Sherpa Scenes and Eats: Bahamas

You know what’s funny? Life on this island is very much like when we lived in Hawaii. Everything closes early. The internet is always hit or miss. The power/AC comes and goes, etc. But it’s a “no worries” kind of atmosphere. That’s what we like anyway. I think we all need to adapt that “theme” of life. Yes?

Anyway, a quick update while I can. A few scenes from their 5 hr. ride around the island and an ironman distance ocean swim.

I managed to get in a little run here and there before dying from humidity. Then back to the house to fix some grub. I think the best thing for long runs/rides is a good GF porridge in the rice cooker. I made this dish Saturday morning and we’ve been munching on it all weekend. It’s great by itself before a long training day or you can even use it for post workout fuel. Just serve half the amount of sweet rice in a bowl and add Greek yogurt  and banana or honey on top. More protein and 4:1 ratio. It’s delicious!

Trail Mix Brown Rice Porridge with Ginger

Trail Mix Brown Rice Porridge

Recipe Type: Pre or Post Workout Fuel
Prep time:
Cook time:
Total time:
Serves: 5
Ingredients
  • 2 cups brown rice
  • water
  • coconut milk, cream, or almond milk
  • 1 cup chopped dates/raisins
  • 1/2 to 2/3 cup raw sunflower seeds or pumpkin seeds
  • ginger spice
  • cinnamon
  • sea salt
  • honey
  • Natural Nut butter
  • butter (optional)
Instructions
  1. You can make this recipe in a regular pot but i think the rice cooker is easier.
  2. Combine your rice and water. Then add in your seeds, dried fruit, and a little bit of cinnamon and ginger. Cover and let it cook about half way or about 10 minutes. Then add in more cinnamon (couple tsp’s) and a tiny bit more ginger. stir in your nut butter until melted through out the rice. Add in a couple tbsp’s of honey and a dash of sea salt. Cover again and cook. When it done or when the liquid is all soaked up and the rice is fluffy, add in your cream and a bit more honey. Stir then cover and let cool for 5 minutes.
  3. Serve in bowl with a scoop of Greek Yogurt on top and banana or plain with a little milk on top. Either way, it’s delicious!

Oh and wanna know how they reward a good Sherpa? Wine and dine me once every few weeks and I’m good as new! hehe. Winking smile

Ok queen Sherpa, talk me down from this funk! I am in a nasty mood! I am completely letting the little things get on my nerves and I really need to just let them go. I blame two things…my time of the month and getting contaminated wit soy. I get anxious when I have hives from soy! Ok, so, here’s what I’m doing for myself today…baking pumpkin muffins, listening to calming music and sitting outside with Tony to enjoy the weather! I’m better, but I think I need more muffins!

Oh my goodness, you are making me miss Puerto Rico so bad! (that’s where I’m from). The waters remind me of the island. Right now the theme of my life is excitement of the unknown, meaning the crazy thing I did called “sign up for a marathon”! I’m a bit nervous but tons of excitement. I started my training today, and already thinking 26.2 sound like a looooooong ways to go…lol. :-)

I love the theme of no worries.. something I need to work on for sure! The porridge looks great :) I’ve been eating mostly gluten/grain free since I did a little detox a couple weeks back and definitely notice a very big difference.. Especially the few times that I have eaten in since. Anyway.. Coconut cream= heavenly.

I love the “no worries” atmosphere! I had that when I was living in Grand Bend which is a beach town in Canada. As soon as I moved back to the city of Toronto, I noticed all the world news I was missing though. It was a good trade off for me though ;)

No worries is definitely something we could all adopt more of! Especially in our culture where everyone is so accustomed to being super busy, overwhelmed, and stressed. Our poor bodies need that no worry philosophy! Get back to the times where we weren’t so stressed out.

are you using a stove stop? If so, add your water like youre gonna make regular brown rice. 2:1 ratio. THen add 1/4 to 1/3 cup milk after it’s almost fully cooked. YEA!

The theme of my life right now is that “it will get better.” As you know, I’m kind of stuck in transition, but I’m kind of finally seeing the light at the end of the tunnel and learning to enjoy where I’m at, rather than just wishing that life would fast-forward.
No need to check out my post today- it’s not that great. :) But TOMORROW’S will definitely have some personal revelations.
I’m still catching up on blogs from last week!! Eek!
