Happy Friday friends. It’s a good feeling. Even though I still work weekends, there’s just something about that Friday feeling. Anyway, today I have something very special to share. I sound like Mr. Rogers, but I promise you’ll like it.
Today I have my DEAR friend ABBY sharing a recipe (yes, I’m referencing the Dear Abby columnist. Clever, eh?). Abby is my fantastic neighbor I also gush about. You know the one that makes me delicious foods, shares my love of wine, kombucha, and running. Plus she will help me roll healthy bites if needed. Yep, that one of a kind neighbor. I highly recommend you get yourself one of those.
Well my DEAR ABBY is also a Holistic Nutrition Consultant and I’ve finally convinced her to write a recipe and post for me. Okay I bribed her with wine, but it worked!
Now… go read DEAR ABBY!
———————————————————————
Well hello there blog world! First of all, many thanks to my dear neighbor Lindsay, for gracing me with the honor of guest posting on her beautiful blog. According to her, it is high time I stop being a creepy blog stalker, and introduce myself.
My name is Abby Bounds and I am a newly certified Holistic Nutrition Consultant, specializing in diet analysis, meal planning, and general nutrition support. I believe God created food for more than sustenance alone, it is meant to be enjoyable as well as healing. My dream is to use my certification to first, help others achieve health and lifestyle goals, and second, to be an added financial support for our household.
I absolutely love food, working out, and spending time doing pretty much anything with my best friend, who also happens to be my husband.
Speaking of husbands… “someone” we all love and admire just celebrated 5 years with her best friend/husband! 😉 I decided last week a romantic dark chocolate based dessert was in order to celebrate properly! Rum Chocolate Macaroons. I stumbled across this recipe and happily discovered a fabulous new blog in the process! I’m not a huge peppermint fan and know Lindsay isn’t either, so I replaced it with real spiced rum. Yum!
Wedding Anniversaries require the real stuff no rum extract here. But you can feel free to add any extract or flavor you like. I’ll definitely add more rum next time–a little extract goes a long way, but real rum…meh, not so much. Oh well they were still tasty!
Chocolate Rum Macaroons
Gluten Free _ Dairy Free (except for the egg)
{adapted from Danielle at www.againstallgrain.com }
- Ingredients (makes 2 dozen)
- 3 cups shredded coconut
- ½ cup cacao powder
- ½ cup honey
- ½ cup coconut milk
- ½ teaspoon rum extract or ¼-1/2 cup spiced rum (or to taste)
- ¼ teaspoon vanilla extract
- 1 egg white
- dash of sea salt
Directions
Preheat oven to 325 degrees F.
Combine the first 6 ingredients in a bowl.
In the bowl of a stand mixer, or using an electric mixer, beat the egg white with a small pinch of salt. Beat for 1-2 minutes until soft peaks form when you lift the mixer out.
Fold the egg white into the coconut mixture and mix gently until fully combined.
Using a cookie scoop or tablespoon, scoop out balls of dough and pack them together tightly either by lightly knocking the scoop onto the side of the bowl or pushing it down with your fingers.
Place the dough on a parchment lined cookie sheet and bake for 30 minutes, rotating the tray half way through.
Cool on a wire cooling rack for 1 hour. Store in an airtight container at room temperature for up to 1 week.
Optional – dip the bottoms of the macaroons in melted dark chocolate for an even more decadent treat!
Enjoy!

Stalking her is quite fun! Just sayin. Thanks Abby! I am hoping to have guest post with some other DEAR ABBY Friday’s in the future. So feel free to ask questions in the comment section about nutrition, etc. Or email Abby or myself.
Okay, who’s your dear Abby in your life? Neighbor, sister, friend, both?
Cheers!

Lisa @ RunWiki
They look amazing! I do love peppermint, so might have to try both recipes. Thank you Ms. Abby for sharing and for being such a great neighbor to my cyber sister, love that Linds, so it’s nice to know that if I can’t take care of her, someone else is! xoxo
Abby
Oh it is definitely my pleasure! ; )
Jan
I seriously cannot stand how good those look!! YUM!!
Sarah
Thanks so much for posting these!! I’ve just made them, but using Kahlua instead of the rum. They are amazing and so easy to whip up. x
LCCotter
thats sounds heavenly too!
Caitlin
I love the whole Dear Abby thing you did here. VERY clever! That card addressed to “the Crunches”? So flipping cute. Again, more clever! I can see why you two are pals. Any dessert that involves RUM is fine by me. Mmm these look and sound amazing! Lucky lady getting to eat these!
LCCotter
hehe i know, i am spoiled by her and her witty nature. Wish you could come be part of the fun!
Jess
These sound amazing! I want to live next to you both! 🙂
LCCotter

Melissa @ Treats With a Twist
I’m stealing your neighbor 🙂
I would love to have someone I could consult about my nutrition. I’m always full of questions.
I guess my Dear Abby would be two people. My fiance is someone who I can always talk to about anything. But my bestie Hannah is someone I can gab with and just be very honest with at all times (because sometimes you just need a woman’s opinion).
LCCotter
feel free to email either one of us friend. And i totally agree, sometimes we need that girl time. although lucky to have great men in our lives!
She Rocks Fitness
Even though she’s about 20 minutes away, I would have to say that the fabulous Miss Marney is becoming my Dear Abby. A heart full of giving; always smiling; and there whenever you need her. PLUS she fuels me with goodies all the time. Love her!
LCCotter
i hope i get to meet you both soon! abbys unite!

Stacie @ Snaps and Bits
Those look so dangerous! Have a great weekend!
LCCotter
they are dangerous and we gone in less that 24 hrs.
Heather @ Better With Veggies
Mmmm….I wonder if these would work with Ener-G egg substitute? I’ll have to test that out, purely for the sake of science, of course. 😉
LCCotter
i think they would! or a flax egg?? Try it! hey any luck with the healthy bites yet?
Heather @ Better With Veggies
I haven’t seen them yet, but we have to go get the mail (there’s a central box down the street). I’ll check it tonight!
Oh and check your twitter DMs – I need to book my flight. 🙂
Christine @ Love, Life, Surf

Abby
Beverly,
Thats great! Glad you are doing what works for you.
Andrew and I celebrated our fourth, it was Lindsay Cotter and her hubs who had the whopping fifth anniversary 😉
And I agree, wine NEVER counts : )
Kristen@Change of Pace
Holy cow those look amazing! I wish I had a neighbor like that. Honestly I wish I had someone (besides my husband) to share my fitness/nutrition interests with. You are lucky girl!
LCCotter
i am very lucky! and i bet you’d be my abby too if you lived closer. sigh.
Laura @ Mommy Run Fast
These look fantastic! I need a neighbor like Abby in my life. Have a great weekend, Lindsay!

Our dear Abbey in our life — each other 🙂
good things about being twins!!!
and rum in macaroons – yes please!!!
Abby
Being your neighbor has been THE highlight of living in ATX.
Thanks for sharing the LOVE Mrs. Crunch! xoxo ; )
Bre
yummy, although I think I’d change the rum to vanilla or almond. Not quite a fan of rum…;) I’ll have to try these soon.
LCCotter
i think you need rum right about now, yes? hugs.
Bre
haha tue story! although I’ve moved closer to the straight tequila at this point 😉 think I could put tequila in them?? 😉 hehehe
Coco
I just made these for a group of friends that are coming over for a girls wine night 😉 I’m sure they are going to love them as much as I do.. I may have to lock up the other half of the batch so I don’t eat them all before they get here.. 5 hours shouldn’t feel like too long right? I skipped the rum and the peppermint since I didn’t have either and just did extra vanilla- yum and yum!
LCCotter
well you must report back when they try them!
the delicate place
um those look fabulous! my dear abby is usually my brother or nate. also, i live a few minutes from mr. roger’s old house haha. i love that fact!
LCCotter

Nichole
YOU are my Abby:) for sure!
What a great profession, good perspective as well.
Ridic yummy recipe, ooh.
have a good weekend:)
LCCotter
oh you just made my day. I wish you lived closer. xxoo
Alysia @ Slim Sanity
oh my…these are going to need to be made. SOON!
Amanda
Yep. Abby is amazing, because those Macaroons look swoon worthy. (Saving this recipe and going to put it to good use. I LOVE macaroons. Not like, LOVE.)
I have a few Abby’s in my life. My friend Esther (who also happens to live in my neighborhood. Lucky right?) is always there when I need her. I nicknamed her My Rock. She is in Africa for the month of January doing mission work and I feel like I have a hole in my heart from missing her! But I know that she is putting her skills and heart to good use, so I will survive 🙂
LCCotter
oh but i bet she can feel you praying and thinking for her! that is a true blessing and support team!
Heather (Where's the Beach)
I’m with Laura – why can’t we all live closer?
LCCotter
i know. way more fun and we’d definitely be fed well! haha
Amanda @ .running with spoons.
My dear Abby would be my dear mum. I couldn’t help but laugh at your comment that Abby helps you roll your Healthy Bites, because my mom came over last night to make cookies and I somehow convinced her to do the messy rolling job while I ‘cleaned up’ 😀
LCCotter
you are lucky! what a mama!!! i think my mom would have done that same. bless them! haha
Laura @ Sprint 2 the Table
I want to be your neightbor! Pass the boozy desserts! 😉
LCCotter
i want you to too! but i say that all day every day! gah
Sarah @ The Smart Kitchen
I know the French style macaron is all the rage right now, but the coconut deliciousness, ‘spelled with two Os like a kangaroo,’ that I grew up knowing about is still my favorite. YUM!
LCCotter
yep, me too! two o’s makes everything more fun too. 😉
Katie @ Talk Less, Say More
Wow – those look SO good!!
Sarena (The Non-Dairy Queen)
These sound perfect! What a sweet friend! Good luck on your new venture Abby!
Kierston
Amazing! Love Abby and this recipe! So fun to have such a wonderful neighbour!
I have great neighbours too…that and a very dear Abby in my life too.
So grateful!
melissa
I love macaroons. As soon as my 21 sugar detox is over, I am totally making these!
LCCotter
i bet you could nix the honey and make them sugar free!
Linz @ Itz Linz
Chocolate Rum Macaroons?? Sounds amazing!!!
LCCotter
i know, unreal goodness!
Tiff @ Love Sweat and Beers
I’m not a huge macaroon fan, but I’ll take that leftover rum off your hands. 😉 Happy Friday!
LCCotter
