The FALL Salmon Project

Well I survived. Actually we survived. The hubs and I jumped straight back into crazy work as soon as arrived back in Austin. Ya, I gotta make up for all the frolicking on the beach somehow, right? haha.

Thank goodness for GT Kombucha, which helped me charge through it!

We also came back to a little cooler weather and rain. I guess it is starting to feel like fall here in TX. That means the high is under 90F. Yep, that’s fall. Love it!

Speaking of Fall (clever segue I know), I feel like there fish gets the boot during this season, especially salmon. Why? Probably because most people can’t really come up with good FALL flavors to combine with this hearty fish.

I use salmon year round. It takes on so many wonderful flavors, so I thought I’d share my list. My FALL FLAVOR Salmon dishes.

First, let’s take a look at what’s in season these days.

Apple, Pear, Fig, Persimmon, Limes, Green beans, squash, sweet corn, cabbage, and pumpkin to name a few.

That’s a lot of good flavors if you ask me, especially with salmon.

Here’s what I’ve come up with in the past.

  • Salmon, Green Bean, and Potato hash
  • Sweet Corn and Balsamic fig on top of Baked Salmon and Steamed Kale
  • Roasted Lime Salmon with Blueberry and Coconut Cream quinoa
  • Persimmon, Basil, an feta on top of Steamed Salmon with wild rice

See, not bad for Fall flavors, right? I’ve also used plum sauce with Salmon as well as red wine and blackberries. I know this girl has done a lot of pairings with salmon as well. Lots of good ones too!

Today I’d thought I’d share with you the persimmon and basil recipe. It’s delicious! I also want to thank Sarah for introducing me to Persimmons!

Persimmon Basil and Feta Salmon

Recipe Type: entree
Prep time:
Cook time:
Total time:
Serves: 2-3
Ingredients
  • 1 persimmon- sliced
  • 1 cup basil leaves
  • 2/3 cup crumbled feta
  • WIld Caught salmon fillets
  • garlic
  • Black Pepper
  • Olive oil or grapeseed oil
  • Red pepper flakes (optional)
  • Chardonnay (optional)
Instructions
  1. Slice your persimmon like you would in order to make a basil tomato salad. Set aside. In a skillet, add your salmon fillets (2), 1-2 tbsp oil, about 1/4-1/3 cup white wine or you can use a dressing of some sort, few tbsp chopped garlic, and a bit of water. Heat on medium and cover. Let the fish steam until almost done. Add you persimmon, basil, and feta on top of your fish and let the fish continue to cook for anohter 5 minutes on low or until persimmon is softened, but not overcooked.
  2. Add a bit of honey drizzled on top if you want to make it more sweet.
  3. Serve on top of while rice with extra feta and chili pepper flakes (optional)

I’ve been adding more fish into my diet lately just to see how it works with the guts vs. other animal protein. I’ve got some salmon with this recipes name on it! And I am SO loving the squash lately- sweet as can be! Have a great week!

i want your fall!! 50 and raining is our high…actually today is supposed to be beautiful so I can’t complain (and by beautiful I mean it’s going to be 60 and sunny). ;)
yum to all the fish recipes…that’s one of the few meats that I still do eat occasionally. That recipe looks good (minus the feta for me though).

I have a confession to make… I’ve never eaten salmon. I’ve hated fish ever since I was a little kid, and I think I’ve only eaten it on like 2 occasions. You make it sound so appealing though… do I need to get over it and give it another shot?

I love salmon SO much! I usually do have salmon 2x a week! I am not really creative with it though, haha!

I love FIGS! I made a microwave mug cake today that involved some fig love, so good!

I love persimmons. They are one of my favorite fruits. My mom used to tease me that a persimmon tree was going to grow in my belly because I ate so many of them.

I really need to start eating more fish. I’ve not been so fantastic at cooking it but I haven’t tried in awhile now. I’ve been eating canned salmon and that’s getting boring. :)

Salads!!!

Especially for me in So Fla….Salads can be fall. I love to add sweet potatoes and squash to salads and warm roasted veg on top of romaine…
Raw tomatoes get NO love in the winter — probably because our bodies don’t want them because they do not naturally grow in winter…but you can do salads sans tomatoes.

PS- Despite my fervent love of seafood I have never done a fruit on fish dish. Never ever. It kind of scares me. BUT…I think this fall I’m-a do it like a Cotter wanna-be.

I LOVE salmon…and I LOVE basil.. your recipe rocks. I am with Paige, though – I usually buy it frozen and just grill it with balsamic and honey mustard (great combo..but sounds weird). I need to get a little more creative. AND the fact that you have red pepper flakes on here is just the icing on the cake for me since anything spicy rocks my world!

Love salmon and usually have it once a week! I actually keep it super simple. Dress it up with garlic, basil, and lemon. I then usually have a dressed up side. So pumped it’s October! :)

You are so creative in the kitchen- I love it!
The only thing I can think of is fresh berries, but most don’t take so good anymore! I found some delicious ones from the farmer’s market this weekend, but I think that might be it until next summer.

Man I DO love salmon (well I used to!) It’s Viper’s favourite for sure. Love your pairings…. even though we are in opposite seasons.

Did you know that they have run out of Marmite in NZ!?! Cos the factory is shut due to the quakes… crazy!

Why does that have to look so delicious when I know I absolutely cannot whatsoever eat a persimmon?!? I had one last fall and about lost it. It tasted like cantaloupe jelly beans to me, and that’s just bad. lol (I know…who compares food to their least favorite jelly bean flavor? Me.)

I love salmon year round. But it bugs me that I can’t get the wild-caught king salmon year round (in NJ). I’m a bit of a salmon snob. The farmed Atlantic is not nearly as good!

I, too, eat salmon year-round. It’s really one of my favorite foods, I’d say. So simple and quick to cook. Or buying canned also great for making my lunches!

I love salmon year round, but do agree it seems summery to go with a chilled glass of white wine. :) In the summer I like it with a cold cucumber avocado salad – in the winter with some mashed sweet potatoes and Brussels!
