make them a little fluffier.
- Heat skillet on medium high and add in a about 1 tablespoon oil or butter. Place a few mason jars on the skillet and pour mix into the center. Once it starts to bubble, remove the lid and flip pancakes over. Make sure your lids are greased with a little oil as well. Not much, but a little is needed.
- Makes around 7- 10 mini pancakes.
Notes
You can also make bigger pancakes and then just place a mason jar lid in the center (once cooked) to cut and make into smaller silver dollar pancakes. But you will have extra random pieces after.

I store these in a ziplock bag and then bring coconut or peanut butter with us. The perfect fat/protein snack or breakfast!
Another great option for travel are these Paleo Ginger Pear Muffins. I posted the recipe back in December and loved them! The pear naturally sweetens the batter, the ginger can help ease nausea if you get travels tummy, and the grain free granola and almond meal provide extra protein and good fats for breakfast.
Okay, so what if you don’t feel like cooking or baking before you travel? Well then, I’d highly recommend Mikey’s Paleo English Muffins. And I’m not being paid to say that, haha, promise! They muffins are grain free and made with eggs, coconut flour, and almond meal. They are actually soft too! They have 3 flavors; onion, original, and raisin. I toasted a few before I left then stored them in a ziplock bag. They are great to top with nut butter, hummus, yogurt, egg, or avocado! Again, another great gluten free and protein packed snack/muffin. I bought them on Amazon but you can order from their site as well.
Okay, now I getting the itch to travel again and it’s only been a week since we got home.

this is PERFECT for me right now. I travel to Scottsdale on Monday on a 6 am flight. I am kinda freaking out over what to pack so a) I am not starving and b) I don’t eat breakfast AND lunch before landing at 9 am PT (aka noon in my brain!). Gotta be strategic. thinking overnight oats and some fruit, maybe some not-as-good-as-Lindsay’s homemade healthy bites too 😉 I may buy these muffins though!!!

Whenever we travel I have even more bars in my purse/bags and the girls have them stashed everywhere as well. Oh and pb packets and protein powder. For places we are driving I will make up some protein muffins and cookies and we have lots of fruits and veggies cut up as well.
Not sure yet. We were suppose to travel with my hubby to Puerto Rico for 2 weeks over the girls spring break and Easter (we would have a long weekend over Easter as he would have 4 days off) but we have been having problems finding flights for us to get back without coming back mid week or separate flights for us so if we don’t find something in the next couple days we won’t go and he will go another time in April/May solo.

These are great ideas- I want to try the muffins! I freeze pancakes too, that is usually my pre-run meal and my daughter loves them before school as well. For travel on the day of, I make an egg burrito the night before, stick it in the frig, the next day, throw it my bag and by the time I sit down to take off it’s room temp. I love to travel too– I really miss it… can’t travel much with three kids in tow, but we do a lot of “pretend we are tourists in our own city” stuff.

I love all of these ideas and the timing is perfect because I’ve been starting to experiment with pre-race nutrition (well in advance) for my 70.3 this summer. I wish I was going somewhere fun for spring break! I never went on spring break throughout college at all. Oh well. My liver will thank me later I guess? Now I’d just like to go sight-see. I have major issues with my stomach when I travel. My body likes routine a lottttt and I’m not good at planning ahead for myself, so I wind up grabbing the “best” thing I can find. These are good snacks! I should probably rethink my traveling eats haha.
