Food & Family: Marvelous in My Monday

If I really wanted to I could abbreviate this title to F&FMIMM, but I didn’t. I’ll save you the brain space on this Monday. Smile with tongue out

Speaking of Monday, Happy Monday. Monday’s are a little different for me since I usually try to work a bit during the weekend. Come Monday I like to take a little extra time to run errands, chill, etc.

But this Monday is marvelous for more than that. This Monday is marvelous because the weekend was marvelous. No I didn’t go anywhere. We didn’t do anything super exciting. It was the little things that made it good, no…great! Thank you Katie for hosting this marvelous link up!

  • We spent our first weekend in our new home (apartment).
  • We finally got a washer/dryer hooked up. We have gone 5 years without having either. Lots of people let us borrow washer/dryer time, especially family!
  • We finally got our DVD player to work. We don’t have cable, so popping in a movie on the weekend is nice. Good cuddle time on the couch too. Winking smile
  • It was under 100F all weekend, plus we got a little rain.
  • We found new trails by our apartment and went exploring with this little one.

  • My father in law flew in for literally 30 hrs. It was a quick trip. He is on his way back to New Zealand today (the life of a pilot), but oh it was fun to catch up and eat Mexican food with these kiwi men.

Banana Almond Coconut bread
Recipe Type: bread
Prep time: 15 mins
Cook time: 16 mins
Total time: 31 mins
Serves: 6-8
Ingredients
  • 1 1/4 cup almond meal
  • 1 1/4 cup coconut flour
  • sea salt
  • cinnamon
  • Vanilla extract (optional)
  • 1 ripe banana
  • 6-8 oz milk (i used almond milk)
  • 2 eggs (or flax eggs to keep vegan)
  • 1 tsp baking powder
  • 1-2 tbsp nut butter
  • 1/2 cup crushed dried banana chips
  • 2 tbsp hemp seed (can use chia, flax, etc)
  • *the only sugar here is from the banana, so if you want it extra sweet, add in honey or an additional sweetener like stevia, brown sugar, etc
Instructions
  1. Mix all your dry ingredients together first. Then add in eggs, mix well. Then add in your milk, extract, nut butter, and banana. I used my hands here to mix and mash everything. Spray or oil a baking dish (9×13 works) with coconut oil. Press the dough down firmly into the dish. Bake at 350F for 15-18 minutes depending on your oven. Let cool, or not, just dig in!
  2. *Note: i added in glutamine powder (about 1-2tsp) just for extra help during digestion.
  3. *Note again: This bread is a good base for anything sweet or salty! That’s if you keep is sugar free. Would also be good with chocolate chips!
  • And lastly, my Saturday was spent looking like this. I call this look “baker’s wings” (aka crazy hair). That’s a sign of a good day in the kitchen, am I right?

Sounds like a great weekend. It doesn’t have to be jam packed to be marvelous. It’s those little things ;-) The big marvelous thing today is rain! We have been in desperate need and it finally finally rained in my area. Of course it’s kind of flooding now….but at least it rained and is actually below 90 degrees if you can imagine that one.

this bread sounds great – I love the banana chips, giving some of that (Cotter) crunch? ;)

congrats on your move! the bread looks amazing! when i came home from new zealand, my trip took 45hrs! omg i literally took a ‘shower’ at LAX in the bathroom sink. layovers are the worst on long trips! it was definitely NOT ‘sweet as’ haha.

my hair has been huge lately due to this humidity! i was outside all weekend with my in-laws and then at a wedding yesterday 4hrs from home. i got home at midnight last night a sweat-dried mess and had to be at work early this morning doing science ouch!

It really sounds like such a marvelous weekend Lindsay and if anyone deserved some downtime it was definitely you. Those Kiwi’s are quite handsome if I do say so myself. Is your husband hiding a single brother? hehe

I saw your bread on Instagram, so glad to get the recipe! I’ve been wanting to experiment more with coconut flour and have been collecting a number of recipes that use it- now I think it’s time to get some. I was teaching a Chinese friend how to bake bread this weekend, and came away with those same baker’s wings. :)

What a great weekend! My weekend flew by way too fast, but thanks to you I’m thinking about what will make my Monday Marvelous. For starters, I had my first run post marathon and it felt great to just take it easy and enjoy a slow pace. That was followed by a refreshing swim. And now you have inspired me to go bake something tonight to round out my Marvelous Monday!

Hmmm, not much marvellous in my Monday – seriously, I think I’m having a 3 day hangover from about 5 drinks (!) Gah, I just can’t party like I used to ;) BUT I have joined a super fancy new gym that runs about a bazillion classes so I’m kinda excited…. I may even try Body Pump! Ha, can you imagine!?

Yes! I’m so glad you shared this recipe! I can’t wait to make it! Now I actually have a good reason to let my bananas get ripe (instead of just forgetting about them on the counter!).

Glad you had a great weekend! I had to zoom in on the picture of the greenbelt because I live less than 5 minutes away from there. I take my dog Sadie on walks there all the time! Maybe we can meet some time :)

What a small world! Your Sadie looks sweet :) My Sadie is 3, is a boxer/beagle mix and loves to go for walks and to the dog park. I take her to the Lakeway City Park dog park as much as I can. Have you been there yet? Yes, I live in Lakeway!

I final have a washer & dryer again and it feels SO marvelous (other than the overflowing and flooding incident) – its funny what can start to feel like a luxury that I used to take for granted! Glad you’re moved in!

That bread is amazing looking. I need to make it! Marvelous that you got to hang out with the family, even if it was for a short amount of time! I’m glad you are all moved in as well! My day was marvelous just because I woke up with positive intentions to enjoy the day I was presented with.

This is such a great idea!

I totally laughed at the washer/dryer bullet, because I totally get it. I cannot wait for the day when I have my own. No more laundromats or lugging a basket long distances, right?

Yesterday when I finished work I took a couple of hours to go to the mall and just look at pretty things. Nice, relaxing, and I avoided the rush hour traffic! That was my marvelous.

i used both banana chips and fresh banana. so yes, banana works. You don’t need the banana chips, i just added it in for a crunch. ;-)

I could have sworn I commented on this, but noticed it was still up in my browser! WHAT!? lol

We actually got some rain Monday night and into the morning yesterday. I know the grass and flowers and basically everything here have been needing it desperately.

And Linds? I have “Baker’s Wings” all day every day. lol I’m not nearly as successful in the kitchen as a baker (like you!)…and I sport ‘em all the time. I would scare you if I took a picture right now. ;)
